This easy 5 ingredient ham will make any holiday a breeze. Brown Sugar and Pineapple Ham has the perfect balance of sweet and savory. The delicious brown sugar crust paired with the tangy pineapple makes a melt in your mouth ham.

This classic ham always takes the spotlight on Easter and Christmas but it can be made anytime. The best part is all the recipes you make with any leftover, if there are any!

Tips for making Brown Sugar and Pineapple Ham

Mustard– I use the mustard because I think it adds a depth to the sweet side of this dish and helps to keep the brown sugar on the ham. Since this recipe calls for two sweet ingredients the balance the mustard adds is needed. You can skip that step if you don’t like mustard or use a teaspoon of apple vinegar.

Pineapple– There are so many pineapple options out there. The traditional ham uses the pineapple rings which looks so fun. But as far as getting bites of pineapple with my ham I prefer to use pineapple tidbits or crushed since they can get in all the nooks and crannies. But any pineapple will work, just don’t forget the juice.

Ham– The best part about this recipe is it can be used with any ham! I have even done it with a tiny 2 pound ham that was on sale. Typically, I use a spiral ham because it’s easy to cut and get lots of juice inside. But you can use boneless, bone-in, spiral or uncut! As long as it can fit in the crock pot you are set.

Don’t forget the side dish! Make these amazing mashed potatoes or creamed corn that can be made it the crock pot too.

Leftover Brown Sugar and Pineapple Ham?

If you have leftover you can either use them to make this egg casserole or I love to chop it up and freeze it and use it as needed!

How to Make Brown Sugar and Pineapple Ham?

Add 1 1/2 cups brown sugar to the bottom of the crock pot.

Place ham on top of brown sugar.

Spread mustard over ham. Pour honey over ham and spread. Sprinkle with ginger and red pepper flakes(optional).

Pour juice from can and pineapple over ham. Add 1/2 cup brown sugar on top of pineapple.

Cover and cook on low for 3-4 hours or until internal temperature reaches 140 degrees. (Timing varies depending on size of ham)

Ingredients

  • 6-7 pound ham spiral is my choice
  • 1 1/2 tablespoons Dijion or yellow mustard
  • 2 cups brown sugar
  • 20 ounce canned pineapple tidbits, crushed, chunks, or rings with juice
  • 1 tablespoon ground ginger
  • 3 tablespoons honey
  • 1 pinch dried chili flakes
US Customary – Metric

Instructions 

  • Sprinkle bottom of slow cooker with 1 1/2 cups of brown sugar.
  • Add ham to slow cooker.
  • Coat ham in mustard. Add 3 Tablespoons of honey on top of mustard.
  • Mix ground ginger and chili flakes together. Sprinkle over ham.
  • Pour juice from can and half the pineapple over ham. Add 1/2 cup of brown sugar on top.

Slow Cooker Banana Bread…No oven, no problem! This gluten free slow cooker banana bread is moist, delicious and best of all easy! You just mix all your ingredients together then throw it into the slow cooker until it’s ready.

We live in Phoenix where it gets hot, hot, hot and I love to make this in the summertime this way so I don’t have to turn the oven on and heat up the whole house. Bonus is that my house still smells like yummy banana bread, which is one of the best parts!

What Kind of Bananas to Use

You want to use ripe bananas when you are making banana bread because they have converted the starch into sugar making your bread sweeter and they are easier to mash!

If you don’t have ripe bananas you can put them in a paper bag and close it which usually takes a day or two. But if you need ripe bananas right away you can cook them in your oven and it only takes about 15-30 minutes. You just need to cook them with the skins on on 300 degrees in the oven. You will know they are done because the skins will be black and shiny.

Tips for Making Slow Cooker Banana Bread

Line your entire Crock Pot with parchment paper. This makes sure the corners don’t get burnt. If you don’t have parchment paper make sure to spray the liner with non stick spray and then spray again!

Gluten Free- Make sure to swap out the flour for gluten-free flour. if you want to make this gluten free. My favorite is cup for cup. You can buy it on Amazon here. We use it for all of our baking!

Regular Flour- Use the same amount of regular flour if you don’t need it to be Gluten Free.

Add in chocolate chips or nuts, like walnuts, to add even more flavor to this banana bread!

Ingredients

  • 1/2 cup melted butter
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 3 medium bananas ripe and mashed
  • 2 cups all purpose gluten free flour my fav is cup for cup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 1/2 cup chocolate chips plus more for top optional

Instructions 

  • Using two large large parchment paper strips to cover bottom and sides of the slow cooker and spray generously with cooking spray.
  • In a large bowl, whisk together butter, brown sugar, sugar, eggs, and vanilla. Add mashed bananas and whist together.
  • In a separate bowl, whisk together flour, baking powder, baking soda, baking powder, cinnamon, and salt.
  • Flop dry ingredients into wet ingredients until combined. Add chocolate chips is desired.
  • Transfer batter into slow cooker and smooth into even layer. Top with more chocolate chips and cook on low for 4 hours. Place a towel on top of the slow cooker and place lid on top to help catch condensation.
  • Remove from slow cooker and cool for 10 minutes.

French Toast Casserole is a favorite breakfast food of mine! There is just something about how all the ingredients come together to become a perfect sweet and gooey piece of heaven. I make this easy crockpot version of French Toast any chance I can get and it’s so simple I make it quite a lot, which might not be a good thing!!

I always make it when we have guests or for an easy brunch. It is so much less messy than the original version where you are dipping individual pieces of bread and cooking them on a stove. This one-pot wonder is the best of both worlds because it’s almost effortless but tastes like you are a master baker!

Serve with fruit or bacon and your breakfast is complete.

Make for Holidays

This french toast casserole is a perfect breakfast for any holiday. We always make it for Easter and Christmas morning. Nothing is better than having a family tradition that involves French Toast Casserole. It’s so easy to whip up the night before and then right when I wake up I turn it on. Once everyone is done hunting for eggs or opening presents breakfast is ready. No dirty dishes and no cooking! The best part is that everyone can sit down and eat together at the same time.

But you can really make this anytime and enjoy it. You can make it before church and it will be ready after or even just an easy brunch option. It stays delicious for several days in the fridge, just thrown in the microwave and cover with syrup!

What kind of bread– This is best made with day-old bread French or Italian bread since it is easy to break into chunks. But really any bread will work!

Gluten Free – We make all of our food gluten-free so we use a gluten free bread from a local bakery in Phoenix. But there is a french loaf that Udi’s makes that would be perfect for this!

Tips for Making French Toast Casserole

– Spray the slow cooker with non-stick spray! Then spray it again! This is an important part so that the sides don’t stick when you take it out.

– Use 1 inch cubes of bread so the can really soak up the mixture.

– Add nuts, raisins or even chocolate chips. Really anything you can think of to make it even better.

How to Make French Toast Casserole

Step 1. In a large bowl, combine eggs, milk, 1/2 teaspoon cinnamon, vanilla and salt.

Step 2. Add bread into egg and milk mixture and gently stir to combine. Cover and place in your refrigerator for at least 4 hours or overnight.

Step 3. Make the cinnamon crumble- In a separate bowl, combine brown sugar, butter, cinnamon, and nutmeg. Refrigerate until needed.

Step 4. SPRAY Slow cooker insert with Non-Stick Spray or grease sides with butter. Pour your coated bread into your slow cooker.

Step 5. Top with crumble.

Step 6. Cook for 3-4 hours on low or 2 hours on high.

Step 7. Let it cool off for 15 minutes then serve with frosting or syrup and fruit!

This easy egg casserole will be your go-to breakfast for parties, holidays and even weekly meal prep. You can make this on Monday and eat it all week! The best part is you can add or take away any ingredients you want.

Want to make it vegetarian, skip the ham and swap for more veggies. Spice it up a little with a can of diced green chilis. The options are endless! Since I eat this almost every week I have made tons of versions of this recipe and listed them below. Feel free to pick one of these versions or make your very own.

How to Make Slow Cooker Egg Casserole

Step 1. In a separate bowl, combine eggs, milk, salt and pepper. Mix to combine.

Step 2. Layer bottom of slow cooker with potatoes. Pour egg mixture into slow cooker. Sprinkle the onions, bell peppers, bacon, and cheese over the top of the eggs. Use a spoon to gently combine.

Step 3. Cover and cook on low for 3 hours. Do not open slow cooker during cooking.

Step 4. Cut into slices and serve!

Different Versions of Slow Cooker Egg Casserole

Meaty Trio- Add ham, bacon, and sausage. This is my husband’s favorite!

Mexican– Use a Mexican Shredded Cheese blend and add a 4.5 oz can of green chilis. Top with salsa and sour cream when serving.

Veggie Delight- Add mushrooms, zucchini, and spinach. Really any veggies! I have also done asparagus in another version.

Greek– Chop up kalamata olives and mix in with veggies. Top with feta cheese when serving.

Great for Holidays

Don’t forget to use this for any holidays because it is a perfect dump-and-go recipe. I like to make it on Easter and Christmas because I can prep it the night before and then turn it on right when we wake up. Once all the craziness of the morning is over breakfast is ready for everyone including me. And as always with a slow cooker meal, you only have one dish to clean up!

The recipe is called Balsamic Pork Tenderloin but I have also used pork shoulder and it is works great! The most important step is really the low and slow cooking fo the meat to break down into tender juicy meat so any pork or beef would work for this recipe.

One of the most important things I try to do with my recipes is make them easy and full of flavor. This is one of my top recipes because the end result is so delectable that people will think you spent all day in the kitchen. But the best part is that it take 5 minutes to throw everything into the slow cooker and let it do the magic. If you are looking for a new go to recipe that is easy for a weeknight meal you NEED to try this one! The meat is so tender and juicy that you will want to eat it all week. Don’t worry I have you covered on that. I have all the different ways you can eat this yummy pork and make it last!

The icing on the cake is that the pork tenderloin is actually a low fat meat so you can even count this as eating healthy even though you won’t even know because it tastes so good! And, as always, this meal is Gluten Free so my husband can enjoy it too.

How to Make Balsamic Pork

This pork is easy to make and all the ingredients are most likely already your pantry. That makes it easy to turn this into a quick weeknight meal.

– Add all ingredients to the slow cooker, except pork , cornstarch and water. Mix all ingredients until combined.

-Add Pork to slow cooker and cover with sauce.

– Cook on low 6-8 hours until tender.

– Remove pork from slow cooker onto serving plate and tent the pork loosely with foil. Allow pork tenderloins to rest for 7 minutes.

– While the pork is resting, thicken the sauce. Add the sauce from the slow cooker into a saucepan and heat on medium. In a small bowl combine cornstarch and cold water until the cornstarch is completely dissolved. Add cornstarch to sauce and boil for 1-2 minutes.

– Add pork back to slow cooker and shred. Pour sauce over pork to coat. Or you can also slice this and serve.

There are so many different ways to eat this once it is done cooking! Anytime I can make multiple meals out of one cooking session I am a happy camper.

Slow Cooker Shepherd’s Pie

Slow Cooker Shepherd’s Pie

This classic comfort food is so easy in a slow cooker! Slow Cooker Shepherd’s Pie came from some creative women trying to use their leftovers back in the 1800s. I guess not much has changed since the 1800s, women just trying to turn their leftovers into something new for dinner.

This meaty meal is filled with vegetables and topped with mashed potatoes. I love mashed potatoes so this is an easy way to get my fix! The flavors come together into the perfect, cozy meal. Feel free to swap the lamb for all beef depending on what you like.

What is the difference between Shepherd’s Pie and Cottage Pie?

The difference between Shephard’s Pie and Cottage Pie is the meat you use. Traditionally Shepherd’s Pie is made with lamb and Cottage Pie is made with ground beef. However, as time has gone on most people call both versions Shephard’s Pie. There is a very serious debate over what is Shepherd’s Pie and what is Cottage Pie for some people but I made mine with ground beef but still call it Shepherd’s Pie. Here in the United States, we make Shepherd’s Pie with ground beef typically. However, in the United Kingdom, they use lamb in their Shepherd’s Pie. They call a similar dish using ground beef, Cottage Pie.

Perfect Dish for Leftovers

I always love using leftovers for different recipes and building them into my meal plans. (Here’s a link to the meal planner I use every week) Whenever I have leftover mashed potatoes or peas I use them to make this dish.

Ingredients for Slow Cooker Shepherd’s Pie

  • Ground beef or lamb
  • Onion
  • French onion mix packet
  • Frozen vegetable mix
  • Cream of Mushroom
  • Worcestershire sauce
  • Cheddar cheese
  • 2 packages (24 ounces each) of prepared mashed potatoes, leftover potatoes, or any mashed potatoes

Tips for Making Slow Cooker Shepherd’s Pie

Mashed Potatoes– You can use leftover mashed potatoes, instant mashed potatoes, or make them fresh. They are all delicious and work great!

Ground Beef or Ground Lamb– I have made this both with a mix of ground beef and ground lamb and with only ground beef. It’s easier for me to find ground beef so that’s what I use. You can use either beef or lamb or even both!

How to Make Slow Cooker Shepherd’s Pie

Step 1. Brown meat and onion in a large skillet over medium-high heat for 6-8 minutes, stirring to break up meat. Drain fat. Add meat to the slow cooker.

Step 2. Add frozen vegetable mix, French Onion Mix packet, cream of mushroom soup, and Worcestershire sauce to the slow cooker.

Step 3. Stir to combine all ingredients.

Step 4. Cover and cook on low for 4-6 hours.

Step 5. Once finished cooking add a layer of mashed potatoes and shredded cheese. Cover and let cheese melt.

Step 6. Optional- Place under broiler for 5 minutes to brown mashed potatoes and cheese.

What is Mexican Street Corn or Elote?

If you haven’t had the chance to have slow cooker mexican street corn before it is a taste that is hard to describe!

The best way is to picture yourself taking a stroll through the busy streets of Mexico City and you will smell the sizzling corn on the cob being sold in carts all along the road. Can you smell it through the screen?

This is how this special corn got its name, Mexican Street Corn. Mexican Street Corn is served with butter, salt, chili powder, mayonnaise, lime juice and cotija cheese. These flavors are perfect together!

Mexican Street Corn goes by another name as well, Elote. In Central American and Mexico corn, on or off the cob is called, Elote. This name is derived from the Nahuatl elotitutl, meaning tender cob. After tasting this amazing corn you will immediately be hooked and may not be able to go back to eating it with just butter and salt again.

How to Make Slow Cooker Mexican Street Corn at Home

Once I had tried this delicious corn at a restaurant called the Elote Cafe in Sedona I had to make it once I returned home. Nothing can compare to having the ambience of the streets of Mexico City or at Elote Cafe.

However, I wanted to share this recipe out at our next party and try to share the delicious and unique flavors. I know it sounds crazy putting mayonnaise with corn but this tangy and sweet mix is what makes this corn so tasty.

I always try to make things simple for parties so I can enjoy my friends’ company. Also, I find that sometimes people don’t really enjoy eating an entire corn on the cob at a party so I thought making it in the slow cooker would work best so everyone could eat it as a dip or with their dinner.

There was none left by the time we had dinner but everyone loved the unique flavors and taste. Now you can have this little taste of Mexico City street food at home too. Try out this amazing recipe for a party or just as a side to go with tacos!

What is Cotija Cheese?

One of the key parts of Mexican Street Corn is Cotija Cheese but if you have never had cotijta cheese it might be a little confusing to know the taste. Cotija is a Mexican cow’s milk is a white, dry and crumbly cheese.

It is named after the town it comes from, Cotija, Michoacán. The closest cheese to compare it to is feta as far as consistency. The taste is very different though. It has a taste that is sharp, salty and milky. I highly recommend giving this cheese a try!

  • 1 bag frozen whole kernel sweet corn or 4 ears of boiled corn shucked
  • 1/2 cup poblano pepper chopped and seeded
  • 2 cups shredded pepper jack cheese
  • 8 ounces cream cheese cubed
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 cup mayonaise
  • 1 teaspoon lime juice
  • Cotija cheese or parmesan crumbled for topping
  • Cilantro for garnish

Instructions 

  • Cook corn as directed on bag.
  • Place all ingredients except mayonnaise and lime juice in slow cooker.
  • Cover, cook on low for 1 to 1 1/2 hours.
  • Uncover, stir in mayonnaise and lime until well blended.

  • Top with cotija cheese, cilantro and sprinkle with chili powder. Serve with tortilla chips.

BBQ Chicken Bowl

BBQ chicken is one of my go to meals since I can make the chicken in the slow cooker and use it for several meals. This recipe came from one night when I did not have buns for sandwiches so I made it into a bowl. Now this is one of our favorite meals since it has roasted vegetables. They add a nice flavor to the BBQ. Feel free to switch out any vegetables to what you prefer. Once you start roasting your vegetables you will never go back!

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 bottle Sweet Baby Rays BBQ Sauce gluten free
  • 2 cups sweet potatoes diced
  • 1 cup sweet onion diced
  • 1 head broccoli stems cut off
  • Olive oil
  • Salt
US Customary – Metric

Instructions 

  • Place chicken breasts in slow cooker. Reserve 1/4 cup BBQ sauce for serving. Cover chicken with remaining bottle of BBQ sauce. Cook on low for 3-4 hours or high for 2-3 hours.
  • Heat oven to 425 degrees 40 minutes prior to meal time and start cooking rice.
  • Cut vegetables and place in mixing bowl. Toss with olive oil until completely covered. Add salt to taste.
  • Spread vegetables out on pan. Crowding them will make them steam instead of roast.
  • Place vegetables in oven. Check on them every 15 minutes and flip vegetables. Cook until vegetables are charred with little black pieces. The onions will cook faster than the potatoes so remove those when tender and soft.
  • Set vegetables aside when finished.
  • Serve over rice with BBQ chicken, vegetables and top with reserved BBQ sauce

This classic Mexican comfort food is perfect for a rainy day, if you are under the weather or if you just want a delicious soup. It is hearty and healthy and so easy to make you will find yourself making it over and over again. Another favorite soup I love to make is my Creamy Tomato Basil Soup!

What is Chicken Pozole?

Chicken Pozole (or Posole) Soup is a traditional Mexican Stew made with either chicken or pork and hominy.

Whenever I give this recipe to people the first question I get is “What is Hominy?” Hominy is made from whole corn kernels that have been soaked in a lye or lime solution (not the fruit, the mineral) to soften the tough outer hulls. This soaking causes the corn to puff up and make it more of a bean texture than the traditional soft corn texture. The kernels are then washed to remove the solution, the hull, and often the germ. Voila! Hominy.

Where can you find Hominy?

Hominy is in a can and you can find it at your local grocery store in the canned food section. I have found it both in the vegetable and bean section. This is what it looks like.

4 Ingredient Dinner- Quick Chicken Pozole Soup

Do you ever realize at 2 pm that you forgot to make dinner? I wish I could say this never happened to me but it does. This is my go to recipe when this happens.

I always try to keep a few cans of enchilada sauce, chilis and hominy in my pantry just for this recipe! I usually run to the grocery store and grab the delicious rotisserie chicken they have in the deli and I’m all set. If you happen to have some leftover chicken you can use that too!

How to Make Quick Chicken Pozole Soup

This is the easiest recipe for dinner ever! If you find an easier one please send it to me ASAP.

1. Put chicken, hominy, enchilada sauce, and chilis into the slow cooker and mix it together.

2. Cook for 6 hours on low or 4 hours on high.

3. Garnish with avocado and cilantro.

Gluten Free- All my recipes are gluten free because my husband has Celiac Disease, which means he is allergic to gluten. Now if your wondering what has gluten in it in this recipe, it’s the enchilada sauce.

Make sure you get a gluten free enchilada sauce. There are a lot of brands out there that add flour to their enchilada sauce so make sure and read the labels. I always use Hatch since I know they certify that their sauce is gluten free.

Alton Brown's Copycat Crockpot Chili

Alton Brown makes his chili in a pressure cooker but since I don’t pressure cook I thought I would try it out in my slow cooker.

Guess what… It’s just as delicious! I do recommend using at least two kinds of meat. It really adds to the flavor but even with just one meat with all the other flavors in the recipe its bound to be yummy.

This chili does have a kick to it so be warned. It is also very meaty, which I love.

Ingredients

  • 3 pounds stew meat beef, pork, and/or lamb
  • 2 teaspoons peanut oil
  • 1 1/2 teaspoons kosher salt
  • 12 ounces beer preferably a medium ale. Gluten free beer options are Omission Pale Ale or New Belgium
  • 16 ounces salsa
  • 30 tortilla chips
  • 2 chipotle peppers canned in adobo sauce chopped
  • 1 tablespoon adobo sauce from the chipotle peppers in adobo
  • 1 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin

Instructions 

  • Place the meat in a large mixing bowl and toss with the peanut oil and salt. Set aside.
  • Heat pan over high heat until hot. Add the meat in 3 or 4 batches and brown on all sides, approximately 2 minutes per batch. Once each batch is browned, place the meat in slow cooker.
  • Once all of the meat is browned, add the beer to the cooker to deglaze the pot.
  • Scrape the browned bits from the bottom of the pot. Add the meat back to the slow cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine.
  • Cook on high for 3 hours or low for 5 hours.
  • Top with shredded cheese, sour cream or avocado!

  • 2 packages frozen fully cooked gluten free meatballs if not gluten free use any frozen meatballs
  • 12 ounces chili sauce
  • 10 ounces grape jelly

Sweet and salty hoisin sauce makes a perfect pair in this fast and easy dinner! Crockpot Hoisin Chicken is a quick dinner because all you need is few ingredients to make this classic Asian meal that is sure to satisfy.

Start with a store bought Hoisin Sauce and mix a few fresh ingredients to get an irresistible chicken dinner that everyone will love! This recipe is on rotation every week in our house. So delicious and my 5 year old even eats it.

What is Hoisin Sauce?

If you haven’t had hoisin, my favorite way to describe it is if teriyaki and BBQ sauce came together and made a sauce. It is a thicker sauce that is sweet with a little tang, similar to American BBQ sauce. But since it has different spices than traditional BBQ sauce its flavor is unique and delicious!

Where do you get Hoisin Sauce?

You can get the Hoisin Sauce in most groceries stores in the Asian aisle. Since all my recipes are gluten free I use Kikkoman Gluten Free Hoisin Sauce but if you don’t have an allergy you can use any sauce you find. Also, since you only need half a bottle you can use the second half for another dinner.

This recipe is so quick to whip together we usually have it every other week! (The other week I make this teriyaki chicken). You can make this homemade Hoisin sauce in the crockpot insert. I like to add a few extra ingredients to the store bought Hoisin sauce to give it a richer flavor.

I just pour everything into my insert and then mix it up and toss the chicken in at the end. You can make the sauce in 5 minutes and delectable dinner will be ready a few hours later.

Quick Tip– If you are home while the chicken is cooking I usually like to flip it once to get the both sides covered in sauce.

Ingredients to make Hoisin Sauce-

Hoisin Sauce (Gluten-Free)

Tamari (Gluten-Free Soy Sauce) or regular Soy Sauce

Honey

Ginger

Garlic

Salt/Pepper

How to Serve Crockpot Hoisin Chicken

Once your hoisin chicken is finished cooking you can either cut the chicken up into cubes or just shred it with two forks. I usually shred it because I like to get all the sauce soaked into the meat.

If you prefer a thicker sauce just remove the chicken and cover until serving.

Take the sauce from the crockpot and pour it into a saucepan and bring to a simmer. While the sauce is heating, mix cornstarch and water together to make a cornstarch slurry. Once the sauce is simmering, pour the cornstarch slurry to the saucepan and mix. Cook for 1-2 minutes to thicken the sauce.

My go-to combination for hoisin chicken is rice and broccoli topped with sesame seeds and red pepper flakes. But there are a few other ideas that make with this chicken.

Low Carb– Make this low carb by serving in lettuce cups. Just like at the restaurant!

Asian Tacos– Use corn tortillas and shred chicken and serve with cabbage or kimchi.

Asian Sliders– Shred the hoisin chicken on dinner rolls (or gluten free Udis hamburger rolls) and serve with cabbage.

What to Serve with Crockpot Hoisin Chicken

I usually steam some broccoli about 5 minutes before we sit down to eat. You could easily throw the broccoli or any veggies in about an hour before the chicken is ready and have them cook with the chicken if you don’t feel like steaming.

Other veggie options that would be good are carrots and snap peas!

Food Allergies

Gluten-Free- I make all my recipes gluten-free since my husband has celiac disease, which means he is allergic to gluten. Make sure and use gluten-free hoisin sauce and gluten free soy sauce when making this to ensure that it is gluten free. If you are not gluten-free feel free to use regular soy sauce and hoisin sauce!

Ingredients

  • 2 pounds boneless-skinless chicken breast or thighs
  • 1/2 cup gluten free hoisin sauce
  • 2 tablespoons Tamari or gluten free soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon minced peeled fresh ginger
  • 2 cloves garlic minced
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • Steamed rice or lettuce for serving

Instructions 

  • Place hoisin sauce, soy sauce, honey, garlic, ginger and pepper in slow cooker and stir to combine.
  • Add chicken and stir to combine.
  • Cover and cook chicken. 3-4 hours on low or 1-1 1/2 hours on high. Always check to make sure your chicken is cooked using a meat thermometer.
  • Transfer chicken to serving bowl with a slotted spoon.
  • If you prefer a thicker sauce pour sauce into sauce pan and bring to a simmer. Mix cornstarch and water together. Add the cornstarch slurry into sauce and cook until thickened, about 1 minute. Remove from heat.
  • Cover chicken with sauce and serve with rice or lettuce.
