Melt in your mouth Crockpot Carne Asada Tacos are slow cooked to perfection! This is the easiest way to make your taco night extra delicious and gluten free. Flavored with tons of tasty seasoning, gluten free beer and fresh lime juice this tender meat makes the best tacos, nachos or burrito bowls.

We were out of town in Colorado and trying to figure out what we could make for dinner since we were going to gone all day. This recipe always saves the day because it only takes a few minutes of prep. After you prep all you do is set it and forget it. The longer it cooks the better so it’s a great meal when you’re not really sure when you are going to be home.

But when you come home for dinner you just shred the meat, drizzle with honey and it’s ready for taco night! Another great fix and forget it dinner for taco night is my pork carnitas.

You can take one extra step and crisp it up in the oven for a little crunchiness to it. I do love the brunt edges that a few minutes in the broiler creates. But honestly, sometimes I just skip that step when I’m in a hurry and it’s still scrumptious.

Homemade Rub

I love making rubs for meat because you can control how much spice, salt and flavors you want. This only takes a few minutes to throw together and you can use more or less of whatever you like best. I always try to keep it a little less spicy when the kids are eating with us. It just makes it easier so I don’t have to make two meals. If it were just me and my husband it would be spicy and have tons more garlic!! Mix it all up and then cover the meat in this delicious seasoning.

  • 1 tablespoon chipotle chili powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons salt kosher salt

How to Make Crockpot Carne Asada Tacos

Step 1. Add steak to bowl of your slow cooker. Pour 2 tablespoons olive oil on steak.

Step 2. In a separate bowl combine chipotle chili powder, salt, garlic powder, smoked paprika and oregano. Mix to combine. Rub seasonings into the meat.

Step 3. Add minced garlic, agave, lime juice and zest onto steak. Pour 1 cup beer over all ingredients.

Step 4. Cook on low for 6-8 hours or high for 4-5 hours.

Step 5. Shred or slice steak.

Step 6. (Optional) Place on sheet pan and broil for 3-5 minutes or until meat begins to crisp.

What Beer to use for Crockpot Carne Asada Tacos?

The best beer to use with this recipe is a light colored lager beer. My recipes are all gluten free because my husband has celiac disease, which is when you are allergic to gluten. There is an amazing beer called Daura that is gluten free. I use this in all my cooking that needs a light beer. The beer, along with the lime, helps tenderize the meat with the acids and tannins that are found in beer! Of course, the beer also adds a depth of flavor.

Make a Taco Bar with Carne Asada Meat

One of my favorite things to do when I have a party planned is to make a main dish like this and just keep it warm in the Crock Pot for people to enjoy when they are hungry. I always set up all the sides next to the Crock Pot so every one can customize what they like. Here’s what I usually like to include. We had some fresh mango also so I cut that up on top as well.

  • Corn Tortillas
  • Cooked Rice (to make a bowl)
  • Shredded Lettuce
  • Shredded Cabbage
  • Cotija Cheese and Shredded Mexican Blend
  • Pickled Onions
  • Pickled Jalapeños
  • Guacamole

Ingredients

  • 2 pound Flank Steak
  • 1 cup beer gluten free
  • 2 tbsp olive oil extra virgin
  • 1 tbsp agave or honey
  • 1 lime zest and juice

Carne Asada Rub

  • 1 tbsp chipotle chili powder
  • 1 tbsp kosher salt
  • 2 teaspoons garlic powder
  • 1 tsp smoked paprika

Instructions 

  • Add steak to bowl of your slow cooker.

That sounded like the beginning of a delicious meal to me. I made it into a quick version of tuscan chicken pasta that I didn’t need to make from scratch. Sometimes I love to make Alfredo sauce from scratch but other days I need an easy dinner the whole family will gobble up that takes minutes to prep like this. This creamy, rich pasta is incredibly easy but feels fancy.

HOW TO MAKE CROCK POT CREAMY CHICKEN PASTA

STEP 1. Add chopped onions to bottom of slow cooker.

STEP 2. Layer chicken breasts on top of onions. Add 6 Tablespoons butter on top.

STEP 5. Shred chicken and stir to combine.

HOW DO YOU STORE LEFTOVER CROCK POT CREAMY CHICKEN PASTA?

Let the chicken pasta cool all the way down. Place leftovers in refrigerator in an airtight container for 3-4 days. I will say this pasta even tastes good cold!

Make sure to use gluten free pasta when making this dish to keep it gluten free. I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Our favorite pasta is the Gluten Free Barillla Pasta line. I find that it is the best one at staying together while cooking and the taste is just like real pasta. I used the Barilla Gluten Free Penne for this recipe.

Easy Crockpot Chicken and Rice Casserole is filled with savory flavors that will become a quick family favorite. This creamy, cheesy, gluten-free chicken and rice recipe has a secret ingredient…ground sausage! The flavors of this dish come together to make an instant classic that you will serve on repeat.

Just like any amazing recipe, this one came to me as a cherished family recipe that has been passed down for generations. I took one bite and immediately needed the recipe. Of course, like any good family recipe, there is no recipe!!!

However, I wrote down all the steps and it came out just as delicious. The original recipe calls for chicken livers (see how old it is) but the one I tried and this one just use chicken breasts. I’m happy to report it’s now one of my family’s favorite dinners.

Another reason I love this easy Crockpot Chicken and Rice Casserole recipe is that it can be made with simple ingredients and not very much prep. This is my go-to dinner when I want a meal with little effort but big taste! The layers of flavors are what make this meal so great. The five minutes you spend browning the ground sausage and onions is what makes this chicken and rice casserole different from all the others. This step adds depth to the seasoning of the meal along with the mushrooms you have a savory dish that melts in your mouth.

Easy Crockpot Chicken and Rice Casserole

This casserole is hearty all in one dinner with chicken, sausage, mushrooms, and rice, so you can really eat it on its own. I always love a recipe that doesn’t even need a side dish. Another easy casserole is my Beefy Potato Taco Casserole!

Easy Crockpot Chicken and Rice Casserole

INGREDIENTS FOR EASY CROCKPOT CHICKEN AND RICE CASSEROLE

  • 2 pounds chicken– Boneless and skinless chicken breasts or thighs work for this recipe.
  • 16 oz ground sausage- I used Jimmy Dean Premium Pork Sausage, Regular. They have a different option like hot if you want to spice it up.
  • 1 can (7 oz) sliced mushrooms and stems– You can swap for fresh mushrooms if you want! The original recipe used canned so I just wanted to recreate that flavor.
  • 2 cloves garlic, minced
  • 3 cups white rice- Brown rice would work too!
  • 2 cups shredded cheddar cheese– I usually shred my own cheese because the pre-shredded kind has an anti-caking agent which I think makes it harder to melt.
  • 1 tablespoon pepper- This is one of the key flavors so make sure to pepper it up!

STORAGE TIPS

This Crock Pot Chicken and Rice Casserole is delicious leftover! Store the leftover chicken and rice in an airtight container for 2-3 days in the refrigerator. Freeze the leftover for up to 3 months.

Reheat in the microwave for about 2 minutes to warm through and enjoy! Alternatively, you can reheat in the oven covered for 15-20 minutes at 350 degrees (F).

TIPS FOR THE EASY CROCKPOT CHICKEN AND RICE CASSEROLE

  • Cook rice with chicken stock or broth instead of water. This gives the rice even more flavor.
  • Every slow cooker cooks at different temperatures. Mine usually cooks chicken breasts on high in 2-3 hours or 4 hours on low. Check your chicken starting at 2 hours until you are familiar to what temperature it cooks at.

Ingredients

  • Pour mushrooms on top of chicken. Sprinkle garlic and butter on top.
  • Cover; Cook for 3-4 hours on low or 2-3 hours on high.
  • Cook rice on stovetop or rice cooker, swap water for chicken broth.
  • After chicken is cooked add shredded cheese and rice to slow cooker. Stir to combine all ingredients. Add remaining 1/2 teaspoon pepper and salt to taste.
  • Cook for additional 15-20 minutes on high.
  • Serve and enjoy!

King Ranch Casserole with Doritos is a creamy chicken casserole with peppers and crunchy Doritos! This is fuss free dinner is a delicious gluten free dinner the whole family will love!

This classic casserole has been around for generations. It is popular in the South but it has made it has way into every potluck and is always a winner. My mom originally got this recipe from Betty Crocker so you know it’s a good one. I had a friend make it with Doritos and thought that I had to make this myself. My family loves Doritos so I thought this would be a fun family dinner.

KIDS IN THE KITCHEN

The second time I made this my kids, who are 4 and 6 years old, actually helped me make this dinner. I just chopped everything up prior to having them help. They loved breaking the Doritos and layering all the food. Of course, they loved eating the dinner they made and were so proud of themselves. It was a fun way to get the kids in the kitchen and helping with dinner.

KING RANCH CASSEROLE WITH DORITOS- GLUTEN FREE

Casserole are one of my favorite dinners to make because they are easy to make on busy weeknight. We have baseball and swimming right now so I always need to have dinner prepped and ready to go for when we get home from all of our sports. This recipe was perfect because it took less than ten minutes to make and then I could turn it on and go about my day. Another favorite fix it and forget it casserole is my Beefy Potato Taco Casserole, I think the name speaks for itself.

I make all my recipes gluten free because my husband has celiac disease, which means you are allergic to gluten. This recipe can be made gluten free with two quick changes to the recipe. You just use Gluten Free Cream of Chicken Soup and Gluten Free Cream of Mushroom Soup. I always use Pacific Foods Soups because I know they are certified gluten free. And Doritos are naturally gluten-free(YAY!).

HOW TO MAKE KING RANCH CASSEROLE WITH DORITOS

STEP 1. Layer bottom of slow cooker with Doritos.

STEP 2. In large bowl, mix all ingredients except Doritos and 1/2 the cheese.

STEP 3. Add layer of chicken mixture on top of Doritos. Repeat steps 1 and 2. Ending with chicken layer.

There is nothing I love more than a dinner that is complete with chicken, veggies and potatoes. If I can add butter and ranch to that meal then I’m in heaven! Slow Cooker Ranch Chicken is a perfect meal for a busy night. The prep only takes a few minutes and you will have dinner off your to-do list. My favorite part is everyone, kids included, will gobble it up and ask for seconds.

TIPS FOR MAKING SLOW COOKER RANCH CHICKEN

I always feel good when I can put a homemade dinner on the table. The best part about this meal is you can customize it to exactly what your family likes. I used chicken thighs in this recipe but you can swap for chicken breasts. If your family doesn’t like green beans use any hearty vegetable like carrots.

If you prefer to make your ranch from scratch here is an easy recipe that only takes minutes to make. That way you can control the ingredients and salt.

Leave the lid on while the meal is cooking. The potatoes need to be cooked

I saw this delicious recipe on The Magical Slow Cooker and knew I had to try it and make it gluten free. Her recipes are amazing and I love following her for delicious Crock Pot recipes, you should too!

This secret ingredient of pickles adds the perfect balance of tangy to the rich flavors of gravy. The ranch adds all the seasonings so you can just salt and pepper to taste at the end. It doesn’t get much easier than that! The pickle juice helps to tenderize the meat making it so you don’t even need a knife.

Many people are turned off from the Mississippi Pot Roast because of the pepperoncinis used in the recipe. This pot roast recipe is perfect because it adds the similar vinegar balance to the recipe with no heat at all. Repeat…There is no spicy flavor to this recipe. Plus, the pickle flavor doesn’t come through as strong as you might imagine. It adds just the right amount to the recipe!

GLUTEN FREE POT ROAST

This recipe is gluten free. I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Most of the Gravy Packets that are typically used in this recipe are made with wheat flour. Making this roast gluten free is an easy switch! You just use a gluten free gravy packet. I use the Gluten Free Pioneer Gravy packets for all my recipes.

MAKING IT LESS SALTY

Another common complaint about the Mississippi is that it is too salty. Since this roast also has a gravy packet and ranch packet (plus pickles) it can get salty as well. If you prefer less salt I recommend making your own Ranch Packet. The Ranch Packet does have lots of sodium in it and a quick fix is to make on your own ranch. LOW CARB

If you are following a low carb diet you can eat this with cauliflower mashed potatoes. This keeps the whole meal low carb. There are carbs in the gravy packet so it’s not Keto but still makes a pretty low carb meal.

BEST TYPE OF MEAT TO USE FOR POT ROAST

Chuck Roast or Blade Roast is always the best type of meat to use when making a pot roast. Basically find a label that has roast in the name and use that. A chuck roast is made to cook low and slow which makes it the perfect meat for this recipe. When it cooks on a low temperature it is braising the meat and breaking down the tough meat into tender meat. Do not use a round roast for long cooking times.

I can’t ever serve a roast without mashed potatoes. I usually have my other Crock Pot cooking these Garlic Mashed Potatoes making dinner easy. You can also buy these Bob Evan’s potatoes that you just microwave which is super easy too!

Another delicious side dish with any roast is carrots. If you want you could even add the to the Crock Pot and have them cook with the roast. Just make sure they are cut big so they don’t get too mushy by the end of cooking.

HOW TO MAKE CROCK POT DILL PICKLE POT ROAST

Crock Pot Dill Pickle Pot Roast

Step 1. Place roast into Crock Pot.

Step. 2. Sprinkle brown gravy packet, ranch packet and 1/2 cup pickle juice on top of roast.

Step 3. Add entire jar of pickles to Crock Pot.

Step 4. Cook on low for 8-10 hours.

Tips to Make the Special Sauce

  • I like to make this sauce at least an hour before serving. This way all the flavors combine. You can even make it a day before making this even quicker to serve at dinnertime!
  • Make sure to refrigerate the sauce after you make it unless you are serving right away.

Leftover Big Mac casserole can be stored in the fridge for up to 3 days. Be sure to store it in an airtight container so that it doesn’t dry out. I like to freeze the casserole for up to 2 months. Thaw it overnight in the fridge and then reheat it in a 350-degree oven until warm.

Variation Options for Big Mac Casserole Recipe 

There are endless possibilities when it comes to variations of this casserole.

  • Extra cheese:  Add some extra shredded cheese on top of the casserole before baking it. This is one of my favorite options!

I served this over mashed potatoes. Mashed potatoes was my go to because I feel like cranberry sauce and mashed potatoes just go together. I think it’s a Thanksgiving thing. But you could serve this over rice or even on its own with green beans.

When I saw the trending hashtag #bakedfetapasta on Tik Tok I knew I was going to have to try and make it. This Viral Tik Tok Baked Feta Pasta Crock Pot Version is just as tasty as the oven version but even easier. This creamy baked feta tomato sauce is so simple to make but tastes incredible on pasta!

Feta Cheese with seasoned cherry tomatoes baked together to create a creamy sauce that gets tossed with pasta to create a simple but delicious dinner.

Feta Cheese

The original recipe calls for a block of feta cheese which I couldn’t find at my store. I had lots of different choices of crumbled feta cheese so I went with a garlic and herb feta cheese. I choose that one because anytime I can make a recipe easier and not even have to use spices I’m in. So if you can’t find a block of feta cheese, you can use any crumbled feta.

If you don’t like Feta Cheese you could easily swap goat cheese or even cream cheese!

Cherry tomatoes

I always love the Cherub grape tomatoes that are sweet you can even eat them like grapes. However, any tomatoes will work. If you are using bigger tomatoes just half them or quarter depending on how big they are.

Seasonings

The seasonings are up to you on this recipe. Since I used a garlic and herb feta cheese I just stuck with salt, pepper and a 1/2 cup of olive oil. If you don’t buy the seasoned feta cheese you could easily add your favorite Italian seasoning like oregano even a tablespoon of Italian Seasoning.

Garlic, Garlic, Garlic! I love garlic so I did 4 large garlic cloves minced for this recipe but you can use as much or as little as you like.

Fresh Basil is a must! This adds punch of fresh flavor to the dish at the end.

Best Pasta to use for Viral Tik Tok Baked Feta Pasta Crock Pot Version

The best pasta (in my opinion) to use for this dish is a rotini or penne that has little grooves to catch all the baked feta cheese. However, just like with any dish any pasta you have on hand will work. I always use gluten free Barilla Pasta in my recipes! I used this rotini pasta for this dish.

If you want to keep this dish keto friendly swap the pasta for zoodles!

Optional Viral Tik Tok Baked Feta Pasta Crock Pot Version Ingredients

Cream – If you want an even creamier consistency you can add cream once you have crushed the tomatoes after cooking. Add as much as you want to obtain the creaminess you want. If you don’t have any cream you could also reserve 1/4 cup of water from the pasta after it’s cooked which helps to thicken sauces.

Parmesan Cheese– I love to finish every pasta I make with freshly grated Parmesan cheese. This always adds the final flavor touch to any pasta dish.

Food Allergies- Gluten Free

Step 7. Once finished cooking mash tomatoes and cheese together. Add cream or pasta water if desired to make sauce creamier.

Step 8. Add pasta, fresh basil and parmesan. Stir everything until the pasta is coated!

What is Pot Roast?

Pot Roast is a tough cut of meat that is cooked low and slowly breaking down all the tough parts into fall apart meat. Tough meat usually have a lot of connective tissue which break down as it cooks releasing gelatin which adds flavor to everything it is cooking in.

Po Roast is usually any cut of beef roast, such as chuck roast, chuck shoulder, round roast, rump roast or a brisket. I don’t know why I always have the hardest time finding roast meat in my grocery store and I think it’s because there are so many names for a roast. Hopefully I covered them all!

The crucial step not matter what type of meat you use is to sear it or brown it, see below for instructions.

Add the veggies, I brown mine in the same pan but you can skip that step if you are short on time. Once you do that you cover it in beef broth and Worcestershire sauce to braise the meat your slow cooker. Hours later you will have dinner ready. It’s really that simple.

You need to generously salt and pepper the meat. It will seem like a lot of salt but it will be adding the salt to the entire dish so keep that in mind.

The most important thing is to let the meat brown. This means adding it to hot pan and not flipping it. Let it brown for 4-5 minutes on each side. When I started browning meat I would always flip it every 30 seconds which defeated the purpose and took even longer. Give the meat a nice char by leaving it alone for the 4-5 minutes.

What Vegetables to Use for Slow Cooker Pot Roast?

Root Vegetables work best for Pot Roast since they stand up best to cooking for hours.

Classic Mix

Potatoes- Peeled Yukon Gold or Russets cut into halves or quarters or Red Potatoes. I used both because I had both leftover! I always love red potatoes because I don’t have to peel them.

Carrots- Peeled and Cut into thick chunks so they stay together while cooking. Any color work but I usually just go with orange.

Onions- White or Sweet are best to compliment the flavors of pot roast.

More Ideas-

You can use Sweet Potatoes, Turnips, or Parsnips! As long as the vegatable is hearty and thick it will be taste great after cooking in this delicious sauce all day.

How to Make Tender Slow Cooker Pot Roast-

Step 1. Add oil to pan and heat. Salt and Pepper meat and sear for 4-5 minutes on each side. Add to slow cooker.

(Optional Step) Step 2. Add onions to pan and add 2 Tablespoons red wine or balsamic vinegar to deglaze pan. Cook for 3-4 minutes. Pour juices and onions on top of meat.

Step 3. Add Potatoes and carrot chunks on top of and around the meat.

Step 4. Add Beef Broth and Worcestershire Sauce over meat to almost cover meat and vegetables.

Step 5. Cook on low for 8-10 hours or low 5-6 hours.

Step 6. Season with additional salt and pepper to taste.

How to Make Gravy-

Make a flavorful gravy to go with this your pot roast just follow these easy steps.

  • Separate fat from liquid. I use this handy measuring cup that is made for this. Or you can just use a large spoon to remove it off the top.
  • Make a cornstarch slurry using 1 tablespoon of cold water and 1 Tablespoon cornstarch and mix together.
  • Pour liquid from pot roast into sauce pan and heat until boiling. Add cornstarch slurry and turn to simmer. Allow to combine for 2-3 minutes or until gravy thickens.

I’m always on the lookout for a simple recipe that is tasty and quick to prepare. Sometimes when you make recipes that are quick they lack in flavor and depth. This chicken is delicious, tender, and has tons flavor thanks to the Garlic Parmesean Sauce. Another delicious garlic chicken recipe is my one-pot Garlic Butter Chicken with Veggies. Like I said I love garlic!

Gluten Free Garlic Parmesan Sauce

The secret ingredient to this meal is the garlic parmesan sauce which is made by Buffalo Wild Wings and is used on their delectable wings. I just used it on chicken breasts instead. You can buy it on Amazon or Wal Mart, or Target. I did see that my grocery store also had a Garlic Parmesan Sauce in the salad dressing aisle so I’m sure you could easily swap that for this BDubs (Nickname for Buffalo Wild Wings) Sauce but I’m not certain it will be gluten free so please make sure and check the label for gluten. You could always make your own sauce and I found this recipe at The Spruce Eats.

Every one always loves this recipe and I even have people ask me to make them when they are coming over. The quick sear and deglazing of the short ribs before you add them to the slow cooker adds so much incredible flavor. The flavorful combination of all the ingredients will make these your favorite go-to recipe!

Bone In or Boneless Short Ribs

Either version will work for this recipe so use what you can find! Mine choice usually is determined by which is less expensive. There is so much flavor between the red wine, veggies and beef broth that the bone in doesn’t add that much more flavor. However, I do like to get the bone in for presentation since they look so show-stopping on top of big pile of my Creamy Garlic Mashed Potatoes.

How to Pick the Cooking Wine

Use full bodied red wine, like cabaret sauvignon or merlot. Even a shiraz will work! I’m a big fan of using a wine is the $7 category. I like to refer to this article by the New York Times whenever my inner self is deciding what kind of wine to use. She does a taste test using different price ranges of wines and proves that there isn’t a difference when using expensive or cheap wine. So save the good stuff and drink it with dinner instead of using it in dinner. I used this wine in this recipe.

How to Make Slow Cooker Short Ribs with Red Wine

Step 1. In a large skillet cook bacon over medium high heat until crisp. Put bacon in slow cooker.

Step 2. Salt and pepper the beef and add to the skillet and sear on each side for 5 minutes.(DO NOT TOUCH IT during 5 minutes) Transfer beef to the slow cooker.

Step 3. Add carrots and onions to the skillet and brown them in the skillet for 5 minutes. Stir in 2 Tablespoons of flour and pour 1 cup of wine. Deglaze pan, scraping skillet to get all the brown bits on the pan.

Step 4. Add veggies from skillet to slow cooker on top of beef. Top with mushrooms and garlic cloves.

Step 5. In a separate bowl, mix beef broth, tomato sauce, gluten free soy sauce, thyme and bay leaf. Pour into crockpot. Add 1 cup red wine to almost cover the beef.

Step 5. Cook on low for 8 hours or high for 5 hours.

Step 6. Strain liquid and fat. Reserve liquid to make gravy.

If you want to make a gravy to go with this you will need to follow the steps below.

  • Separate fat from liquid. I use this handy measuring cup that is made for this. Or you can just use a large spoon to remove it off the top.
  • Make a cornstarch slurry using 1 tablespoon of cold water and 1 Tablespoon cornstarch and mix together.
