Crock Pot Big Mac Casserole

This Crock Pot Big Mac Casserole is an easy hamburger casserole recipe made with ground beef, cheese, pickles, and onions and topped with delicious Big Mac sauce and sesame seeds!

Does anyone else sing “two all-beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun” when they hear Big Mac, or is that just me?

You don’t even have to go through the drive-thru to McDonalds to get your favorite Big Mac flavors. All the classic flavors you love are baked into an easy, quick, and family-friendly meal. I don’t know about you but I can put Big Mac sauce on anything and eat it. That tangy, creamy, just plain delicious, the sauce is the star in this recipe!

Crock Pot Hamburger Casseroles

Crock Pot Big Mac Casserole is a quick ground beef recipe the whole family will gobble up. I love a good hamburger casserole like Crock Beefy Potato Casserole or Tater Tot Taco Casserole. Casseroles are always my go-to because my kids love ground beef as much as the adults do and they are easy to throw into the crock pot and dinner is done. Big Mac Casserole is another one of those family-friendly meals that everyone will request!

  • 2 Tablespoons ketchup
  • 4 teaspoons sweet pickle relish

  • 1 teaspoon white vinegar
  • 1/8 teaspoon salt
  • 1 teaspoon white sugar

Tips to Make the Special Sauce

  • I like to make this sauce at least an hour before serving. This way all the flavors combine. You can even make it a day before making this even quicker to serve at dinnertime!

Crock Pot Big Mac Casserole – Gluten Free and Low Carb Casserole

All of my recipes are Gluten Free because my husband had celiac disease. That means you are allergic to gluten. However, this recipe is naturally gluten free so you don’t need to make any swaps.

Keto Version

If you are following a Keto diet this recipe can work for you! Just swap a few of the ingredients.

  • Swap the ketchup for sugar free ketchup.
  • Use dill pickle relish instead of sweet pickle relish.
  • Replace the sugar with Erythritol Sweetener.

How to Store Big Mac Casserole

Leftover Big Mac casserole can be stored in the fridge for up to 3 days. Be sure to store it in an airtight container so that it doesn’t dry out. I like to freeze the casserole for up to 2 months. Thaw it overnight in the fridge and then reheat it in a 350-degree oven until warm.

Variation Options for Big Mac Casserole Recipe

There are endless possibilities when it comes to variations of this casserole.

  • Extra cheese:  Add some extra shredded cheese on top of the casserole before baking it. This is one of my favorite options!
  • Pizza style: Add some pizza sauce to the mix for a fun twist.
  • BBQ style: Swap out the special sauce for your favorite BBQ sauce.
  • Southwest style: Add some diced green chiles, corn, and black beans to the mix.

Get creative and make it your own!

For a hearty and authentic meal, consider serving alongside this Taco Potato Casserole easy flavorful Mexican side dishes. I like to serve Mexican rice, refried beans or black beans, tortillas, or a side of tantalizing Mexican street corn with this recipe.

Storage for Leftovers

To store this Taco Potato Casserole, first, allow any leftover casserole to cool to room temperature. Once cooled, carefully portion the casserole into airtight containers. If possible, separate individual servings for easy reheating. Place the containers in the refrigerator, ensuring they are tightly sealed. The casserole can be refrigerated for up to 3-4 days.

For longer storage, you can freeze the casserole. Place the cooled casserole in freezer-safe containers, ensuring they’re airtight. Label the containers with the date and contents, then store them in the freezer for up to 2-3 months. When ready to enjoy, thaw the casserole in the refrigerator overnight and reheat it in the oven or microwave until warmed through.

tips &

  • Make sure to use frozen potatoes. Do not thaw them first or they will be mushy by the time they are finished cooking. If use regular potatoes cook them until they are soft which will take longer.
  • Shred your own cheese. If you buy pre-shredded cheese it has an anti-caking agent on it that makes it hard to melt. It’s important that the cheese melts in this so shred your own.
  • Add traditional Mexican toppings to this dish like lettuce, chopped tomatoes, sour cream, and jalapenos.
  • This is a great dish for a taco bar! You can just make a big pot of it and keep it in the Crock-Pot on warm. Layer out all the toppings mentions above and everyone can serve themselves!
  • This dish makes a lot so be prepared for leftovers. The best part is it is just as delicious reheated.
  • If you don’t like Velveeta cheese you can swap it out for more shredded cheese and 1/4 cup milk.

  • Spice Level:
    • Adjust the spice level by modifying the amount of taco seasoning, jalapeños, or hot sauce to your preference.

Should I Use Frozen Diced Potatoes or Frozen Hashbrowns?

When I was shopping for hash browns I spotted diced potatoes in the freezer section that already had onions and peppers in them. Because I’m always a fan of simplifying, I grabbed a bag.

If you’re not able to find diced hash browns or potatoes with onions and peppers already in the bag, you can easily add regular hash browns to this recipe. They will work the same but you’ll want to add some diced onions and peppers to them to give it the extra flavor.

You can even add diced potatoes that aren’t frozen. They will just need to cook longer usally about 3-4 hours. I usually layer them on the bottom so they cook faster. Just make sure to dice them into small pieces and cook beforehand just long enough that they are soft.

Oven Instructions

Many people have asked for the instruction for this recipe in the over. To make this Taco Potato Casserole in the oven, follow these steps:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Ingredients: Follow the same ingredient preparations as mentioned in the crockpot recipe.
  3. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and mix in the taco seasoning.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked ground beef, frozen hashbrowns, bell peppers, onions, and half of the grated cheese. Mix well to evenly distribute the ingredients and seasoning.
  5. Assemble the Casserole: Transfer the mixture into a greased 9×13-inch baking dish and spread it out evenly.
  6. Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the potatoes are cooked through and the top is starting to brown.
  7. Add Cheese and Finish Baking: Sprinkle the remaining grated cheese on top and return the casserole to the oven. Bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
  8. Serve: Remove from the oven and let it cool slightly before serving. Slice and serve with your choice of toppings.

Enjoy your delicious Taco Potato Casserole straight from the oven!

Easy Crock Pot Camping Recipe

We’re big campers in our family and this recipe is a great option to throw together for a hearty meal after a long day playing. When we go camping I always bring my Crock-Pot along.

Most of the camping we do is in KOA’s so we usually have electricity to power the Crock-Pot. Of course, we always like to make some of our food over the campfire like s’mores or hot dogs.

Camping is always easier when I have a plan for meals and I like to use this free Camping Planner to put together our menu plan and its packing checklist to make sure everything is organized for our getaway.I also like bring Crock-Pot liners for easy clean-up while cooking at the campsite. No one wants to have to soak and scrub a Crock-Pot while their camping.

Crockpot Casseroles

Crock pot casseroles or one-pot dinners, like this one, are a great go-to for dinner. Casseroles are my jam because I like to have everything ready to go since I have no energy to cook at the end of the day.

You can prepare this Crockpot casserole dish in less than 10 minutes and it is so easy to make. Plus, it is made in one pot so you will be able to dig into dinner right away and will only have one dish to clean up! That is always a plus in my book.

Food Allergies

All of the ingredients I use are gluten-free. My husband has celiac disease, which means you are allergic to gluten.

You will need to make sure to use gluten-free products to keep this recipe gluten-free. Double check your taco seasoning to make sure it is gluten free. I like to use McCormick Gluten Free Taco Seasoning since many of the taco seasoning packets have gluten added to them.

This classic comfort food is a one pot wonder that has tender meat, potatoes and veggies for a great family meal. Make this gluten free slow cooker pot roast tonight for a delectable dinner!

What is Pot Roast?

Pot Roast is a tough cut of meat that is cooked low and slowly breaking down all the tough parts into fall apart meat. Tough meat usually have a lot of connective tissue which break down as it cooks releasing gelatin which adds flavor to everything it is cooking in.

Po Roast is usually any cut of beef roast, such as chuck roast, chuck shoulder, round roast, rump roast or a brisket. I don’t know why I always have the hardest time finding roast meat in my grocery store and I think it’s because there are so many names for a roast. Hopefully I covered them all!

The crucial step not matter what type of meat you use is to sear it or brown it, see below for instructions.

Add the veggies, I brown mine in the same pan but you can skip that step if you are short on time. Once you do that you cover it in beef broth and Worcestershire sauce to braise the meat your slow cooker. Hours later you will have dinner ready. It’s really that simple.

Tender Slow Cooker Pot Roast

How to Brown Tender Slow Cooker Pot Roast

One of the most important parts of tender Slow Cooker Pot Roast is browning the meat before it goes in the Crock Pot. This crucial step adds so much flavor. You need to generously salt and pepper the meat. It will seem like a lot of salt but it will be adding the salt to the entire dish so keep that in mind.

The most important thing is to let the meat brown. This means adding it to hot pan and not flipping it. Let it brown for 4-5 minutes on each side. When I started browning meat I would always flip it every 30 seconds which defeated the purpose and took even longer. Give the meat a nice char by leaving it alone for the 4-5 minutes.

What Vegetables to Use for Slow Cooker Pot Roast?

Root Vegetables work best for Pot Roast since they stand up best to cooking for hours.

Classic Mix

Potatoes- Peeled Yukon Gold or Russets cut into halves or quarters or Red Potatoes. I used both because I had both leftover! I always love red potatoes because I don’t have to peel them.

Carrots- Peeled and Cut into thick chunks so they stay together while cooking. Any color work but I usually just go with orange.

Onions- White or Sweet are best to compliment the flavors of pot roast.

More Ideas-

You can use Sweet Potatoes, Turnips, or Parsnips! As long as the vegatable is hearty and thick it will be taste great after cooking in this delicious sauce all day.

Step 5. Cook on low for 8-10 hours or low 5-6 hours.

CROCKPOT MISSISSIPPI POT ROAST- Best Ever!

CROCKPOT MISSISSIPPI POT ROAST- Best Ever!

Crockpot Mississippi Pot Roast is the most delicious and easiest pot roast you will ever make! It’s hard to believe that a recipe with only 5 ingredients could be this good but it is!

I have made quite a few pot roasts in my life and there are always lots of ingredients and tons of steps to get a tender roast so I was skeptical when I heard of the infamous Mississippi Pot Roast with only 5 ingredients that you just pour on top..

However, Mississippi Pot Roast did not disappoint. I think the hardest part of the recipe is writing the name!! The flavor is deep, the meat is tender and everyone who had it loved it.

I can’t take credit for this recipe! The original recipe came from a woman named Robin Chapman, who is from Ripley, Mississippi. She created a chuck roast recipe from her family recipes.

Since then there have been many versions made but I went with the the brown gravy version since my recipes are gluten free. The traditional version uses an Au Jus packet which you can use if you are not gluten-free. I couldn’t find a gluten free Au Jus packet so I used the Brown Gravy packet and it turned out delicious. Also, I have a quick way to make your own Au Jus which we have done as well. (See recipe below under Food Allergies)

What Kind of Meat is Mississippi Pot Roast?

Mississippi Pot Roast is typically made with a chuck roast. You could also use a shoulder steak. A tougher meat is used for this because it cooks all day breaking down all that tough meat with lots of fat into a tender juicy fall apart roast.

What You Need to Make Crockpot Mississippi Pot Roast?

This is the best part of making this roast is how few ingredients you need.

Ingredients

  • 3- to 4-pound roast, your choice of cut
  • 1 stick butter
  • 1 package Brown Gravy Packet ( Pioneer Brand Gravy is Gluten Free)
  • 1 package Hidden Valley Ranch dressing mix
  • Pepperoncini peppers, number to your liking, and a little juice

How to Make Make Mississippi Pot Roast?

The first step is optional. I always sear my meat but I have heard from several people that they skip this step. However, if you don’t have time you can skip step one.

How to Make it Less Salty

One of the complaints about the Mississippi is that it is too salty. I LOVE salt so that never a problem for me but if you prefer less salt I recommend making your own Au Jus and Ranch Packet. These two things have the most sodium in them and they are super easy to make on your own.

Here’s the link to making your own ranch. Homemade Ranch Packet.

How to Make Au Jus- Take juices from searing the meat. Add 1 cup low sodium beef broth to the pan. Cook it down onto medium high until reduced by 50%. Add to crockpot with all other ingredients.

Step 1 -Generously salt and pepper roast. Heat Canola Oil in Pan. Using medium-high heat wait until the oil just starts smoking and add meat to the pan.

Step 2- Sear each side of the meat for 5 minutes.

Step 3- Add Roast to Crockpot

Step 4. Sprinkle Ranch packet and Gravy Packet over meat.

Step 5. Place a stick of butter on top of everything

Step 6. Add 3-4 Pepperoncinis on and around meat. (Add more or less depending on how much heat you like)

Step 4- Cook on low for 8 hours.

Step 5- Shred with two forks and serve.

What to Serve with Mississippi Pot Roast?

Here are a few of the things I love to serve with this:

  • Mashed potatoes
  • Corn
  • Brussel Sprouts
  • Asparagus

Is Mississippi Pot Roast Keto?

Yes! Mississippi Pot Roast is Keto. This recipe is very low in carbs, so it will fit right in with your diet. Make sure and keep it low carb with sides like mashed cauliflower, Brussel sprouts or asparagus. No mashed potatoes allowed!

Gluten Free – I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Most of the Au Jus or Gravy Packets that are typically used in this recipe are made with wheat flour. I use and recommend the Pioneer Gluten Free Gravy Mix. If you can’t find a gluten free packet you can easily make your own Au Jus.

How to Make Au Jus- Take juices from searing the meat. Add 1 cup beef broth to the pan. Cook it down onto medium high until reduced by 50%. Add to crockpot with all other ingredients.

If you are not gluten free feel free to use any Au Jus Packet.

Need A New Crock Pot?

My favorite is this Crock Pot 7 quart Programmable Slow Cooker. First and foremost, I love being able to set the timer in case I’m not home when the food is finished cooking and it just switches to warm. Plus you can lock the lid and just carry it to a party. Not only is it easy to carry but also you will never lose another Tupperware or serving dish again at a potluck party!

Crock Pot Corned Beef and Cabbage

The easiest and best way to make Corned Beef and Cabbage is in your slow cooker. Crock Pot Corned Beef and Cabbage is one of my favorite meals! I always eat it all year long but in most houses it only makes an appearance for St. Patrick’s Day.

This meal was made for a slow cooker and it shines every time. If you are looking to celebrate the luck of the Irish or just looking for a hearty and easy family dinner this recipe is the perfect fit. Potatoes, carrots and cabbage pair perfect with this seasoned beef.

If this is your first time making corned beef it can be a little confusing so I tried to answer the most common questions I get when it starts getting close to St. Patrick’s Day!

What is Corned Beef?

Corned Beef is a description of a cooking technique made by salt-curing beef. It is usually made from brisket. Since brisket is usually a tough meat the salt-curing or brining makes it tender. Then once you get it at the grocery store it comes packaged with a little spice packet that is typically used to flavor the meat while cooking. I always use the spice packet included and find it a perfect mix.

Why Make Crock Pot Corned Beef and Cabbage?

The best part is that corned beef is best cooked low and slow which is when the slow cooker comes in. It can easily become more tender and juicy when it is cooking in a slow cooker. This is also a one-pot wonder. You can start it in the morning and let it cook all day until dinner. All you have to do is put the vegetables in halfway through. Once everything is all done cooking you just serve it and you’re done. That’s my kind of dinner!

Point Cut or Flat Cut for Corned Beef?

There are two cuts of Corned Beef. Point Cut corned beef are rounder and have more marbling or fat. Just like with steak this gives the meat more flavor. Most people choose the Point Cut for Corned Beef. However, the Flat Cut corned beef, also called the round cut is leaner and easy to cut. I accidentally used the Flat Cut once and it was still good but it was not as juicy. I recommend the Point Cut especially if you are only making this once a year. However, if you are trying to eat healthy you can still make a a very delicious Corned Beef and Cabbage with the Flat Cut.

What You Need to Make Corned Beef and Cabbage

  • Corned Beef with Spice Packet
  • Apple Cider Vinegar (This helps tenderize the meat)
  • Sugar (This adds depth and flavor while tenderizing the meat)
  • Onion
  • Carrots
  • Potatoes
  • Cabbage

I had a few comments that the high setting was too much for their slow cooker. I have adjusted to low to make sure it doesn’t get dried out. All slow cookers vary so make sure to check yours periodically.
