Crockpot Chicken Fajitas

These Tex-Mex Chicken Fajitas are loaded with chicken, bell peppers, onions, and fajita seasoning to make the perfect Mexican dinner to spice up your life.

Ingredients

  • 2 pounds chicken boneless and skinless
  • 2 bell peppers sliced
  • 1 sweet onion sliced
  • 1 Fajita Seasoning
  • 1 can Rotel Diced Tomatoes
  • 1 tbsp honey plus more for finishing
  • 1 lime
  • 4 cloves garlic minced

Instructions

  • Add 1/2 can of Rotel tomatoes to the bottom of the slow cooker and place chicken on top.
  • Sprinkle Fajita Seasoning on top of the chicken.
  • Top chicken with onions, peppers, and remaining Rotel tomatoes.
  • Mix together lime juice, garlic, and honey. Pour over chicken and veggies.
  • Cover and cook on low for 4-6 hours
  • Once finished cooking drain additional juice from the chicken and veggies if desired.
  • Remove chicken and slice or shred. Place chicken back in the slow cooker and squeeze fresh lime juice and a drizzle of honey onto the chicken.
  • Serve with tortillas and your favorite toppings.
