Best Reuben Casserole Recipe

Reuben Casserole in the Crockpot is an easy and festive way to celebrate St. Patrick's Day or any day! 

Everything you love about a  Reuben Sandwiches in a simple and mouthwatering casserole! 

Layers of corned beef, sauerkraut, thousand island, Swiss cheese, & rye bread make an irresistible one pot dinner.

Tips for The Best Reuben Casserole

Drain sauerkraut well.

Serve with potato chips & pickles just like the sandwich.

Place paper towel under crockpot lid to keep from getting soggy.

Ingredients

– Canned Corned Beef,   Deli Corned Beef or   Pastrami – Sauerkraut – Swiss Cheese – Rye Bread – Thousand Island – Sour Cream

Add 1/2 the bread on bottom of slow cooker.

Drain sauerkraut. Mix sauerkraut, thousand island dressing, sour cream together to make a sauce.   

Layer 1/2 corned beef on top of bread. Add 1/2 the sauce on top of corned beef.

Top with Swiss Cheese. Repeat layers, ending with Swiss Cheese on top.
