Hot Honey Chicken Sandwich

Ingredients

  • 2 pounds chicken thighs boneless, skinless
  • 2 canned chipotle chili peppers in adobe sauce drained and chopped
  • 1 tbsp vegetable oil
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1/4 cup hot honey more for serving
  • 1 tbsp apple cider vinegar

Instructions

  • In a slow cooker add chicken thighs. Cover chicken with oil and chopped chipotle chilies. Stir well to combine.
  • Combine onion powder, garlic powder, paprika, salt, and pepper. Add seasonings to chicken. Stir to combine all ingredients.
  • Cover and cook on low for 3-4 hours on low until meat is tender.
  • Before the chicken is finished mix hot honey and apple cider together to combine.
  • Once the chicken is finished cooking shred the chicken with the cooking liquid. Remove chicken from the crockpot and put it in a separate bowl.
  • Pour the hot honey mixture onto the chicken and toss to coat the chicken.
  • Take the shredded chicken and pile it onto the bun. Top with coleslaw and more hot honey!
