This creamy white chicken chili with cream cheese recipe is an easy go-to meal for quick weeknight dinners or to serve a crowd!

Next time you are craving chili, switch it up with this creamy white chicken chili with cream cheese! Crockpot white chicken chili is a nice change from traditional chili that has a rich taste that is blended perfectly with tender chicken, beans and corn.

Make this once and you will find yourself switching from your favorite red chili recipe to this lighter, more mild version of chili.

We make this all the time at our house even when the weather starts to warm up.  It is a great weeknight meal when you don’t have the time or desire to spend hours in the kitchen. Just throw everything into the crockpot and let it simmer away until dinner time!

Slow Cooker White Chicken Chili

White Chicken Chili in the crockpot is a super quick and easy “dump and go” dinner that your whole family will love. This is one of the many reasons we make it so often at my house. Imagine a cool rainy day with this easy crockpot meal simmering all day, ready to greet you when you get home. It’s so comforting!

There are several reasons this recipe is easy to make, starting with you don’t have to brown meat or cut up any onions. You just take all the ingredients, pour them into your crockpot and top with cream cheese. It’s that simple!

If you are short on time and need to get a dinner that is all ready when 5pm rolls around try this recipe tonight!

How to Make Crockpot White Chicken Chili

Now that you know how easy prepping this one pot meal is, let’s take a look at the ingredients you will need:

  • chicken breasts
  • black beans
  • corn
  • dry ranch packet
  • cumin
  • garlic powder
  • onion powder
  • Salt and pepper

To get started, place the chicken at the bottom of the slow cooker. Pour the entire can of corn (undrained) and Rotel tomatoes. Rinse and drain the black beans and pour them on top.

Top with seasonings and ranch and stir everything together.

Cut the cream cheese into five sections and place on top of everything. Then cover and cook on low for 6 hours.

Quick Tip- If you are home while the chili is cooking, I like to stir the cream cheese into everything halfway through the cooking.

After cooking time is finished, shred chicken and mix everything together.

What to Serve with the White Chicken Chili

The great part about this white chicken chili is how easy it is to switch it up with toppings like avocado, shredded cheese and tortilla chips.

Some great side dishes to go with your white chicken chili include:

  • Cilantro lime rice
  • Fresh fruit salad
  • Avocado slices or guacamole
  • Tortilla chips or tortilla strips of your choice

White chicken chili with cream cheese is on the thicker side so you can either use it as chili with a toppings bar or serve it as a dip for a party.

When I serve chili at parties, I like to make both a traditional red chili and this white chicken chili. That way people have two different options depending on their tastes. I always find people have never had a white chili until they try mine.

They also want the recipe when they leave and it is soon to become a family favorite at their house too.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 15 ounces canned black beans
  • 15.25 ounces canned corn undrained
  • 10 ounces Rotel tomatoes
  • 1 packet ranch dressing mix
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 8 ounces light cream cheese
  • Tortilla Chips optional
  • Avocado optional

Instructions 

  • Place chicken at the bottom of slow cooker. Pour entire can of corn (undrained) and rotel tomatoes. Rinse and drain black beans and pour on top.
  • Top with seasonings and ranch. Stir all together.

  • Fully stir cream cheese into mixture halfway through.

    Can I use frozen corn? How much water should I add to make up the difference from canned? 1/4 cup?

      Hi Rachel- Yes you can use frozen chicken just be sure to cook it for 2 hours longer.
