Crockpot Chicken Fajitas
These Tex-Mex Chicken Fajitas are loaded with chicken, bell peppers, onions, and fajita seasoning to make the perfect Mexican dinner to spice up your life.

- 2 pounds chicken boneless and skinless
- 2 bell peppers sliced
- 1 sweet onion sliced
- 1 Fajita Seasoning
- 1 can Rotel Diced Tomatoes
- 1 tbsp honey plus more for finishing
- 1 lime
- 4 cloves garlic minced
Add 1/2 can of Rotel tomatoes to the bottom of the slow cooker and place chicken on top.
Sprinkle Fajita Seasoning on top of the chicken.
Top chicken with onions, peppers, and remaining Rotel tomatoes.
Mix together lime juice, garlic, and honey. Pour over chicken and veggies.
Cover and cook on low for 4-6 hours
Once finished cooking drain additional juice from the chicken and veggies if desired.
Remove chicken and slice or shred. Place chicken back in the slow cooker and squeeze fresh lime juice and a drizzle of honey onto the chicken.
Serve with tortillas and your favorite toppings.
