I love this recipe because it really takes 5 minutes to put everything in the slow cooker. The BBQ sauce adds so much flavor to the chicken and keeps it moist. You only have to cut an onion and bell pepper and dump the rest in to make a homemade easy dinner. Another simple crock pot chicken with pineapple recipe is Sweet Chili Chicken that has a sweet chili sauce instead of BBQ sauce.

I'll let you in on a secret. If you don't have any onions or peppers you can still make this! I love to add vegetables to my meals but you can make this without the onions and peppers and it's still delicious.

Crock Pot Chicken with Pineapple is a weekly staple in my house because my kids and husband love to gobble it up. However, I think it really shines in the summer when you are looking for a healthy, light meal. The pineapple brings a fresh flavor and the BBQ sauce adds a unique tang and balance to the meal.

Ingredients for Pineapple Chicken in a Crockpot

  • Boneless Skinless Chicken Breasts
  • (1) 18 oz Bottle BBQ Sauce
  • 1 Can of Pineapple Tidbits
  • Bell Pepper
  • Yellow Onion

How to Make Crock Pot Chicken with Pineapple

Step 1. Dice onion and bell pepper.

Step 2. Pour onions, bell pepper, pineapple and entire bbq sauce bottle into slow cooker.

Step 3. Place chicken breasts into slow cooker on top of everything. Stir to combine and coat chicken.

Step 4. Cover and cook on low for 3-4 hours or high for 2- 2 ½ hours. Turn halfway if possible.

Step 5. Serve over rice or lettuce cups.

What Should I Serve with Pineapple Chicken?

I love to serve my Crock Pot Pineapple Chicken over white or brown rice! I always use my rice maker to cook the rice at the same time that way dinner is completey done when I walk in the door.

Another great option is to make these into lettuce cups. You can use bibb lettuce, iceburg lettuce or romaine. Add the pineapple chicken directly into the lettuce cup and serve for a low-carb dinner option.

Since my family loves pineapple I try to make lots of different versions of pineapple chicken recipes. Chick-fil-A Polynesian Chicken is another easy chicken recipe with pineapple and the decilious Chick-fil-A Polynesian sauce.

Can I Use Real Pineapple for Pineapple Chicken?

If you prefer to use real pineapple instead of canned pineapple that will work for this recipe. Plus you can use the pineapple to serve the chicken which was a real hit in our house with the kids.

However, real pineapple has less juice than the canned pineapple so you will want to add ½ cup of pineapple juice or another liquid to keep the chicken for drying out.

tips &

Keep the chicken breasts whole. I have found that when you dice the chicken before cooking it dries out quicker. Cut the chicken into cubes if you prefer once it is finished cooking.

Crock Pot Freezer Meal

This is a perfect freezer meal! Add everything to the freezer bag and label it with the date. When you are ready to add it to the menu pull the bag out of the freezer and put it in the refrigerator to thaw overnight. Add the contents of the freezer bag into the Crock Pot and cook for 3-4 hours.

  • 2 pounds boneless skinless chicken breasts
  • 1 orange bell pepper diced
  • 1 small yellow onion diced
  • 18 oz bbq sauce I use Sweet Baby Ray Honey
  • 20 oz pineapple tidbits drained

Instructions
 

  • Dice onion and bell pepper.
  • Pour drained pineapple, onions, pepper, and the entire bbq sauce bottle into the slow cooker.
  • Place chicken breasts into slow cooker on top of everything. Stir to combine and coat chicken.
  • Cook on low for 4-6 hours or high for 2-3. Turn halfway if possible.
  • Serve over rice or lettuce cups.

Notes

If using chicken thighs add cooking time.

    Just wondering if you could do this with a sliced pork tenderloin? How long do you suppose that would have to cook?

      Hi Val, You could easily swap it for pork tenderloin. I wouldn't cut it up until after it has cooked so it doesn't get too dry. I usually cook my pork tenderloin for about 2 1/2 hours before checking.

      Hi Jerri! Thanks so much for crockin' with me and I'm so happy you like the recipes! I went and doubled checked and the sodium is coming from the BBQ sauce. Maybe use a sauce other than sweet baby rays that has less sodium. It's a super tasty recipe!

      Hi Gina! You would not need to add any time at all - particularly if you're using boneless thighs. The thigh meat should add a little bit of extra flavor for you too! I hope you love it.
