I love a good carbonara pasta, I mean who doesn’t!? Of course, this isn’t a traditional carbonara sauce but it still gets the job done. I know some people are going to give me a hard time about calling it Chicken Carbonara but I swear it tastes so close that I was blown away. This is a decadent meal that we don’t serve often but when we do it I enjoy every bite of it.

There is something about the bacon that just infuses every bite and adds a little taste of heaven. Pair that with mushrooms and peas in a creamy sauce that everyone is sure to love. So I feel like this could be called “quick chicken carbonara”. The best part is it was WAY less work than the real thing! This recipe is so simple with only a few ingredients! I don’t know how I didn’t think to use the onion and chive cream cheese before this. It adds layers of flavor instead of plain cream cheese. I highly recommend it! I’m definitely going to start trying to use a few more flavors like these.
Easy Family Dinner
We love making a pasta dinner because the whole family loves it, kids included! I am always happy to eat a giant bowl of creamy pasta but what I love about this recipe is the chicken adds some much needed protein to the dish. The chicken makes it a complete meal and that way no one is asking for snacks an hour later.
Feel free to leave out the peas and mushrooms if your kids are veggie-adverse! It is still delicious without them. I just like the addition of veggies to any dish!
All of my meals are gluten-free because my husband has celiac disease, which means you are allergic to gluten. This meal is gluten-free naturally but if you serve it with pasta make sure to use gluten-free pasta. My favorite is the Barilla Gluten Free Pasta. We used spaghetti for this dish!
If you are looking to make it even quicker to make you can always use precooked bacon. Of course, I think making the bacon that day gives the most authentic flavor but sometimes I don’t have the time or want to make the mess of cooking bacon.

Can I use Chicken Breasts instead of Thighs?
Yes, you can sub boneless, skinless chicken breasts in this recipe. Whenever I make chicken breasts I do check after 2 1/2 hours even on low to make sure I don’t overcook them. Chicken thighs have more fat which means you can cook them longer without drying them out.
What Should You Serve with Crock Pot Chicken Carbonara?
This meal is so hearty you can serve it all on its own! However, I always like to make a delicious salad to balance the richness. If I’m serving this to guests (which I do because it’s so good!) I make garlic bread to go with it too. I know, carb overload but sometimes you just have to indulge!
How to Make Crock Pot Chicken Carbonara
Step 1. Melt butter and cream cheese together. Whisk until smooth.
Step 2. Add chicken to slow cooker. Spread cream cheese mixture on top of breasts.
Step 3. Add mushrooms to the slow cooker.
Step 4. Cook on low for 4 hours.
Step 5. Add cooked bacon and peas to the slow cooker once finished cooking. Stir together. Cook for an additional 10 minutes.
Step 6. Serve over gluten-free pasta, potatoes, or rice.

Ingredients
- 7.5 oz Cream Cheese Onion and Chive
- 2 tbsp butter
- 2 pounds chicken thighs
- 16 oz mushrooms fresh or canned
- 3/4 cup bacon cooked and crumbled
- 1/4 cup sweet peas
Instructions
