I love Crock Pot Mississippi Chicken because it is a true EASY crockpot meal. You literally throw everything into the crockpot, give it a stir and a few hours later you have a delectable dinner just waiting for you! No cutting and no measuring means it’s a perfect dinner for busy nights when you’re not sure exactly when you will be home.

WHAT TYPE OF CHICKEN TO USE
I will say that if you are planning on cooking this for longer than 4-5 hours I would swap the chicken breasts for chicken thighs since the chicken breasts can dry out a little faster even with a stick of butter! I used chicken breasts since I was trying to make it a little healthier so I only cooked it for 4 hours on low. You can even use this with pork or beef in case you don’t have any chicken in the fridge. That’s one of the best parts of this recipe is how versatile it is!
IS CROCK POT MISSISSIPPI CHICKEN LOW CARB AND KETO-FRIENDLY?
Crockpot Mississippi Chicken is Low Carb and Keto! It’s a great Keto Crockpot Recipe. As long as you aren’t serving it with real mashed potatoes like I did or on a sandwich you are keeping it low carb. You could easily eat it over cauliflower mashed potatoes which is how my husband eats it with these mashed potatoes. They are pretty tasty! Or you can just eat it all by itself with a fork and dig in.
HOW TO SERVE CROCK POT MISSISSIPPI CHICKEN
There is are so many great ways to eat Mississippi Chicken. I love it over mashed potatoes and served with a side of green beans. You can also make it into a sandwich and melt a slice of provolone cheese of top and serve it with french fries. Another way is to serve it over rice. This way I can use my rice maker that has timer and every thing is ready to go when I walk in the door. Really there isn’t a bad way to eat this tender and juicy chicken!
HOW TO MAKE CROCK POT MISSISSIPPI CHICKEN
Crock Pot Mississippi Chicken is so easy to make! You only need 5 ingredients.
- Chicken
- Ranch Packet
- Pepperoncini
- Brown Gravy Mix
- Butter
All of my recipes are gluten free so I use a gluten free brown gravy mix instead of the au jus packet that some other recipes use since most au jus packets have gluten in them. Here is the brown gravy packet I use.
Step 1. Place chicken breasts in the crockpot and sprinkle the ranch packet and brown gravy packet over chicken.
Step 2. Add butter on top of each chicken breasts.
Step 3. Add pepperoncinis on top of everything.
Step 4. Cook on low for 4-5 hours or high for 2-3 hours.
Step 5. Shred chicken with forks and serve!
