Crockpot Cheesy Potatoes

Ingredients

  • 6 medium potatoes
  • 2 cups cheddar cheese grated
  • 1 1/2 cup sour cream
  • 1/4 cup butter melted
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup green onion chopped
  • 2 tablespoons butter
  • Dash of paprika

Instructions

  • Boil potatoes with skins on. Cool and peel. Grate potatoes.
  • Melt 1/4 cup butter with cheese until cheese is almost melted. Remove from heat.
  • Add sour cream, onions, salt and pepper.
  • Mix with potatoes and place in slow cooker. (if using oven put in buttered 2 quart baking dish)
  • Dot with 2 tablespoons butter and sprinkle with paprika.
  • Cook on high in slow cooker for 45 minutes (If using oven bake uncovered for approximately 30 minutes at 350)
