Crockpot Lava Cake- Brookie Style

Crockpot Lava Cake

Crockpot Lava Cake…Part Brownie, Part Cookie! 100% Delicious. Crockpot Lava Cake is the greatest creation in baking history! You can make this ooey gooey combination with just a few ingredients. Crockpot Lava Cake makes the perfect easy dessert option that everyone is sure to love!

If you haven’t heard of lava cake it’s a delicious and decadent dessert that is soft in the middle and cooked on the sides. I decided while I was on vacation in the mountains and that I would try to make a new dessert, Crockpot Lava Cake- Brookie version! It’s made with a cookie base and then a brownie batter poured on top. There is an old Crockpot in the cabin so we went to the store and got a few box ingredients and gave it a try!

I used a box mix of brownies and pre-made cookies so it was quick and fun for the kids to help. I was actually amazed that the small local grocery store had gluten free Glutino brownie mix and cookies but they did!!

This turned out into a fabulous dessert that everyone loved! They were gooey brownies with a cookie crust. I prefer my brownies on the softer, almost unbaked, side so these were right up my alley. If you like your brownies cakey I wouldn’t recommend these. I decided to take it up a notch and add ice cream and some chopped REESE’S Pieces to make the ultimate monster lava cake.

– Chopped Walnuts (optional)

HOW TO MAKE CROCKPOT LAVA CAKE – BROOKIE STYLE?

Pour Brownie mixture over cookie and spread into an even layer.

Crockpot Brookies

Cook on high for 2-3 hours. This timing varies depending on your slow cooker and how much you want your brownie cooked.

Crockpot Brookies

Food Allergies

Gluten Free – I make everything gluten free in our house because my husband had celiac disease, which is when you are allergic to gluten. Unfortunately, most brownie and cookie dough has gluten in it so to stay gluten free you need to use a brownie mix and a cookie dough that is gluten free. I used this gluten free brownie mix and a gluten free cookie dough .

If you are not gluten free swap the gluten free brownie mix and cookie dough for any brownie mix and cookie dough.

Need A New Crock Pot?

My favorite is this Crock Pot 7 quart Programmable Slow Cooker. First and foremost, I love being able to set the timer in case I’m not home when the food is finished cooking and it just switches to warm. Plus you can lock the lid and just carry it to a party. Not only is it easy to carry but also you will never lose another Tupperware or serving dish again at a potluck party!

Outdoor Toys for Kids- Ultimate Fun List

Summer is almost here which means you will be spending a lot of time outside with your kids! I’ve put together the list of must-have outdoor toys for kids that will give you hours of entertainment. Since we live in Phoenix there are a lot of water toys on my list but even if your temperatures don’t reach 115 like us, water is still a great activity and kids never get tired of it.

All of my picks range in price depending on what you are looking for but each one is well worth the investment. The bubble gun is $3 and is a favorite! All the way up to our $200 bouncy house that is a year round activity that never get old and we have had it for 4 years!

After 6 summers I have my tried and true toys that we have love, both big and small. If you click on the title of each toy it will send you to a link. Order fast because the pools and water tables sell out fast!

Disclaimer- Some links below are affiliate links, meaning at no extra cost to you, I will earn a commission if you click through and make a purchase.

Outdoor Toys for Kids List

Bubble Gun–

So easy to use that my 3 year old can play with it on her own. They love the battery power that blows them and it makes it less frustrating for everyone.

Sprinkler

Melissa and Doug Splash Patrol Sprinkler– This fun sprinkler doesn’t get too crazy. It’s perfect for ages 2-6. My son didn’t love the ones that whip around and spray you in the face so this was the perfect starter sprinkler for him!

outdoor toys for kids sprinkler

Water Table- Must Have Outdoor Toys for Kids

If you only buy one outdoor toy this should be it! There are tons of water tables in out there but here are two that work great.

This was our first water table when the kids were smaller.

Little Tykes Island Wavemaker- This option is a little bigger with a few more bells and whistles.

Inflatable Pool

We always buy a new inflatable pool every year because they get so much use out of them. They typically don’t make it through to another year so be prepared. I like to get one with a slide to extend the play longer. Don’t forget to buy a pump to blow it up too! Click here for the pump.

Kiddie Pool

If you’re little one doesn’t need a slide this pool works great too and is only much less!

outdoor toys for kids

Slip N Slide

My kids love to run and slide down this in our front yard. We even have a little hill and put it on there to get a little speed. Sometimes we even put a little soap on it to go even faster!

Bunch O Balloons

These self-inflating balloons can make any summer day a party! Every time I break these out my kids cheer. I buy the big pack and use two or three each time. They are well worth the price tag since they are easy to fill up and even more fun to throw!

outdoor toys for kids

Splash Pad

Make your own splash pad at your house! This one can be a little splash pool for a baby without the sprinklers and then transform into a splash pad as they get older.

Kite

This timeless classic never gets old. Whenever the wind picks up we get out kites and fly. We even break them out and make our own wind sometimes which really wears kids out. These kites are a great low cost toy that will give you lots of bang for your buck.

Water Blobz

This is a new outdoor toy for kids that we bought! It’s a mix of a trampoline and pool. The fun texture is a great sensory experience. This is great for any age and there are endless ways to play with it. You fill it with water and then jump away.

Saucer Swing

Swing into summer on this fun saucer shaped swing. You can swing safely on this swing since you sit in the middle and hold on. My kids love to spin each other on it too.

Jump Rope

This easy to use jump rope is a fun way to get some outside exercise in! You can use it for obstacle courses too! Another great $5 outdoor toy for kids.

outdoor toys for kids

Sandbox- Must Have Outdoors Toy for Kids

Dig for treasure or have fun making sandcastles in your own sandbox. It comes with a mesh cover on this sandbox which is a must to keep it clean and I love the corner seats that give you a place to sit!

Bouncy House

Invest in this bouncy house and you won’t regret it! It is fun to play in every day especially during the summer. So easy to put up and down. It is a great alternative to a trampoline and much safer. You can even use it indoors if you have a basement and bounce all year round. Our bouncy house has stood the test of time and I would highly recommend it. This is the ultimate outdoor toy for kids.

Playground

This is the next big purchase we are thinking about getting with all the time we will be spending at home. I have always loved Kidcraft products and feel like they are well built. Do you have a playground you love? Leave a message of your favorite!

Slow Cooker Banana Bread

Slow cooker banana bread

Slow Cooker Banana Bread…No oven, no problem! This gluten free slow cooker banana bread is moist, delicious and best of all easy! You just mix all your ingredients together then throw it into the slow cooker until it’s ready.

We live in Phoenix where it gets hot, hot, hot and I love to make this in the summertime this way so I don’t have to turn the oven on and heat up the whole house. Bonus is that my house still smells like yummy banana bread, which is one of the best parts!

What Kind of Bananas to Use

You want to use ripe bananas when you are making banana bread because they have converted the starch into sugar making your bread sweeter and they are easier to mash!

If you don’t have ripe bananas you can put them in a paper bag and close it which usually takes a day or two. But if you need ripe bananas right away you can cook them in your oven and it only takes about 15-30 minutes. You just need to cook them with the skins on on 300 degrees in the oven. You will know they are done because the skins will be black and shiny.

Tips for Making Slow Cooker Banana Bread

Line your entire Crock Pot with parchment paper. This makes sure the corners don’t get burnt. If you don’t have parchment paper make sure to spray the liner with non stick spray and then spray again!

Gluten Free- Make sure to swap out the flour for gluten-free flour. if you want to make this gluten free. My favorite is cup for cup. You can buy it on Amazon here. We use it for all of our baking!

Regular Flour- Use the same amount of regular flour if you don’t need it to be Gluten Free.

Add in chocolate chips or nuts, like walnuts, to add even more flavor to this banana bread!

French Toast Casserole- Crock Pot

French Toast Casserole is a favorite breakfast food of mine! There is just something about how all the ingredients come together to become a perfect sweet and gooey piece of heaven. I make this easy crockpot version of French Toast any chance I can get and it’s so simple I make it quite a lot, which might not be a good thing!!

I always make it when we have guests or for an easy brunch. It is so much less messy than the original version where you are dipping individual pieces of bread and cooking them on a stove. This one-pot wonder is the best of both worlds because it’s almost effortless but tastes like you are a master baker!

Serve with fruit or bacon and your breakfast is complete.

Once everyone is done hunting for eggs or opening presents breakfast is ready. No dirty dishes and no cooking! The best part is that everyone can sit down and eat together at the same time.

But you can really make this anytime and enjoy it. You can make it before church and it will be ready after or even just an easy brunch option. It stays delicious for several days in the fridge, just thrown in the microwave and cover with syrup!

Simple ingredients transform into a delicious pork tenderloin that makes a savory sauce. Serve with potatoes and asparagus for an easy family dinner that looks and tastes fancy!

The recipe is called Balsamic Pork Tenderloin but I have also used pork shoulder and it is works great! The most important step is really the low and slow cooking fo the meat to break down into tender juicy meat so any pork or beef would work for this recipe.

One of the most important things I try to do with my recipes is make them easy and full of flavor. This is one of my top recipes because the end result is so delectable that people will think you spent all day in the kitchen. But the best part is that it take 5 minutes to throw everything into the slow cooker and let it do the magic. I love to make these delicious Brussels Sprouts from The Lazy Slow Cooker to go with them!

Slow Cooker Shepherd’s Pie

Slow Cooker Shepherd’s Pie

This classic comfort food is so easy in a slow cooker! Slow Cooker Shepherd’s Pie came from some creative women trying to use their leftovers back in the 1800s. I guess not much has changed since the 1800s, women just trying to turn their leftovers into something new for dinner.

This meaty meal is filled with vegetables and topped with mashed potatoes. I love mashed potatoes so this is an easy way to get my fix! The flavors come together into the perfect, cozy meal. Feel free to swap the lamb for all beef depending on what you like.

What is the difference between Shepherd’s Pie and Cottage Pie?

The difference between Shephard’s Pie and Cottage Pie is the meat you use. Traditionally Shepherd’s Pie is made with lamb and Cottage Pie is made with ground beef. However, as time has gone on most people call both versions Shephard’s Pie. There is a very serious debate over what is Shepherd’s Pie and what is Cottage Pie for some people but I made mine with ground beef but still call it Shepherd’s Pie. Here in the United States, we make Shepherd’s Pie with ground beef typically. However, in the United Kingdom, they use lamb in their Shepherd’s Pie. They call a similar dish using ground beef, Cottage Pie.

Perfect Dish for Leftovers

I always love using leftovers for different recipes and building them into my meal plans. (Here’s a link to the meal planner I use every week) Whenever I have leftover mashed potatoes or peas I use them to make this dish.

Ingredients for Slow Cooker Shepherd’s Pie

  • Ground beef or lamb
  • Onion
  • French onion mix packet
  • Frozen vegetable mix
  • Cream of Mushroom
  • Worcestershire sauce
  • Cheddar cheese
  • 2 packages (24 ounces each) of prepared mashed potatoes, leftover potatoes, or any mashed potatoes

Tips for Making Slow Cooker Shepherd’s Pie

Mashed Potatoes– You can use leftover mashed potatoes, instant mashed potatoes, or make them fresh. They are all delicious and work great!

Ground Beef or Ground Lamb– I have made this both with a mix of ground beef and ground lamb and with only ground beef. It’s easier for me to find ground beef so that’s what I use. You can use either beef or lamb or even both!

How to Make Slow Cooker Shepherd’s Pie

Step 1. Brown meat and onion in a large skillet over medium-high heat for 6-8 minutes, stirring to break up meat. Drain fat. Add meat to the slow cooker.

Step 2. Add frozen vegetable mix, French Onion Mix packet, cream of mushroom soup, and Worcestershire sauce to the slow cooker.

Step 3. Stir to combine all ingredients.

Step 4. Cover and cook on low for 4-6 hours.

Step 5. Once finished cooking add a layer of mashed potatoes and shredded cheese. Cover and let cheese melt.

Step 6. Optional- Place under broiler for 5 minutes to brown mashed potatoes and cheese.

Slow Cooker Mexican Street Corn

Slow Cooker Mexican Street Corn

What is Mexican Street Corn or Elote?

If you haven’t had the chance to have slow cooker mexican street corn before it is a taste that is hard to describe!

The best way is to picture yourself taking a stroll through the busy streets of Mexico City and you will smell the sizzling corn on the cob being sold in carts all along the road. Can you smell it through the screen?

This is how this special corn got its name, Mexican Street Corn. Mexican Street Corn is served with butter, salt, chili powder, mayonnaise, lime juice and cotija cheese. These flavors are perfect together!

Mexican Street Corn goes by another name as well, Elote. In Central American and Mexico corn, on or off the cob is called, Elote. This name is derived from the Nahuatl elotitutl, meaning tender cob. After tasting this amazing corn you will immediately be hooked and may not be able to go back to eating it with just butter and salt again.

Ok now you know everything these is to know about Mexican Street Corn but how do you to make it?

How to Make Slow Cooker Mexican Street Corn at Home

Once I had tried this delicious corn at a restaurant called the Elote Cafe in Sedona I had to make it once I returned home. Nothing can compare to having the ambience of the streets of Mexico City or at Elote Cafe.

However, I wanted to share this recipe out at our next party and try to share the delicious and unique flavors. I know it sounds crazy putting mayonnaise with corn but this tangy and sweet mix is what makes this corn so tasty.

I always try to make things simple for parties so I can enjoy my friends’ company. Also, I find that sometimes people don’t really enjoy eating an entire corn on the cob at a party so I thought making it in the slow cooker would work best so everyone could eat it as a dip or with their dinner.

There was none left by the time we had dinner but everyone loved the unique flavors and taste. Now you can have this little taste of Mexico City street food at home too. Try out this amazing recipe for a party or just as a side to go with tacos!

What is Cotija Cheese?

One of the key parts of Mexican Street Corn is Cotija Cheese but if you have never had cotijta cheese it might be a little confusing to know the taste. Cotija is a Mexican cow’s milk is a white, dry and crumbly cheese.

It is named after the town it comes from, Cotija, Michoacán. The closest cheese to compare it to is feta as far as consistency. The taste is very different though. It has a taste that is sharp, salty and milky. I highly recommend giving this cheese a try!

Cotija Cheese

Cheese Substitute– If you have had cotija cheese before and you don’t enjoy it then you can swap for parmesan cheese.

Children’s Museum of Phoenix

Children's Museum of Phoenix

The Children’s Museum of Phoenix is one of the best places for kids young and old. There are three floors of interactive, hands on exhibits! You could spend an entire day on just the third floor but I’m going to break it down by each floor. Each area does have a dedicated baby zone with age appropriate toys and activities so this is perfect if you have different aged kids to keep everyone happy!

Don’t forget every First Friday of the Month– Free Admission from 5-8pm

There is usually a special exhibit that is free with admission. They have done foam fun the past two summers. They turn the entire outside into a giant foam party and then sock skating during the winter. In addition, they offer so many free classes to do with your baby and toddler. Make sure and check their museum calendar HERE a few days before and sign up for all these free extras.

First floor

  • Giant Treehouse – As you walk in your eyes will be drawn up to the giant climbing structure built with  kids imagination in mind with a car and house they can climb into. It’s the ultimate climbing structure. Parents can climb to with little ones but it does get a little tight so be ready. It only has one exit and entrance so you can feel confident sending your kids in without you and knowing they can’t go far.
  • Whoosh Area- Push scarves into plastic tubes and wiggle through see-through tubes and then they shoot through the sky!
  • Building Area- This area changes periodically but it usually has wooden blocks, foam blocks or fort building.
  • The first floor also has lockers to store your stuff and a gift shop. We usually spend at least 15-30 minutes playing in the gift shop as we leave and make a list of things we want from Santa.
Children's Museum of Phoenix

Second Floor- Children’s Museum of Phoenix

  • KIDtchen– This state of the art kitchen has kid themed cooking classes everyday. There are free classes but most of the time they do cost extra. However you always walk away with a yummy homemade treat!
  • Fort building-This room is filled with sheets and objects to make forts or whatever you imagine. There is also a mailbox area which the younger ones love delivering the mail for quite awhile.
  • Pedal Power/Car wash-Grab a bike, time or push car and take your ride through the pretend car wash
  • Face painting- Stop at the mirrors just south of the stairs and your kids or you can “paint“ their face with washable oil crayons.
  • Cafe– You can bring your own food or buy some delicious food from their cafe with sandwiches, pizzas, hot dogs and even a cheese plate!

Outside-

This sprawling outside is a hidden spot that I am always surprised to find people who have been many times never visit.

  • Garden– Stroll through the garden and look at all the veggies growing and you can even try a bit if you dare. Do be carful though my son did take a bit of a jalapeño one time!
  • Sand area– Play in the sand with kitchen tools and bowls.
  • Snake– Crawl through a giant metal snake. (As you can imagine during the summer this is too hot to play in)
  • Outside Seating for Picnics
Children's Museum of Phoenix

Third floor-Children’s Museum of Phoenix

  • Noodle forest– Walk through this “forest” filled with foam noodles. This is always the the first request to go to with my kids. It’s a fun sensory activity and for reasons unknown to me kids love it.
  • Theatre- Put on your own play with costumes and instruments on their stage!
  • Ball room– As you can guess from the name this room has different ball runs to launch balls through and makes fun sounds while they go.
  • The Market– Go grocery shopping with little carts and baskets, check out and even stock the shelves.
Children's Museum of Phoenix
  • Art Studio– paint the giant castle, make a thing-a-magig (random stuff you tape together) or do their monthly themed activity.
  • Car area– race model cars down two tracks or have a pretend race in the toothpaste and prickle themed cars.
  • Reading nook– kick your feet up and read a book
  • Cafe/pizza kitchen– make your own pizza in the pizza oven or cook up something on the stovetop with lots of “ingredients”.

Three and Under- Baby Room

This is a dedicated room for just kids Three and under. There is a baby zone with has age appropriate toys and plenty of soft areas to crawl.

There is a fun “tree house” with a bridge and slide. It has plenty of areas that help work with hand eye coordination.

There is a play house with a kitchen, garden and baby bedroom.

If you have older kids there is also a special “3 and Over” area which is filled with older toys to entertain them while the littles play.

We have a membership since we usually go once a week since they have so many different events, activities and is just overall fun every time we go. Hope to see you there!

This blooming loop is filled with wildflower and cactus. It is a shorter trail which is perfect to do with younger kids. There are tons of colorful flowers and cactus to look at and smell.

Butterfly Pavillion

The Butterfly Pavilion is on this trail also! It’s open from March to early May and is included in your admission. This incredible enclosed garden is home to 5,000 butterflies. Honey Teriyaki Chicken

Honey Teriyaki Chicken

Bursting with flavor from the ginger, honey and soy sauce this honey teriyaki chicken is sure to satisfy everyone! I had to add a little extra honey to the original teriyaki chicken recipe. Honey Teriyaki Chicken is beyond easy and so tasty. You don’t even have to get a bowl dirty. Throw everything into the slow cooker and you are done!

Teriyaki chicken is one of the universally delicious meals! I actually have never met anyone who doesn’t like teriyaki chicken(I’m sure there is someone out there). We make this or our hoisin chicken every week.

Disclaimer- Some links below are Amazon affiliate links, meaning at no extra cost to you, I will earn a commission if you click through and make a purchase.

Easy Weeknight Meal- Honey Teriyaki Chicken

This recipe is so simple to make and is a crowd pleaser when it comes to the whole family. Adults and kids both love this savory chicken. Whenever I have afternoon plans I just throw everything into the slow cooker earlier in the day and then dinner is all ready when 5pm rolls around.

Serve this with rice and you have an entire meal ready to go in minutes. Whenever I make meals that include rice I always use my rice maker. This really makes dinner a breeze because I don’t have to make it when I get home. We literally walk in the door and make our plates. I use the Zojirushi Rice Maker which is amazing. It has a timer and setting for brown or white rice which is helpful.

Make Your Own Honey Teriyaki Sauce

You can whip up your own teriyaki sauce in a few minutes! All you need is a few ingredients that you might already have in your pantry. The best part is you can pour them right into your crockpot insert and stir then in there. No need to dirty a bowl!

  • Honey
  • Rice Vinegar
  • Soy Sauce
  • Ginger
  • Garlic
Honey Teriyaki Chicken

I usually steam some broccoli to go with it to add some veggies to the mix and of course they go perfect with teriyaki chicken. If you don’t feel like going through that extra step of steaming you can always throw the broccoli in the slow cooker during the last hour and have it cook in the crock!

Honey Teriyaki Chicken
Honey Teriyaki Chicken

Chicken Breasts or Thighs?

We usually make this meal with chicken breasts but you have to be very careful that you don’t over cook the chicken breasts. Chicken breasts have less fat that chicken thighs so they dry out faster. If you are going to leave this cooking for longer that 3 hours I would use chicken thighs just to be safe.

Tips for Making Honey Teriyaki Chicken

  • Flip it over once while it cooking. If I am at home I always like to turn the chicken once so that the sauce gets to really soak in on both sides.
  • Check the chicken put using two forks to see if the chicken shreds easily apart. This usually means the chicken is all done.
  • Always check you chicken temperature and make sure it reaches the safe internal temperature for cooked chicken at 165° Fahrenheit (75° Celsius).
  • A meat or instant-read thermometer is your best bet for determining the temperature of your chicken. I use this one if I’m not sure.

BBQ Chicken Bowl

BBQ chicken is one of my go to meals since I can make the chicken in the slow cooker and use it for several meals. This recipe came from one night when I did not have buns for sandwiches so I made it into a bowl. Now this is one of our favorite meals since it has roasted vegetables. They add a nice flavor to the BBQ. Feel free to switch out any vegetables to what you prefer. Once you start roasting your vegetables you will never go back!
