Low Carb Crock Pot Recipes

My husband recently started the keto diet, so I have been busy coming up with keto-friendly recipes that the whole family will love. This crack chicken is keto diet-friendly and can easily be made in a crockpot. Simply throw all of the ingredients into the crockpot and let it do its thing!

I wish I had tried this earlier because it is delicious even if you aren't following a low-carb eating plan. It's definitely going into the dinner menu rotation.

There are so many reasons to love this keto crockpot crack chicken! It is so simple to make and tastes so good. With just a few easy ingredients and almost no prep, you have a cheesy, filling, and quick dinner.

What is Crack Chicken?

The first time I saw the name, I didn't know why it was called such a weird name. It doesn't even describe anything in the meal. 

After investigating a bit, I found out that in low-carb communities, they call it crack chicken because with bacon, cream cheese, and even more cheese added, it can be very hard to stop eating it. It really is very addicting. 

I've since noticed many types of "crack" recipes, even Christmas “crack”! It's a common adjective added to the title of recipes for anything you can't help but keep eating. Makes sense, right?

Keto Crack Chicken Recipe

To make Keto Crockpot Crack Chicken you need a few simple ingredients:

  • Chicken
  • Cream Cheese
  • Ranch Seasoning
  • Shredded Cheese
  • Bacon

  • Green Onions
  • Jalapeños
  • Hot Sauce

How to Make Crockpot Crack Chicken

This recipe is so easy to make. Simply combine all of the ingredients in a crockpot and cook on low for 3-4 hours.

  1. Add chicken breasts to the slow cooker.
  2. Pour ranch seasoning over chicken breasts.
  3. Add cream cheese on top of the ranch and chicken.
  4. Cook on low for 5-6 hours or high for 2-3 hours.
  5. Shred chicken with two forks. Add bacon. Stir everything together.
  6. Sprinkle shredded cheese on top of the meat. Cover and cook for 5 minutes or until the cheese is melted.
  7. Top with green onions, extra bacon, jalapenos, and hot sauce.
  8. Serve over rice, cauliflower rice, or on a sandwich.

What to Serve with Crack Chicken

Crockpot crack chicken is so versatile, not only are there so many sides that would work great with it, you can actually serve the crack chicken in several different ways too!

  • Tacos: Fill a low-carb tortilla with crack chicken, lettuce, and shredded cheese.
  • Crackers: Serve with your favorite low-carb crackers as a delicious appetizer or snack.
  • Dip it: cut up celery, red peppers, or your favorite vegetables, and scoop away!
  • Sandwiches: This is my kid's favorite way to eat it
  • Bowl: Make a bowl and serve it over rice. Use cauliflower rice if you're keeping it low carb.
  • Lettuce Cups: Low carb AND fun to eat!

Ingredients
 
 

  • 2 lbs. boneless skinless chicken breasts
  • 1 oz ranch seasoning 1 packet
  • 16 oz cream cheese
  • 8 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • Green onions chopped

Instructions
 

  • Add chicken breasts to slow cooker.
  • Pour ranch seasoning over chicken breasts.
  • Cut cream cheese into blocks and cover chicken breasts.
  • Cook on low for 5-6 hours or high for 2-3 hours.
  • Shred chicken breasts in slow cooker. Add crumbled bacon. Stir cream cheese, chicken and bacon to combine.
  • Sprinkle cheese on top and cover for 5 minutes or until cheese melts.
  • Serve over rice or cauliflower rice. Add chopped green onions if desired.

    Do you have to use ranch seasoning or can you possibly substitute it with ranch dressing? When I saw the headline saying all you need is cream cheese, bacon, & ranch I got really excited, but then saw it called for ranch seasoning which I don’t have 🙁 it looks amazing though!!

      Hi! I wouldn't swap it for ranch salad dressing since it has mayo in it while it cooks but you could cook it with the rest of the ingredients then add the ranch dressing at the end once it's all cooked.

    What is considered a serving? I have only 20 carbs to spend every day, doctor's orders, so I have to be VERY careful about what and how much I eat.
