Jamaican Jerk Chicken

Ingredients

  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 orange bell pepper cubed
  • 1 red onion cubed
  • 15 ounces black beans
  • 15 ounces sweet corn

Sauce:

  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 1/2 cup chicken broth
  • 1/2 cup lime juice
  • 4 garlic cloves minced
  • 1 tablespoon salt
  • 1/2 teaspoon red bell pepper flakes
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon thyme
  • 1 jalapeño deseeded and minced, optional

Instructions

  • Place chicken in bottom of slow cooker.
  • Mix all sauce ingredients together in separate bowl. Pour over chicken and coat.
  • Rinse corn and beans. Add to slow cooker.
  • Add chopped onion and bell pepper on top.
  • Mix all ingredients together.
  • Cook on low for 4-6 hours or high 3 hours.
  • Serve over rice.
