Leftover Turkey Idea
I make this soup the day after Thanksgiving as a family tradition. It’s basically Thanksgiving scraps soup! There are so many little bits of turkey leftover after carving that I can’t let them go to waste. Collect all of them and save them for the soup! Also, make sure to save all the leftover celery and carrots from any dishes. Once you have collected all your leftovers you are ready to make Thanksgiving Turkey Soup!
I usually steal a few bigger pieces from the leftovers and chop them up to add more turkey to the soup. Trust me you will still have plenty for Leftover Turkey Sandwiches!!
Homemade Turkey Stock
Whenever I make a turkey for Thanksgiving (here’s my go to herb encrusted turkey recipe) or anytime I save the turkey bones and make turkey stock. I love using every part of the turkey. I feel like I’m a real chef when I do this!
The best part is you use this stock the next day to make this delicious Crock Pot Turkey Noodle Soup. Here’s my beyond easy recipe for making turkey stock. It cooks overnight so you can just throw it in the Crock Pot and in the morning it’s done. And who doesn’t like getting something done while you’re sleeping!
Gluten Free Turkey Noodle Soup
I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Our favorite pasta is the Gluten Free Barillla Pasta line. It doesn’t have the after taste of some pasta’s made with beans. I find that it is the best one at staying together while cooking. Some brands disintegrate especially when using in this kind of recipe where the pasta is soaking in liquid.
I love a LOT of noodles in my soup so feel free to add as much or as little noodles as you like!
If you are not gluten free swap the gluten free pasta for any ziti or penne.
How To Make Crock Pot Turkey Noodle Soup
Step 1. Add chicken stock, celery, carrots, onion, and turkey to slow cooker.
Step 2. Add spices to slow cooker and stir until combined.
Step 3. Cook on low for 8 hours or high for 4 hours.
Step 4. 30 minutes before finished, Cook noodles on stove top until al dente. Add noodles to slow cooker.
Step 5. Cook additional 30 minutes. Serve and enjoy!
Crock Pot Turkey Noodle Soup
Ingredients
- 1 cup celery chopped
- 1 cup carrots chopped
- 1 white onion diced
- 3 cups cubed turkey
- 6-8 cups turkey stock or chicken stock
- 1 bay leaf
- 3 springs of thyme
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 8 oz rotini noodles or noodles of choice
Instructions
- Add chicken stock, celery, carrots, onion, and turkey to slow cooker.
- Add spices to slow cooker and stir until combined.
- Cook on low for 8 hours or high for 4 hours.
- 30 minutes before finished, Cook noodles on stovetop until al dente. Add noodles to slow cooker.
- Cook additional 30 minutes.
