Making this easy crockpot casserole only takes a few steps and then you can leave it all day to cook! Whenever we have a busy week with lots of activities after school I make sure to put this on the menu. It’s so filling you don’t even need a side dish. Quick Family Dinner
This budget friendly dinner is a quick dinner you can throw together in the morning. While you brown the meat you just need to chop up the potatoes and onions. I just use a mandolin to chop the potatoes faster and this onion chopper for my onions. Once I’m done chopping, my meat is browned and all the work is done. The rest of the ingredients you just open the cans and pour them in.
But if you want it to be even easier and faster you use frozen diced potatoes and frozen chopped onions. The casserole wouldn’t need to cook for quite as long if you use frozen potatoes so you may want to adjust the cooking time in half so the potatoes don’t become too mushy.
Ingredients for Cheesy Crockpot Cowboy Casserole

- ground beef- browned and fat drained
- diced onion
- can of cream of mushroom soup
- 2 pounds sliced or diced potatoes
- diced tomatoes with liquid
- canned corn- drained
- kidney beans- drained
- shredded cheddar cheese
- Italian seasoning
- salt and pepper
Gluten Free Substitutions
All of my recipes are gluten free because my husband has celiac disease. That means he is allergic to gluten which is found in lots of products like bread, soy sauce, canned soups, seasonings and more. The cream of mushroom soup in this recipe can contain gluten if you don’t buy a gluten free version. I always use Pacific Food Cream of Mushroom Soup. Other than that all the rest of the ingredients are gluten free!

How to Make Cheesy Crockpot Cowboy Casserole
Step 1. Brown beef and drain fat.
Step 2. Add beef, potatoes, onions, cream of mushroom soup, diced tomatoes, canned corn, kidney beans, Italian seasoning, salt and pepper.
Step 3. Mix all ingredients together well.
Step 4. Cook on low for 8 hours or high for 5-6 hours.
Step 5. Once finished cooking top with shredded cheese. Cover and melt cheese for 10 minutes.





Cheesy Crockpot Cowboy Casserole
Ingredients
- 1 pound ground beef browned and fat drained
- 2 pounds russest potatoes peeled and cut
- 1 Cream of Mushroom Soup gluten free
- 1 yellow onion diced
- 15.5 oz kidney beans canned
- 15.5 oz corn canned
- 14.5 oz diced tomatoes do not drain
- 3 cloves garlic minced
- 2 tbsp Italian seasoning
- 1 1/2 cup cheddar cheese shredded
- Salt and pepper to taste
Instructions
- Brown beef and drain fat.
- Add beef, potatoes, onions, cream of mushroom soup, diced tomatoes, canned corn, kidney beans, Italian seasoning, salt and pepper.
- Mix all ingredients together well.
- Cook on low for 8 hours or high for 5-6 hours.
- Once finished cooking top with shredded cheese.Cover and melt cheese for 10 minutes.
