This beef tips recipe is a great fix-it and forget meal that you can prepare in the morning and have cook all day in the Crock Pot.
When I come home after a busy day the aroma of this creamy Crockpot beef tips & mushrooms dish transports me back to childhood and remembering the classic dinners my mom would prepare for us. It is truly a comfort food - especially pared with creamy mashed potatoes.
I love how easy this is to make in the morning or even prep the night before and just start it in the morning. WHAT TO EAT WITH SLOW COOKER BEEF TIPS
This beef tips recipe makes a delicious gravy to go along with the beef tips that can be served over mashed potatoes, rice, or egg noodles. Add a green veggie to go with this dish like broccoli, peas, or green beans and you have a filling and balanced meal for the whole family.

INGREDIENTS
The full ingredients list and cooking instructions are included in the printable recipe card below
- 2 pounds beef stew meat - Use chuck roast, beef tips, or stew meat (whatever is available and affordable at your grocery store). Make sure the meat is cut into bite-sized pieces.
- 1 cup beef stock / beef broth (if you're in a pinch, you can sub with chicken broth).
- 21 oz cream of mushroom soup 2 (10.5 oz) cans - This helps create the mushroom gravy in the dish.
- 1 yellow onion chopped. White onion is okay too.
- 8 oz baby bella cremini mushrooms sliced.
- Salt and pepper to taste.
- 3-4 sprigs fresh parsley finely chopped for garnish.

GLUTEN FREE BEEF TIPS RECIPE
This recipe is tested, tasted, and approved with only gluten-free ingredients and fits perfectly into a gluten-free diet! In this recipe, you want to make sure to use Gluten-Free Cream of Mushroom Soup. My favorite brand is Pacific Foods!
HOW TO MAKE SLOW COOKER BEEF TIPS WITH MUSHROOMS
Step 1A (optional but highly recommended): While you could just put raw meat in the slow cooker, I recommend giving it a quick sear in a skillet first. Only do this if you're going to turn on the crockpot immediately (don't sear and then wait until the morning to cook in the crock pot).
This will give it a nice texture when serving it. To do so, put a tablespoon of cooking oil in a hot skillet on medium-high heat (large burner) to high heat (smaller burner). Add the beef and sear for 1-2 minutes. Flip each piece and sear the opposite side for another minute. You do NOT want to cook the meat fully - we just want a sear. Best cookware for high-heat searing is cast iron.
Step 1B: Add the stew meat to the slow cooker.
Step 2. Pour 2 cans of Cream of Mushroom soup over beef.
Step 3. Pour 1 cup beef broth into the slow cooker.
Step 4. Add onions and mushrooms and give it a good stir to combine all ingredients.
Step 5. Cook on low for 7-8 hours or 4-5 hours on high. Salt and pepper to taste. Note that the long cooking time (slow cooking) of this meat is what makes tender beef tips (ala "low and slow") - so if you can leave it on low for that 7-8 hours, that would be idea.
Step 5. Optional- Thicken gravy to a more creamy sauce with cornstarch and water** if desired.
Step 6. Serve immediately over mashed potatoes, rice, or egg noodles (look for gluten-free noodles if you want to keep this a gluten-free dish).
** = To thicken with cornstarch and water, I start with one tablespoon of cornstarch mixed with one tablespoon of cold water (aka a cornstarch slurry) and add the same measurements until desired thickness develops. It does take a little time so wait 5 minutes at least before adding more.







LEFTOVERS
Store leftovers in an airtight container in the refrigerator. This will stay good for 4-5 days.
To freeze, put it in a freezer-safe container. Only freeze if you really need to. While I've never frozen this meal, I can't stand behind how it would taste after thawing.

Ingredients
- 2 pounds stew meat

Barbara - I would not recommend freezing. I think that would have a negative impact on the dish when reheated. Would not be nearly as delicious.
