Crock Pot Chicken Carbonara is a savory gluten-free dish that is incredibly easy to make! This ultimate comfort food is filled with bacon, mushrooms, peas, and a secret ingredient…onions and chive cream cheese.

I love a good carbonara pasta, I mean who doesn’t!? Of course, this isn’t a traditional carbonara sauce but it still gets the job done. I know some people are going to give me a hard time about calling it Chicken Carbonara but I swear it tastes so close that I was blown away. This is a decadent meal that we don’t serve often but when we do it I enjoy every bite of it.

Crock Pot Chicken Carbonara

There is something about the bacon that just infuses every bite and adds a little taste of heaven. Pair that with mushrooms and peas in a creamy sauce that everyone is sure to love. So I feel like this could be called “quick chicken carbonara”. The best part is it was WAY less work than the real thing! Another easy and flavor-filled pasta dish that you can try is this Garlic Parmesan Chicken Pasta.

This recipe is so simple with only a few ingredients! I don’t know how I didn’t think to use the onion and chive cream cheese before this. It adds layers of flavor instead of plain cream cheese. I highly recommend it! I’m definitely going to start trying to use a few more flavors like these.

Easy Family Dinner

We love making a pasta dinner because the whole family loves it, kids included! I am always happy to eat a giant bowl of creamy pasta but what I love about this recipe is the chicken adds some much needed protein to the dish. The chicken makes it a complete meal and that way no one is asking for snacks an hour later.

Crock Pot Chicken Carbonara

Feel free to leave out the peas and mushrooms if your kids are veggie-adverse! It is still delicious without them. I just like the addition of veggies to any dish!

All of my meals are gluten-free because my husband has celiac disease, which means you are allergic to gluten. This meal is gluten-free naturally but if you serve it with pasta make sure to use gluten-free pasta. My favorite is the Barilla Gluten Free Pasta. We used spaghetti for this dish!

If you are looking to make it even quicker to make you can always use precooked bacon. Of course, I think making the bacon that day gives the most authentic flavor but sometimes I don’t have the time or want to make the mess of cooking bacon.

Crock Pot Chicken Carbonara Keto Option

This low-carb dinner will be on repeat since it’s a great substitute for your favorite pasta dish. You can easily make Crock Pot Chicken Carbonara keto by leaving the peas out and serving it over zoodles!

Can I use Chicken Breasts instead of Thighs?

Yes, you can sub boneless, skinless chicken breasts in this recipe. Whenever I make chicken breasts I do check after 2 1/2 hours even on low to make sure I don’t overcook them. Chicken thighs have more fat which means you can cook them longer without drying them out.

What Should You Serve with Crock Pot Chicken Carbonara?

This meal is so hearty you can serve it all on its own! However, I always like to make a delicious salad to balance the richness. If I’m serving this to guests (which I do because it’s so good!) I make garlic bread to go with it too. I know, carb overload but sometimes you just have to indulge!

How to Make Crock Pot Chicken Carbonara

Step 1. Melt butter and cream cheese together. Whisk until smooth.

Step 2. Add chicken to slow cooker. Spread cream cheese mixture on top of breasts.

Step 3. Add mushrooms to the slow cooker.

Step 4. Cook on low for 4 hours.

Step 5. Add cooked bacon and peas to the slow cooker once finished cooking. Stir together. Cook for an additional 10 minutes.

Step 6. Serve over gluten-free pasta, potatoes, or rice.

Ingredients

  • 7.5 oz Cream Cheese Onion and Chive
  • 2 tbsp butter
  • 2 pounds chicken thighs
  • 16 oz mushrooms fresh or canned
  • 3/4 cup bacon cooked and crumbled
  • 1/4 cup sweet peas

Instructions 

  • Melt butter and cream cheese together. Whisk until smooth.

Crockpot Cajun Chicken Alfredo

There is something about Chicken Alfredo that is so classic and I just can’t ever get enough of it! However, I thought that maybe I could make a Chicken Alfredo with a little cajun kick and it was de-li-cious! Crockpot Cajun Chicken Alfredo will be one of your new favorite dishes for dinner!

Of course you can buy a jar of Alfredo Sauce at the store but after you make this recipe you will see how yummy and easy homemade can be. Another delicious recipe where you can make your own cream sauce is in this Tuscan Garlic Chicken Recipe!

I make the Alfredo sauce right in the crockpot insert because I am lazy and don’t feel like making any more dishes that are necessary. I have found some chicken release a lot of liquid as it cooks so I prefer to thicken the sauce once it is finished. That way I know it will be creamy and thick over the pasta or rice.

If you are looking for a thicker sauce to put on in the beginning you can cook the cream, chicken broth and cheese together on the stove ahead of time and then pour into the crockpot once it has thickened and skip the thickening step at the end.

How Spicy is Crockpot Cajun Chicken Alfredo?

This recipe has some kick to it! Especially with the red pepper flakes that I add. In case you are wondering, Cajun Spice usually contains garlic powder, paprika, black pepper, onion powder, cayenne pepper, thyme, oregano, red pepper flakes, and salt. You could easily make this recipe less spicy by not using the red pepper flakes and only 1 or 2 Tablespoons of Cajun Spice. I used this Cajun Spice but you could easily make your own too.

Crockpot Cajun Chicken Alfredo- Keto, Low Carb and Gluten Free

This recipe is perfect if you are following the low carb or Keto diet. As long as you eat the Crockpot Cajun Chicken Alfredo over cauliflower rice or zoodles it is a great way to stay on track.

This recipe is also naturally gluten free. One of my favorite way is to eat it is over Barilla Gluten-free penne pasta if you are not following the low carb or Keto diet.

How to Make Crockpot Cajun Chicken Alfredo

Crockpot Cajun Chicken Alfredo

Step 1. Place heavy cream, chicken broth, parmesan, garlic powder, red pepper flakes, pepper, cajun seasoning and salt in crockpot.

Step 2. Whisk ingredients together.

Step 3. Add Chicken Breasts and cover with sauce.

Step 4. Add butter on top of each breasts and minced garlic.

Step 5. Depending on how you like your broccoli you can add at the beginning but it will be soft. If you don’t like broccoli soft add 30 minutes-1 hour before finished cooking.

Step 6. Cook on low for 4-5 hours or high for 2-3 hours.

Step 7. Make cornstarch slurry to thicken sauce. Mix 1 Tablespoon Cornstarch with 1 Tablespoon water and mix together in bowl until combined.

Step 8. Remove chicken for crockpot and pour sauce into pan on stove and heat until sauce is simmering. Add cornstarch slurry. Cook until sauce thickens. Pour over chicken and pasta or rice.

Gluten-Free- I make all my recipes gluten-free since my husband has celiac disease, which means he is allergic to gluten. This recipe normally is gluten free. However if you serve it over pasta make sure to use gluten free pasta. My favorite is Barilla Gluten Free Penne. You can buy it on Amazon here.

Use any pasta you want if you don’t need it to be Gluten Free.

  • 1.5 pounds boneless skinless chicken breasts or thighs

Nothing says a party quite like Crockpot Chili Cheese Dip! This is a quick 4 ingredient chili cheese dip that you can prepare ahead of time and serve in the crockpot! This Slow Cooker Chili Cheese Dip is made with Velveeta, cream cheese, chili and salsa. With only a few ingredients you can whip this up in minutes for party time.

I love cheese dip! I love cheese dip, queso dip and any version of melted cheese. This is one of my favorite easy appetizers since it is a delicious, hearty and dip-able cheese dip that you can make in your crockpot.

I make this for any party, potluck, game day or any reason I can think of! You can serve this tasty dip for any occasion because it is so easy. This is a staple in our house for Superbowl and Halloween parties. You only need 4 ingredients and you can just dump everything in and stir it together. A few hours later you will have the cheesiest, beefiest and yummiest dip ever. (I think beefiest is a made up word 😉

What to Serve with Crockpot Chili Cheese Dip?

I usually serve this with tortilla chips, corn chips, veggies and sliced bread. This way there are plenty of dipping options for everyone! AND this is delicious over hot dogs too!

Gluten Free, Low Carb and Vegetarian Options

One of the best parts of Crockpot Chili Cheese Dip is all the ways you can serve it! It works great for so many different diets!

Gluten Free- You need to make sure to find Gluten Free Chili like Dennison’s Chili or Wolf Brand Chili which don’t add wheat to their recipe.

Low carb or Keto- You will have to make your own chili since most canned chili is high in carbs. Here’s a delicious version.

Vegetarian- Just use vegetarian canned chili like Amy’s Organic Chili

However, I will say this doesn’t fall under the low calorie diet but it’s well worth every calorie.

What Ingredients Do You Need for Crockpot Chili Cheese Dip?

Feel free to half the recipe if you aren’t serving a large crowd.

  • Canned Chili or homemade chili
  • Cream cheese
  • Velveeta cheese or shredded cheese
  • Salsa

How to Make Crockpot Chili Cheese Dip

Step 1. Add chili to crockpot.

Getting dinner on the table every night can be such a hassle. Trying to make them semi-healthy can be even more difficult. But this meal does both. You can throw the chicken in the crockpot with a can of tomatoes, garlic, salt and pepper and let that slow cook all day. Once the chicken is cooked all you have to do is top it with tomatoes, fresh basil and mozzarella cheese.

All of these classic Italian flavors gives this chicken such a unique and fresh flavor you will want to have seconds, which I did. Make sure to add this to your dinner rotation as soon as possible. This is definitely going to be on our dinner table often!

What is Bruschetta?

Bruschetta is usually a toasted bread that is topped with diced tomatoes, garlic and fresh basil. The bruschetta actually refers to the bread portion of the classic appetizer but in this recipe we swapped the bread for chicken breast to make it a meal! You can actually top bruschetta with anything just like you could with the chicken but this tomato version is always my favorite combo. But feel free to add anything else you love like olives or bacon! I took the liberty to add mozzarella cheese too since everything is better with cheese.

Is Slow Cooker Bruschetta Chicken Keto and Gluten Free?

Slow Cooker Bruschetta Chicken is Keto, Low Carb and Gluten Free! The only piece that you have to be careful with is the balsamic vinegar, however you only use a small amount of this to add a little flavor. If you want you could swap it for red wine vinegar if you want. Be sure not to make a balsamic reduction though to stay Keto. Bruschetta Chicken is naturally gluten free so you don’t need to worry about anything with this recipe!

What to Serve with Slow Cooker Bruschetta Chicken

There are tons of ways to eat this bruschetta chicken. My favorite way is to eat it over Barilla Gluten-free penne pasta. The tomato mixture from the crockpot makes a delicious pasta sauce. If you are extra fancy you can make a balsamic reduction to go over your chicken. All you have to do is heat you balsamic vinegar over medium heat until it thickens into a syrup. It took about 5 minutes for mine to reduce but it depends on the type of vinegar you have.

If you are trying to be low carb or Keto you can eat this over cauliflower rice, salad or just on its own.

How to Make Slow Cooker Bruschetta Chicken

  • Boneless Skinless Chicken
  • Mozzarella cheese
  • Diced tomatoes with garlic, basil and oregano
  • Fresh Basil
  • Tomatoes
  • Red onion
  • Kalamata Olives (optional)
  • Minced garlic (not pictured)

Step 1. Place chicken in crockpot. Drizzle with olive oil and balsamic vinegar and add minced garlic.

Step 2. Pour can of diced tomatoes over chicken and top with onions.

Step 3. Cook on low for 4-6 hours or high for 2-3 hours.

Step 4. Chop tomatoes and basil (olives optional) and drizzle with 1 teaspoon of olive oil and balsamic vinegar. Add salt and pepper if desired. Put mixture in refrigerator until serving. This can be done right before dinner also, I just like the flavors to combine.

Step 5. Top chicken with tomato mixture and onions from crockpot. Place shredded mozzarella cheese and tomato mixture from refrigerator on top of chicken. Drizzle with balsamic vinegar.

I had a few leftover jalapeños from another meal we had so I was trying to think of what I could make with them and I had some cream cheese in the fridge too. Of course, one of my favorite recipes came to mind, Crack Chicken! What if I added jalapeños to the mix?? It was great! It added a little bit of heat and gave it a Mexican twist. I always love when I can add an ingredient to another recipe and make a whole new meal out of it. I didn’t have any ranch to mix in but it was still tasty without it! But I might add it next time…

How Spicy is Crockpot Jalapeño Chicken?

You can make Jalapeno Chicken as spicy or mild as you want! If you want to keep it spicy you would cut up the jalapeños and put all the seeds and membrane into the dish.

If you want it to be less spicy you would cut the jalapeños lengthwise and then cut the membranes and seeds out and discard them. You can also wash them real fast to make sure everything is removed.

Another option for less spice is to use pickled jalapeño from a jar. These always have less spice. But as the jalapeños cook they do lose a lot of the heat. Just make sure not to add any fresh jalapeños as a garnish on top after cooking, I know from personal experience!!

Keto, Low Carb and Gluten Free

We have been trying out new meals since my husband started his low carb diet. This was another one that we tried and loved. Gluten Free and Keto

My husband has recently been doing low carb or Keto diet so I have been trying some fun new recipes that are in that diet. I came across this idea for pizza chicken on my friends blog, The Lazy Slow Cooker. Since we only do gluten free recipes I thought this would be a fun one to try. You can add as much cheese and meat as you want to add fat. The great part is even if you aren’t doing Keto or Low Carb this meal is still delicious. That’s perfect since I only like to make one meal for the whole family.

Crockpot Chicken Pizza Pasta

Another great way to eat Crockpot Chicken Pizza is over gluten free pasta! I love the Gluten Free Barilla Penne for this dish. The sauce that you end up with at the end of the meal is delicious and makes a perfect sauce to throw over pasta. If you aren’t low carb this is a great way to serve crockpot chicken pizza.

HOW TO MAKE CROCKPOT CHICKEN PIZZA

Layer bottom of crockpot with pizza sauce.

Place chicken breasts on top of pizza sauce.

Season chicken with salt, pepper and Italian seasoning.

Add another thick layer of pizza sauce on chicken breasts.

Sprinkle 1 cup of shredded cheese on top of pizza sauce.

Gluten-Free- I make all my recipes gluten-free since my husband has celiac disease, which means he is allergic to gluten. This recipe normally is gluten free. However if you serve it over pasta make sure to use gluten free pasta. My favorite is Barilla Gluten Free Penne. You can buy it on Amazon here.

CROCKPOT MISSISSIPPI POT ROAST- Best Ever!

Crockpot Mississippi Pot Roast is the most delicious and easiest pot roast you will ever make! It’s hard to believe that a recipe with only 5 ingredients could be this good but it is!

I have made quite a few pot roasts in my life and there are always lots of ingredients and tons of steps to get a tender roast so I was skeptical when I heard of the infamous Mississippi Pot Roast with only 5 ingredients that you just pour on top..

However, Mississippi Pot Roast did not disappoint. I think the hardest part of the recipe is writing the name!! The flavor is deep, the meat is tender and everyone who had it loved it.

I can’t take credit for this recipe! The original recipe came from a woman named Robin Chapman, who is from Ripley, Mississippi. She created a chuck roast recipe from her family recipes.

Since then there have been many versions made but I went with the the brown gravy version since my recipes are gluten free. The traditional version uses an Au Jus packet which you can use if you are not gluten-free. I couldn’t find a gluten free Au Jus packet so I used the Brown Gravy packet and it turned out delicious. Also, I have a quick way to make your own Au Jus which we have done as well. (See recipe below under Food Allergies)

What Kind of Meat is Mississippi Pot Roast?

Mississippi Pot Roast is typically made with a chuck roast. You could also use a shoulder steak. A tougher meat is used for this because it cooks all day breaking down all that tough meat with lots of fat into a tender juicy fall apart roast.

What You Need to Make Crockpot Mississippi Pot Roast?

This is the best part of making this roast is how few ingredients you need.

Ingredients

  • 3- to 4-pound roast, your choice of cut
  • 1 stick butter
  • 1 package Brown Gravy Packet ( Pioneer Brand Gravy is Gluten Free)
  • 1 package Hidden Valley Ranch dressing mix
  • Pepperoncini peppers, number to your liking, and a little juice

How to Make Make Mississippi Pot Roast?

The first step is optional. I always sear my meat but I have heard from several people that they skip this step. However, if you don’t have time you can skip step one.

How to Make it Less Salty

One of the complaints about the Mississippi is that it is too salty. I LOVE salt so that never a problem for me but if you prefer less salt I recommend making your own Au Jus and Ranch Packet. These two things have the most sodium in them and they are super easy to make on your own.

How to Make Au Jus- Take juices from searing the meat. Add 1 cup low sodium beef broth to the pan. Cook it down onto medium high until reduced by 50%. Add to crockpot with all other ingredients.

Step 1 -Generously salt and pepper roast. Heat Canola Oil in Pan. Using medium-high heat wait until the oil just starts smoking and add meat to the pan.

Step 2- Sear each side of the meat for 5 minutes.

Step 3- Add Roast to Crockpot

Step 4. Sprinkle Ranch packet and Gravy Packet over meat.

Step 5. Place a stick of butter on top of everything

Step 6. Add 3-4 Pepperoncinis on and around meat. (Add more or less depending on how much heat you like)

Step 4- Cook on low for 8 hours.

Step 5- Shred with two forks and serve.

Here are a few of the things I love to serve with this:

  • Mashed potatoes
  • Corn
  • Brussel Sprouts
  • Asparagus

Is Mississippi Pot Roast Keto?

Yes! Mississippi Pot Roast is Keto. This recipe is very low in carbs, so it will fit right in with your diet. Make sure and keep it low carb with sides like mashed cauliflower, Brussel sprouts or asparagus. No mashed potatoes allowed!

Food Allergies

Gluten Free – I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. What is Crack Chicken?

The first time I saw the name, I didn’t know why it was called such a weird name. It doesn’t even describe anything in the meal. 

After investigating a bit, I found out that in low-carb communities, they call it crack chicken because with bacon, cream cheese, and even more cheese added, it can be very hard to stop eating it. It really is very addicting. 

I’ve since noticed many types of “crack” recipes, even Christmas “crack”! It’s a common adjective added to the title of recipes for anything you can’t help but keep eating. Makes sense, right?

Keto Crack Chicken Recipe

To make Keto Crockpot Crack Chicken you need a few simple ingredients:

  • Chicken
  • Cream Cheese
  • Ranch Seasoning
  • Shredded Cheese
  • Bacon

How to Make Crockpot Crack Chicken

This recipe is so easy to make. Simply combine all of the ingredients in a crockpot and cook on low for 3-4 hours.

  1. Add chicken breasts to the slow cooker.
  2. Pour ranch seasoning over chicken breasts.
  3. Add cream cheese on top of the ranch and chicken.
  4. Cook on low for 5-6 hours or high for 2-3 hours.
  5. Shred chicken with two forks. Add bacon. Stir everything together.
  6. Sprinkle shredded cheese on top of the meat. Cover and cook for 5 minutes or until the cheese is melted.
  7. Top with green onions, extra bacon, jalapenos, and hot sauce.
  8. Serve over rice, cauliflower rice, or on a sandwich.

Ingredients

  • 2 lbs. boneless skinless chicken breasts
  • 1 oz ranch seasoning 1 packet
  • 16 oz cream cheese
  • 8 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • Green onions chopped

Instructions 

  • Add chicken breasts to slow cooker.
  • Pour ranch seasoning over chicken breasts.
  • Cut cream cheese into blocks and cover chicken breasts.
  • Cook on low for 5-6 hours or high for 2-3 hours.
  • Shred chicken breasts in slow cooker. Add crumbled bacon. Stir cream cheese, chicken and bacon to combine.
  • Sprinkle cheese on top and cover for 5 minutes or until cheese melts.
  • Serve over rice or cauliflower rice. Add chopped green onions if desired.

Creamy Tuscan Garlic Chicken

This rich and creamy Tuscan Garlic Chicken is chock full of sun-dried tomatoes, spinach, and mushrooms! You will be transported to a fancy restaurant when you take the first bite. The best part is it only takes 15 minutes to prepare and make this meal.

This recipe just takes a quick 15 minutes on the stovetop and you will have a delectable sauce that is out of this world.

It is hard to wait until the chicken is done cooking to sneak a bite because the garlic, Parmesan, and cream sauce smell so wonderful. I can tell you firsthand that this recipe really tastes as good as it smells.

Creamy Tuscan Garlic Chicken Keto Style 

My husband joined the Keto diet bandwagon so I got busy creating some crockpot recipes that are Keto-friendly. If you don’t know what Keto is, the best way to describe it is low carb so no rice, bread, or pasta. There is way more to it than that but I’m not a Keto blog, so I’m not going to go into too many details.

This recipe is easy to adapt to make it Keto or low carb. Just leave out the sun-dried tomatoes and everything else is low carb. You can serve it on its own or over zoodles to get that pasta fix.

HOW TO MAKE CREAMY TUSCAN GARLIC CHICKEN

  1. Heat Olive Oil in a large saucepan over medium heat. Add garlic and saute for 45 seconds to 1 minute.
  2. Add cream and chicken broth. Heat to a gentle simmer then turn the heat down to low and simmer for 10 minutes.
  3. After the sauce has simmered, add Parmesan Cheese 1/4 cup at a time and incorporate with a whisk. Add salt to taste.
  4. Once the sauce is finished, place the chicken in the bottom of the slow cooker. Season with salt, pepper, and Italian Seasoning. Top with sun-dried tomatoes and baby Bella mushrooms.
  5. Pour sauce over the chicken making sure to pour on top and coat the chicken and veggies.
  6. Cook for 3-4 hours on high or 6 hours on low.
  7. Remove chicken from the slow cooker and add spinach and turn the crockpot to high. Cover and cook for 5 minutes or until spinach is wilted.
  8. Add chicken back into the slow cooker and shred or cover chicken with sauce.
  9. Serve with rice or pasta. If following the Keto Diet, serve over cauliflower rice.

The pasta soaks up the extra sauce and makes the dish more filling. It’s also a great way to use up any leftover chicken you might have. If you don’t want to use pasta, you can totally use rice or any other side you’d like! I know several people who love serving this dish with pasta and it’s always a hit!

How to Store Creamy Tuscan Garlic Chicken

This chicken dish can be stored in the fridge for up to four days. Make sure to fully cool the dish before storing it, and reheat it until it’s hot all the way through before serving.

How to Reheat Creamy Tuscan Garlic Chicken

The best way to reheat this chicken dish is in the oven. Preheat your oven to 350 degrees Fahrenheit and place the dish in an oven-safe dish. Cover it with foil and heat it for about 20 minutes, or until it’s hot all the way through. I do like to reheat it in the microwave, but be sure to do so in short intervals so that the sauce doesn’t dry out.
