Food Allergies

Gluten Free – I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Unfortunately, soy sauce has gluten in it so to stay gluten free you need to swap regular soy sauce for a gluten soy sauce or tamari. I used a gluten free Kikkoman Soy Sauce.

If you are not gluten free swap the gluten free soy sauce for any soy sauce.

Need A New Crock Pot?

My favorite is this Crock Pot 7 quart Programmable Slow Cooker. First and foremost, I love being able to set the timer in case I’m not home when the food is finished cooking and it just switches to warm. Plus you can lock the lid and just carry it to a party. Not only is it easy to carry but also you will never lose another Tupperware or serving dish again at a potluck party!

Crockpot Kielbasa and Sauerkraut

If you’re looking for a traditional Polish kielbasa and sauerkraut recipe that can be made in a crockpot, you’ve come to the right place. This crockpot kielbasa and sauerkraut dish is a tart and tangy meal with a hint of sweetness.  It’s the perfect comfort food for a cold winter’s night!

Crockpot Kielbasa and Sauerkraut

Sauerkraut and kielbasa is a classic combo that originates from Poland. Kielbasa is a type of sausage that is traditionally made with pork, garlic, and other spices. Sauerkraut is fermented cabbage that has a sour, tangy flavor. Together, they’re a match made in Heaven!

Crockpot Kielbasa and Sauerkraut

How to Make Kielbasa and Sauerkraut

Traditionally, kielbasa and sauerkraut are cooked in a pot on the stove. However, this crockpot version is just as delicious and much easier to make. Simply throw all of the ingredients into the crockpot, add a few extra things like brown sugar, beer and apples and you get a deep, flavorful dinner that is simple to make any day of the week!

What is Sauerkraut?

Sauerkraut is a delicious pickled cabbage with a tart flavor that is perfect for dishes like “kielbasa and sauerkraut”. It’s made by fermenting cabbage in a brine (saltwater) solution. This process breaks down the cabbage’s cell walls and creates lactic acid, which gives sauerkraut its sour flavor.

As an adult, I had only eaten sauerkraut as a side when my husband grilled kielbasa or sausages, but we ate it all the time as a kid. Remembering that sauerkraut is so good, I decided it was time to find more ways to cook with it.

So of course, I went straight to my crockpot.

Crockpot Kielbasa and Sauerkraut

Sauerkraut & Kielbasa

This easy crockpot recipe has just a few simple steps but will take your kielbasa and sauerkraut to a new level of yum! This dish is perfect to serve for dinner, at a football party, or backyard cookout.

Ok, so I bet you are thinking…I just need kielbasa and sauerkraut right? Who needs a recipe? Sorry, but to get this level of deliciousness you need a few more ingredients to make this memorable meal.

In order to balance out the tart of the sauerkraut, you will need a few items to give it the sweet twist that really makes this recipe shine.

Here’s what you’ll need:

  • Kielbasa
  • Sauerkraut
  • Sweet Onion
  • Garlic
  • Beer or Water
  • Honey Crisp Apple
  • Brown Sugar
  • Caraway Seed

How to Cook Kielbasa and Sauerkraut

As you’ve probably guessed by now from the recipe and blog name, this kielbasa and sauerkraut slow cooker recipe will be made in our trusty crockpot. Not only is the crockpot a huge time saver, but it also allows all of the flavors to marry and deepen while it cooks. That’s a win-win in my book!

Crockpot Kielbasa and Sauerkraut

Step 1. Cook onions and garlic on the stove. If short on time you can skip this step and just add the onions and garlic to the crockpot.

Step 2. Add the sauerkraut, apple, onion, garlic mixture, and caraway seeds to the crockpot. Stir.

Step 3. Cut kielbasa into ½” pieces. Add to crockpot.

Step 4. Mix beer/water and brown sugar together in a separate bowl. Pour over the sauerkraut mixture. Stir ingredients together.

Step 5. Cook on high for 3-4 hours or low for 4-6 hours.

Food Allergies

Gluten-Free

I make everything gluten-free in our house because my husband has celiac disease. Unfortunately, beer has gluten in it, so to stay gluten-free you’ll need to swap to a gluten-free beer or water. I use gluten-free Omission beer.

I find that the gluten-free beer adds just as much flavor to the dish and it still tastes great! If you don’t mind the gluten, then by all means go ahead and use your favorite lager beer.

Dairy-Free

This recipe is dairy-free. So you’re all set!

Vegetarian

You could easily make this a vegetarian dish by swapping out the kielbasa for a vegetarian sausage. I’ve made it with Tofurkey kielbasa before and it was really good!

This Crockpot Kielbasa and Sauerkraut dish is a classic Polish recipe that is simple to make in the crockpot. The sauerkraut and kielbasa cook together in the slow cooker, making this a hearty, one-pot meal. Enjoy this dish with some mashed potatoes or rye bread for a complete meal.

Creamy Tuscan Garlic Chicken

Creamy Tuscan Garlic Chicken

This rich and creamy Tuscan Garlic Chicken is chock full of sun-dried tomatoes, spinach, and mushrooms! You will be transported to a fancy restaurant when you take the first bite. The best part is it only takes 15 minutes to prepare and make this meal.

Creamy Tuscan Garlic Chicken

This recipe just takes a quick 15 minutes on the stovetop and you will have a delectable sauce that is out of this world.

It is hard to wait until the chicken is done cooking to sneak a bite because the garlic, Parmesan, and cream sauce smell so wonderful. I can tell you firsthand that this recipe really tastes as good as it smells.

Creamy Tuscan Garlic Chicken Keto Style

My husband joined the Keto diet bandwagon so I got busy creating some crockpot recipes that are Keto-friendly. If you don’t know what Keto is, the best way to describe it is low carb so no rice, bread, or pasta. There is way more to it than that but I’m not a Keto blog, so I’m not going to go into too many details.

This recipe is easy to adapt to make it Keto or low carb. Just leave out the sun-dried tomatoes and everything else is low carb. You can serve it on its own or over zoodles to get that pasta fix.

  4. Once the sauce is finished, place the chicken in the bottom of the slow cooker. Season with salt, pepper, and Italian Seasoning. Top with sun-dried tomatoes and baby Bella mushrooms.
  5. Pour sauce over the chicken making sure to pour on top and coat the chicken and veggies.
  6. Cook for 3-4 hours on high or 6 hours on low.
  7. Remove chicken from the slow cooker and add spinach and turn the crockpot to high. Cover and cook for 5 minutes or until spinach is wilted.
  8. Add chicken back into the slow cooker and shred or cover chicken with sauce.
  9. Serve with rice or pasta. If following the Keto Diet, serve over cauliflower rice.
Creamy Tuscan Garlic Chicken

Creamy Tuscan Garlic Chicken Pasta

The pasta soaks up the extra sauce and makes the dish more filling. It’s also a great way to use up any leftover chicken you might have. If you don’t want to use pasta, you can totally use rice or any other side you’d like! I know several people who love serving this dish with pasta and it’s always a hit!

How to Store Creamy Tuscan Garlic Chicken

This chicken dish can be stored in the fridge for up to four days. Make sure to fully cool the dish before storing it, and reheat it until it’s hot all the way through before serving.

How to Reheat Creamy Tuscan Garlic Chicken

The best way to reheat this chicken dish is in the oven. Preheat your oven to 350 degrees Fahrenheit and place the dish in an oven-safe dish. Cover it with foil and heat it for about 20 minutes, or until it’s hot all the way through. I do like to reheat it in the microwave, but be sure to do so in short intervals so that the sauce doesn’t dry out.

This Creamy Tuscan Garlic Chicken is a delicious and easy dish to make. The chicken is cooked in a creamy sauce that is sure to make the whole family happy! It’s perfect for a weeknight meal or as a dinner party dish. You can also easily adapt this recipe to use whatever ingredients you have on hand. What is your favorite part of this recipe?

Easy Crock Pot Baked Ziti

Breaking News! You can make pasta in your slow cooker. This Crock Pot Baked Ziti was made completely in the slow cooker. Cheesy, gooey pasta is a must try in your slow cooker! I know, I know. It’s hard to believe!

You don’t even have to cook the pasta before. I thought that the pasta would turn to mush but they ended up just like regular baked ziti. The best part is that I didn’t have to heat up my kitchen since it was 102 degrees the day I made it! There are actually tons of Italian recipes you can make in your slow cooker, two other easy ones are Creamy Italian Chicken and Bruschetta Chicken, if you aren’t feeling pasta.

Disclaimer- Some links below are Amazon affiliate links, meaning at no extra cost to you, I will earn a commission if you click through and make a purchase.

Secret Step for Crock Pot Baked Ziti

The secret is that you don’t add any water to the pasta and the tomato sauce slowly cooks the pasta for you. This recipe is so simple that all you have to do is mix a few ingredients together and then layer them all just like the traditional baked ziti.

Cheese, Cheese, and more Cheese!

The triple cheese blend makes this baked ziti a melty cheesy masterpiece. All of these cheeses add a unique flavor and gives you that real Italian restaurant Baked Ziti experience.

– Ricotta

– Parmesan

– Mozzarella

Types of Pasta

I actually used this gluten free penne pasta instead of ziti! I couldn’t find gluten free ziti at the grocery store. As you can see it doesn’t make a difference at all. You can use any tube pasta you should be good to go.

Perfect for Potluck

Crock Pot Baked Ziti makes A LOT of pasta! I love to make this as a main dish to bring to potlucks and everyone always raves about it. This will easily serve 6-8 people with large portions for a family dinner or you can freeze the leftovers and eat it later. We always freeze our leftovers and then eat it the following week!

Food Allergies

Gluten Free – I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Our favorite pasta is the Gluten Free Barillla Pasta line. It doesn’t have the after taste of some pasta’s made with beans. I find that it is the best one at staying together while cooking. Some brands disintegrate especially when using in this kind of recipe where the pasta is soaking in sauce soaking.

If you are not gluten free swap the gluten free pasta for any ziti or penne.

Balsamic Pork Tenderloin

This Balsamic Pork Tenderloin recipe is made for a slow cooker! Even your pickiest eaters will love this sweet pork tenderloin that melts in your mouth. Simple ingredients transform into a delicious pork tenderloin that makes a savory sauce. Serve with potatoes and asparagus for an easy family dinner that looks and tastes fancy!

The recipe is called Balsamic Pork Tenderloin but I have also used pork shoulder and it is works great! The most important step is really the low and slow cooking fo the meat to break down into tender juicy meat so any pork or beef would work for this recipe.

One of the most important things I try to do with my recipes is make them easy and full of flavor. This is one of my top recipes because the end result is so delectable that people will think you spent all day in the kitchen. But the best part is that it take 5 minutes to throw everything into the slow cooker and let it do the magic. I love to make these delicious Brussels Sprouts from The Lazy Slow Cooker to go with them!

Slow Cooker Shepherd’s Pie

Slow Cooker Shepherd’s Pie

This classic comfort food is so easy in a slow cooker! Slow Cooker Shepherd’s Pie came from some creative women trying to use their leftovers back in the 1800s. I guess not much has changed since the 1800s, women just trying to turn their leftovers into something new for dinner.

This meaty meal is filled with vegetables and topped with mashed potatoes. I love mashed potatoes so this is an easy way to get my fix! The flavors come together into the perfect, cozy meal. Feel free to swap the lamb for all beef depending on what you like.

What is the difference between Shepherd’s Pie and Cottage Pie?

The difference between Shephard’s Pie and Cottage Pie is the meat you use. Traditionally Shepherd’s Pie is made with lamb and Cottage Pie is made with ground beef. However, as time has gone on most people call both versions Shephard’s Pie. There is a very serious debate over what is Shepherd’s Pie and what is Cottage Pie for some people but I made mine with ground beef but still call it Shepherd’s Pie. Here in the United States, we make Shepherd’s Pie with ground beef typically. However, in the United Kingdom, they use lamb in their Shepherd’s Pie. They call a similar dish using ground beef, Cottage Pie.

Perfect Dish for Leftovers

I always love using leftovers for different recipes and building them into my meal plans. (Here’s a link to the meal planner I use every week) Whenever I have leftover mashed potatoes or peas I use them to make this dish.

Ingredients for Slow Cooker Shepherd’s Pie

  • Ground beef or lamb
  • Onion
  • French onion mix packet
  • Frozen vegetable mix
  • Cream of Mushroom
  • Worcestershire sauce
  • Cheddar cheese
  • 2 packages (24 ounces each) of prepared mashed potatoes, leftover potatoes, or any mashed potatoes

Tips for Making Slow Cooker Shepherd’s Pie

Mashed Potatoes– You can use leftover mashed potatoes, instant mashed potatoes, or make them fresh. They are all delicious and work great!

Ground Beef or Ground Lamb– I have made this both with a mix of ground beef and ground lamb and with only ground beef. It’s easier for me to find ground beef so that’s what I use. You can use either beef or lamb or even both!

How to Make Slow Cooker Shepherd’s Pie

Step 1. Brown meat and onion in a large skillet over medium-high heat for 6-8 minutes, stirring to break up meat. Drain fat. Add meat to the slow cooker.

Step 2. Add frozen vegetable mix, French Onion Mix packet, cream of mushroom soup, and Worcestershire sauce to the slow cooker.

Step 3. Stir to combine all ingredients.

Step 4. Cover and cook on low for 4-6 hours.

Step 5. Once finished cooking add a layer of mashed potatoes and shredded cheese. Cover and let cheese melt.

Step 6. Optional- Place under broiler for 5 minutes to brown mashed potatoes and cheese.

Crock Pot Corned Beef and Cabbage

The easiest and best way to make Corned Beef and Cabbage is in your slow cooker. Crock Pot Corned Beef and Cabbage is one of my favorite meals! I always eat it all year long but in most houses it only makes an appearance for St. Patrick’s Day.

This meal was made for a slow cooker and it shines every time. If you are looking to celebrate the luck of the Irish or just looking for a hearty and easy family dinner this recipe is the perfect fit. Potatoes, carrots and cabbage pair perfect with this seasoned beef.

If this is your first time making corned beef it can be a little confusing so I tried to answer the most common questions I get when it starts getting close to St. Patrick’s Day!

What is Corned Beef?

Corned Beef is a description of a cooking technique made by salt-curing beef. It is usually made from brisket. Since brisket is usually a tough meat the salt-curing or brining makes it tender. Then once you get it at the grocery store it comes packaged with a little spice packet that is typically used to flavor the meat while cooking. I always use the spice packet included and find it a perfect mix.

Why Make Crock Pot Corned Beef and Cabbage?

The best part is that corned beef is best cooked low and slow which is when the slow cooker comes in. It can easily become more tender and juicy when it is cooking in a slow cooker. This is also a one-pot wonder. You can start it in the morning and let it cook all day until dinner. All you have to do is put the vegetables in halfway through. Once everything is all done cooking you just serve it and you’re done. That’s my kind of dinner!

Point Cut or Flat Cut for Corned Beef?

There are two cuts of Corned Beef. Point Cut corned beef are rounder and have more marbling or fat. Just like with steak this gives the meat more flavor. Most people choose the Point Cut for Corned Beef. However, the Flat Cut corned beef, also called the round cut is leaner and easy to cut. I accidentally used the Flat Cut once and it was still good but it was not as juicy. I recommend the Point Cut especially if you are only making this once a year. However, if you are trying to eat healthy you can still make a a very delicious Corned Beef and Cabbage with the Flat Cut.

What You Need to Make Corned Beef and Cabbage

  • Corned Beef with Spice Packet
  • Apple Cider Vinegar (This helps tenderize the meat)
  • Sugar (This adds depth and flavor while tenderizing the meat)
  • Onion
  • Carrots
  • Potatoes
  • Cabbage

BBQ Chicken Bowl

BBQ chicken is one of my go to meals since I can make the chicken in the slow cooker and use it for several meals. This recipe came from one night when I did not have buns for sandwiches so I made it into a bowl. Now this is one of our favorite meals since it has roasted vegetables. They add a nice flavor to the BBQ. Feel free to switch out any vegetables to what you prefer. Once you start roasting your vegetables you will never go back!

Quick Chicken Pozole Soup

Quick Chicken Pozole

Quick chicken pozole soup is a flavorful and fresh soup that you can make in a few hours! Either use leftover chicken or grab rotisserie chicken from the store.

This classic Mexican comfort food is perfect for a rainy day, if you are under the weather or if you just want a delicious soup. It is hearty and healthy and so easy to make you will find yourself making it over and over again. Another favorite soup I love to make is my Creamy Tomato Basil Soup!

Disclaimer- Some links below are Amazon affiliate links, meaning at no extra cost to you, I will earn a commission if you click through and make a purchase.

What is Chicken Pozole?

Chicken Pozole (or Posole) Soup is a traditional Mexican Stew made with either chicken or pork and hominy.

Whenever I give this recipe to people the first question I get is “What is Hominy?” Hominy is made from whole corn kernels that have been soaked in a lye or lime solution (not the fruit, the mineral) to soften the tough outer hulls. This soaking causes the corn to puff up and make it more of a bean texture than the traditional soft corn texture. The kernels are then washed to remove the solution, the hull, and often the germ. Voila! Hominy.

Where can you find Hominy?

Hominy is in a can and you can find it at your local grocery store in the canned food section. I have found it both in the vegetable and bean section. This is what it looks like.

4 Ingredient Dinner- Quick Chicken Pozole Soup

Do you ever realize at 2 pm that you forgot to make dinner? I wish I could say this never happened to me but it does. This is my go to recipe when this happens.

I always try to keep a few cans of enchilada sauce, chilis and hominy in my pantry just for this recipe! I usually run to the grocery store and grab the delicious rotisserie chicken they have in the deli and I’m all set. If you happen to have some leftover chicken you can use that too!

How to Make Quick Chicken Pozole Soup

This is the easiest recipe for dinner ever! If you find an easier one please send it to me ASAP.

1. Put chicken, hominy, enchilada sauce, and chilis into the slow cooker and mix it together.

2. Cook for 6 hours on low or 4 hours on high.

3. Garnish with avocado and cilantro.

Food Allergies

Gluten Free- All my recipes are gluten free because my husband has Celiac Disease, which means he is allergic to gluten. Now if your wondering what has gluten in it in this recipe, it’s the enchilada sauce.

Make sure you get a gluten free enchilada sauce. There are a lot of brands out there that add flour to their enchilada sauce so make sure and read the labels. I always use Hatch since I know they certify that their sauce is gluten free.

Quick Chicken Pozole Soup

If you don’t have a gluten allergy feel free to use any green enchilada sauce!

Chicken with Garlic Sauce

Let the butter do the work on this easy dinner. Mix butter, garlic, and a few spices then you will have a tantalizing dinner that’s not only good but impressive enough to serve guests (even the in-laws!).

I always love a recipe where you can put everything into the slow cooker at once and not think about it again until it’s time to serve dinner; this recipe is one of those!

Garlic butter chicken takes only 10 minutes to prep and you will be all set! You will end up with juicy, tender chicken in a delicious, garlic butter sauce that will make you want to lick your plate.

Slow Cooker Chicken and Potatoes

Garlic butter chicken and potatoes is an easy dinner recipe to whip up any night of the week. All you have to do is mix melted butter with a few common spices, add chicken, layer veggies and drizzle the delectable butter sauce over everything. This is a true fix-it-and-forget-it meal that will only take minutes to prep. The crockpot does all the hard work!

1. Mix melted butter with garlic and spices.

2. Place chicken breasts on the bottom of the slow cooker. Pour 1/3 of the butter mixture over the chicken breasts.

3. Layer potatoes and veggies on top of the chicken, making sure to place the potatoes spread apart so they have room to cook. You don’t want raw potatoes at dinnertime.

4. Pour the remaining butter mixture over veggies and potatoes.

5. Add chicken broth over everything.

6. Cook for 3 – 4 hours on high or 6 hours on low.

Can I Use Chicken Thighs Instead?

Yes. If your family prefers dark meat, you can use chicken thighs instead of chicken breasts in this recipe. The thighs will need a little less time to cook, so check them at 3 hours on high or 5 hours on low. Garlic butter chicken thighs are just as delicious as the chicken breasts!

Tips for Making Crockpot Garlic Butter Chicken

  • Make sure to cut your potatoes in quarters. Since potatoes take longer to cook you want to make sure to quarter them, allowing them to cook in the same amount of time as the chicken and carrots.
  • You can swap the carrots or potatoes for any veggies that your family likes. Another couple of good vegetables that work well with the garlic butter sauce are green beans or broccoli.
  • Know your slow cooker. Every slow cooker is different and cooks differently. If this is your first time making this, you should start checking on the chicken early. No one wants to gnaw on dry chicken.

With all the amazing Crockpot chicken recipes out there, it can be hard to choose which one to make for dinner. This garlic butter chicken is a winner; that’s for sure! The chicken is so tender it will fall apart with just a little touch and the garlic butter sauce is absolutely delicious.

So there you have it! A delicious and easy, garlic butter chicken recipe that can be made in the crockpot. Whether you are short on time or want to let your slow cooker do all the work, this recipe is a winner for any family dinner.
