Slow Cooker Egg Casserole

- 8 large eggs
- 1/4 cup milk
- 1/2 cup chopped onions
- 1 cup chopped bell pepper
- 1 cup chopped cooked bacon/ ham
- 1 cup frozen potatoes hash browns or diced
- 1 cup shredded cheese
- 1 teaspoon salt
- 1 teaspoon ground pepper
- Avocado optional
Spray slow cooker with cooking spray.
In a separate bowl, combine eggs, milk, salt and pepper. Mix to combine.
Layer bottom of slow cooker with potatoes. Pour egg mixture into slow cooker. Sprinkle the onions, bell peppers, ham and cheese over the top of the eggs. Use a spoon to gently combine.
Cover and cook on low for 3 hours. Do not open slow cooker during cooking.
Cut into slices and serve with avocado!
