The original recipe calls for them in the oven but, as you know, oven space is important during any holiday. I make them in the crock pot which turns out just as delicious. What are Crockpot Cheesy Potatoes?
There are so many different kinds of potato casseroles, Au Gratin, Scalloped, Funeral and then one to top them all…Crockpot Cheesy Potatoes. The best way to describe them is if you can imagine loaded mashed potatoes and then imagine the best potatoes you have ever eaten!
The potatoes are more like chunks than thin slices like Au Gratin or Scalloped. Once you taste Crockpot Cheesy Potatoes you will be hooked. What makes them so delicious? It is the mix of sour cream and all the cheese! I mean is there anything better than adding sour cream AND cheese? I don’t think so…
Try this perfect side dish to go with any main course except be warned that they usually take the spotlight!
How to Make
Boil potatoes with skins on. Let potatoes cool and then peel. Grate potatoes into chunks. I always use Yukon gold potatoes but any potato will work!
Melt butter with cheese until cheese is almost melted. Remove from heat.
Add sour cream, onions, salt and pepper.
Mix with potatoes place in slow cooker. (Or place in 2 quart buttered casserole dish if using over)
Dot with 2 tablespoons butter and sprinkle with paprika.
Cook high in slow cooker for 45 minutes (if using oven Bake uncovered for approximately 30 minutes at 350).

Crockpot Cheesy Potatoes
Ingredients
- 6 medium potatoes
- 2 cups cheddar cheese grated
- 1 1/2 cup sour cream
- 1/4 cup butter melted
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup green onion chopped
- 2 tablespoons butter
- Dash of paprika
Instructions
