  • 3 chicken breasts shredded
  • 56 ounces green enchilada sauce make sure it’s gluten free, I use Hatch
  • 8 ounces canned green chilies
  • 15.5 ounces white hominy

Optional for garnish:

  • Avocado
  • Radish
  • Shredded cheese
  • Sour cream
  • Cilantro
  • Tortilla chips


  • Add chicken, enchilada sauce, green chiles and hominy to slow cooker. Mix to combine.
  • Cook on high for 4-5 hours.
  • Garnish with all the toppings!
