Be careful with this dip because it is so addictive you might eat the whole thing before the party even starts. The sweet cranberry sauce pairs with lime juice to make a combo that makes the ideal dip for the holidays. You can throw this together in a few minutes so you mark the appetizer off your holiday to-do list.

Cranberry and Jalapeno Dip

Of course, once I brought this to a party it is now requested along with my chili cheese dip to every party I go to, holiday or not! I use my Cook and Carry Crock-Pot whenever I make a dish that I’m going to take anywhere. You can cook it at your house, lock it up for the drive and then plug it back in when you arrive. No need for any Tupper-Ware again with this bad boy.

HOLIDAY PARTY DIP

I’m all about appetizers that can be easily made and don’t require a lot of prep. This cheesy dip is the perfect simple appetizer to serve for Thanksgiving or a holiday party. The color adds the perfect pop to any event and people can just snack on it until it’s time to sit down from dinner.

Once you add everything for the Cranberry and Jalapeno Dip to the Crock-Pot you are all done until it’s time to serve. That way you can focus on all the other things you have to do to get ready. I would recommend using the Crock Pot Liners for this dip because it can get a little hard to clean if you have it in there for a few hours.

All of my recipes are gluten-free because my husband has celiac disease, which means you are allergic to gluten. This recipe is naturally gluten-free just make sure to serve with gluten-free crackers like these Jalapeno Mary’s Gone Crackers or tortilla chips to keep it gluten-free.

CAN THIS BE SERVED COLD?

If you are trying to get even more ahead for the holidays you could even make this the day ahead of time and serve it cold. One time I was too busy the day of the event to make it and serve it warm so I served it cold. It was delicious! I would recommend still cooking it in the Crock-Pot because the flavors come together when they have actually cooked rather than just stirring it all together cold.

You can dip anything into this flavor combination so it’s great to bring to any party since it’s gluten-free and vegetarian! I always use tortilla chips, gluten-free crackers, and celery for my favorite dippers but the sky’s the limit.

INGREDIENTS FOR CRANBERRY AND JALAPENO DIP

CRANBERRY and Jalapeno Dip
  • Cranberries– I use canned cranberries for my dish. You can use fresh cranberries but you would need to put them in the food processor and chop them. Also, you would need to add sugar to the recipe so it is not too tart.
  • Jalapenos– Fresh jalapenos are my choice but you never know how hot they are going to be. If you are worried about heat remove the seeds and membrane from the jalapenos before dicing.
  • Cream Cheese– This dip is a festive treat so I always go for the full-fat cream cheese but you could always make it with 1/3 less fat as well.
  • Green Onions– I usually just use the white part for mixing it into the ingredients and save the green tops for garnish,.
  • Lime Juice – Fresh is best for this recipe again. Part of what makes it so delcious is that fresh flavor combination and lime juice is key to that.

HOW TO MAKE CRANBERRY AND JALAPENO DIP

Step 1. Add cream cheese, cranberry sauce, jalapenos, lime juice, and green onions to slow cooker.

Step 2. Stir until ingredients are well combined.

Step 3. Cook on high for 2-3 hours. Stir occasionally.

Step 4. Serve with tortilla chips or crackers. Top with green onions and jalapenos if desired.

Has anyone else noticed that there are tons of new restaurant sauces available at the grocery stores? I’m a sucker for trying new sauces and love having all these fun new ones to try out in the Crock Pot.

These cheesy tacos use the On The Border Queso Sauce. My sister actually worked at On The Border when we grew up so this sauce holds a special place in my heart. I could eat On The Border Queso as my meal with their thin and crispy tortilla chips. And don’t even get me started on their fajitas and tortillas!

The On The Border Queso has a lot of flavor in it. Much more than typical queso. I’m not sure if it’s the real cheese or the bell peppers they include but just be aware that there are lots of spices already in it. Also, I picked up the medium flavor queso and it was a little spicy for my kids. If you are making this for kids you may want to get the mild flavor.

Since the On The Border Queso has so much flavor I didn’t want to add any taco seasoning to the recipe. I kept it simple with ingredients I had in my pantry and it turned out great.

All of my recipes are gluten free because my husband has celiac disease, which means you are allergic to gluten. I always use Pacific Foods Cream of Chicken Soup because it is made without gluten.

  • Chicken Breasts
  • Green Chiles
  • On The Border Queso sauce

I always have these taco shells in the pantry too. I love a good hard-shelled taco to give the creamy chicken a little crunch. Top with your favorite toppings like shredded lettuce, tomatoes, and jalapeños.

How to Make Slow Cooker Queso Chicken Tacos

  1. Add chicken, salsa, cream of chicken soup, and green chilis to the slow cooker.
  2. Stir ingredients and cover the chicken with sauce.
  3. Cook on low for 4 hours or high for 2 1/2 hours.
  4. Remove liquid and set aside.
  5. Shred Chicken.
  6. Add 3/4 cup of On The Border Queso Sauce and reserved liquid until creaminess level desired.
  7. Stir and serve!

How to Store and Reheat Queso Chicken Tacos 

Slow cooker queso tacos are best served immediately after they’re cooked. However, if you have leftovers, store them in an airtight container in the fridge for up to four days.

To reheat, simply place the tacos on a baking sheet and warm them in a 350°F oven until heated through. Alternatively, you could reheat them in the microwave. If the queso has thickened too much, add a splash of milk or water to thin it out before reheating.

Easy Crockpot Chicken and Rice Casserole

Easy Crockpot Chicken and Rice Casserole is filled with savory flavors that will become a quick family favorite. This creamy, cheesy, gluten-free chicken and rice recipe has a secret ingredient…ground sausage! The flavors of this dish come together to make an instant classic that you will serve on repeat.

Just like any amazing recipe, this one came to me as a cherished family recipe that has been passed down for generations. I took one bite and immediately needed the recipe. Of course, like any good family recipe, there is no recipe!!!

However, I wrote down all the steps and it came out just as delicious. The original recipe calls for chicken livers (see how old it is) but the one I tried and this one just use chicken breasts. I’m happy to report it’s now one of my family’s favorite dinners.

Another reason I love this easy Crockpot Chicken and Rice Casserole recipe is that it can be made with simple ingredients and not very much prep. This is my go-to dinner when I want a meal with little effort but big taste! The layers of flavors are what make this meal so great. The five minutes you spend browning the ground sausage and onions is what makes this chicken and rice casserole different from all the others. This step adds depth to the seasoning of the meal along with the mushrooms you have a savory dish that melts in your mouth.

Easy Crockpot Chicken and Rice Casserole

This casserole is hearty all in one dinner with chicken, sausage, mushrooms, and rice, so you can really eat it on its own. I always love a recipe that doesn’t even need a side dish. Another easy casserole is my Beefy Potato Taco Casserole!

Easy Crockpot Chicken and Rice Casserole

INGREDIENTS FOR EASY CROCKPOT CHICKEN AND RICE CASSEROLE

  • 2 pounds chicken– Boneless and skinless chicken breasts or thighs work for this recipe.
  • 16 oz ground sausage- I used Jimmy Dean Premium Pork Sausage, Regular. They have a different option like hot if you want to spice it up.
  • 1 can (7 oz) sliced mushrooms and stems– You can swap for fresh mushrooms if you want! The original recipe used canned so I just wanted to recreate that flavor.
  • 2 cloves garlic, minced
  • 3 cups white rice- Brown rice would work too!
  • 2 cups shredded cheddar cheese– I usually shred my own cheese because the pre-shredded kind has an anti-caking agent which I think makes it harder to melt.
  • 1 tablespoon pepper- This is one of the key flavors so make sure to pepper it up!

STORAGE TIPS

This Crock Pot Chicken and Rice Casserole is delicious leftover! Store the leftover chicken and rice in an airtight container for 2-3 days in the refrigerator. Freeze the leftover for up to 3 months.

Reheat in the microwave for about 2 minutes to warm through and enjoy! Alternatively, you can reheat in the oven covered for 15-20 minutes at 350 degrees (F).

TIPS FOR THE EASY CROCKPOT CHICKEN AND RICE CASSEROLE

  • Cook rice with chicken stock or broth instead of water. This gives the rice even more flavor.
  • Every slow cooker cooks at different temperatures. Mine usually cooks chicken breasts on high in 2-3 hours or 4 hours on low. Check your chicken starting at 2 hours until you are familiar to what temperature it cooks at.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 16 oz ground sausage browned
  • 7 oz sliced mushrooms 1 can
  • 2 cloves garlic minced
  • 2 cups shredded cheddar cheese
  • 3 cups rice cooked
  • 1 tablespoon ground pepper
  • 1 sweet onion diced
  • 4 tbsp butter sliced
US Customary – Metric

Instructions 

  • Brown sausage and onion in pan with 1/4 teaspoon pepper. Set aside.
  • Cut chicken into cubes. Add 1/4 teaspoon pepper.
  • Add chicken and cooked sausage to the slow cooker.
  • Pour mushrooms on top of chicken. Sprinkle garlic and butter on top.
  • Cover; Cook for 3-4 hours on low or 2-3 hours on high.
  • Cook rice on stovetop or rice cooker, swap water for chicken broth.
  • After chicken is cooked add shredded cheese and rice to slow cooker. Stir to combine all ingredients. Add remaining 1/2 teaspoon pepper and salt to taste.
  • Cook for additional 15-20 minutes on high.
  • Serve and enjoy!

Short Ribs is my go to for special occasions or just a delectable dinner. I make them for birthdays, holidays. Every one always loves this recipe and I even have people ask me to make them when they are coming over. The quick sear and deglazing of the short ribs before you add them to the slow cooker adds so much incredible flavor. The flavorful combination of all the ingredients will make these your favorite go-to recipe!

Once they are finished cooking you make a quick gravy that is out of this world because of all the goodies it cooked in all day. Skip the restaurant and try these next time!

This recipe has a few more steps than normal but the end result of succulent meat is worth the extra effort. Once you get them in the slow cooker you don’t have to pay attention all day while they cook. I love recipes like this so I can make a fabulous fancy dinner with limited effort.

Slow Cooker Short Ribs with Red Wine

Bone In or Boneless Short Ribs

Either version will work for this recipe so use what you can find! Mine choice usually is determined by which is less expensive. There is so much flavor between the red wine, veggies and beef broth that the bone in doesn’t add that much more flavor. However, I do like to get the bone in for presentation since they look so show-stopping on top of big pile of my Creamy Garlic Mashed Potatoes.

How to Pick the Cooking Wine

Use full bodied red wine, like cabaret sauvignon or merlot. Even a shiraz will work! I’m a big fan of using a wine is the $7 category. I like to refer to this article by the New York Times whenever my inner self is deciding what kind of wine to use. She does a taste test using different price ranges of wines and proves that there isn’t a difference when using expensive or cheap wine. So save the good stuff and drink it with dinner instead of using it in dinner. I used this wine in this recipe.

How to Make Slow Cooker Short Ribs with Red Wine

Step 1. In a large skillet cook bacon over medium high heat until crisp. Put bacon in slow cooker.

Step 2. Salt and pepper the beef and add to the skillet and sear on each side for 5 minutes.(DO NOT TOUCH IT during 5 minutes) Transfer beef to the slow cooker.

Step 3. Add carrots and onions to the skillet and brown them in the skillet for 5 minutes. Stir in 2 Tablespoons of flour and pour 1 cup of wine. Deglaze pan, scraping skillet to get all the brown bits on the pan.

Step 4. Add veggies from skillet to slow cooker on top of beef. Top with mushrooms and garlic cloves.

Step 5. In a separate bowl, mix beef broth, tomato sauce, gluten free soy sauce, thyme and bay leaf. Pour into crockpot. Add 1 cup red wine to almost cover the beef.

How to Make Gravy for Slow Cooker Short Ribs with Red Wine

If you want to make a gravy to go with this you will need to follow the steps below.

  • Strain liquid from meat and veggies using a fine mesh sieve. This will catch all the little bits.
  • Separate fat from liquid. I use this handy measuring cup that is made for this. Or you can just use a large spoon to remove it off the top.
  • Make a cornstarch slurry using 1 tablespoon of cold water and 1 Tablespoon cornstarch and mix together.
  • Pour liquid from short ribs into sauce pan and heat until boiling. Add cornstarch slurry and turn to simmer. Allow to combine for 2-3 minutes or until gravy thickens.

Gluten-Free- I make all my recipes gluten-free since my husband has celiac disease, which means he is allergic to gluten. This recipe uses gluten free soy sauce. I love the flavor of Kikkoman Gluten Free Soy Sauce, you cannot tell a difference at all. Also, there is flour used in the recipe so you will need to swap for a gluten free flour. I use Cup for Cup gluten free flour. It has no weird aftertaste and doesn’t have a grainy texture.

Ingredients

  • 5 slices bacon finely chopped
  • 8 pounds bone-in short ribs or 4 pounds boneless beef chuck cut into 2-inch cubes
  • 2 cups red cooking wine
  • 2 cups beef stock
  • 1/2 cup tomato sauce
  • 1/4 cup gluten free soy sauce
  • 2 tablespoons gluten free flour
  • 3 garlic cloves whole
  • 1 tablespoon dried thyme
  • 1 bay leaf
  • 1 white onion quartered
  • 5 medium carrots cut into 3-inch sections
  • 8 oz fresh mushrooms sliced
US Customary – Metric

Instructions 

  • In a large skillet cook bacon over medium-high heat until crisp. Put bacon in slow cooker.
  • Salt and pepper the beef and add to the skillet and sear on each side for 5 minutes. (DO NOT TOUCH IT during those 5 minutes) Transfer beef to the slow cooker.
  • Add carrots and onions to the skillet and brown them in skillet for 5 minutes.
  • Stir in 2 Tablespoons of gluten free flour and pour 1 cup of wine. Deglaze pan, scraping skillet to get all the brown bits on the pan.
  • Add veggies from skillet to slow cooker on top of beef.
  • Top with mushrooms and garlic cloves.
  • In a separate bowl, mix beef broth, tomato sauce, gluten free soy sauce, thyme, and bay leaf. Pour into crockpot. Add 1 cup red wine to almost cover the beef.
  • Cook on low for 6-8 hours or high for 5 hours.
  • Prepare gravy as desired (see directions above).

It has a timer and automatic switch to warm which is so important. You can also just lock the lid and take it to a party so you never have to use another Tupperware for a potluck again!

Rice Maker

Essential Slow Cooker Tools

This is the most important kitchen tool for me besides my Crock Pot. Whenever I make meals that include rice I always use my rice maker. This really makes dinner a breeze because I don’t have to make it when I get home. We literally walk in the door and make our plates. I use the Zojirushi Rice Maker which is amazing. It has a timer and setting for brown or white rice which is helpful. Of course you can make rice on the stovetop but my goal in life is to make dinner as easy as possible at the end of the day!

Meat Thermometer

Essential Slow Cooker Tools

This tool is so important! It does double duty of telling you when you meat is safe to eat AND keeps you from getting dry chewy meat. If you haven’t invested in a meat thermometer I highly recommend it.

Garlic Press

Essential Slow Cooker Tools

I love garlic but I don’t love smelling like garlic all day on my fingers. So this garlic press helps me prep my garlic fast and easy without holding it to mince it. Also, it pops open so its easy to clean all the little garlic out when your finished.

Quality Knives

Essential Slow Cooker Tools

Ok people this is serious! Until I met my husband I didn’t realize how important quality knives are. They make cutting and prepping so easy when they are sharp and well made. I find I really only use three knives most of the time so investing in a good pairing knife, utility and chef knife are my recommendation! I also have a knife sharpener.

Glass Bowls

These glass bowls help keep me organized and all my ingredients in order. They are perfect for mixing and storing! The lid makes them easy to prep ahead of time and just have everything ready. They all nest inside of each other saving precious kitchen space!

Cutting board

Having a big sturdy cutting board is so important. The last thing you want is a tiny cutting board that moves around while you are chopping! This one is a non slip, reversible cutting board that is dishwasher safe. I also appreciate the juice groove that catches any liquid!

Onion Goggles

This is my saving grace for cutting onions. My eyes water so much when I cut onions that I can’t even see straight when I’m cutting which is very dangerous. If you don’t have this problem this tool isn’t for you. But if you do I’m telling you these work so great.

Can Opener

Don’t laugh about this one! I open a lot of cans with my recipes and hate when the can opener doesn’t shut or connect well with the can. This one is great and locks on so you know it will be easy!

Measuring Cups

Most likely you have measuring cups already but I love this stacking set that makes it a breeze to find whatever size I need. I prefer to have heavy duty steel ones that don’t fall over when I’m trying to pour into them as well.

Measuring Spoons

This is the same as measuring cups above, I’m sure you already have these but I like having a set where they all connect so I never lose one!

Whisk

Give your fork a break and grab a whisk! This makes a world of different when you are trying to combine ingredients.

Spatulas

Invest in a quality wooden spatula that doesn’t bend when you are trying to use it. I have tried plenty and this one is my favorite.

Tongs

Make adding big ingredients easy with these tongs. I use these all the time for adding large meat to the crock pot and for grabbing it for plating when it’s done cooking.

Getting dinner on the table every night can be such a hassle. Trying to make them semi-healthy can be even more difficult. But this meal does both. You can throw the chicken in the crockpot with a can of tomatoes, garlic, salt and pepper and let that slow cook all day. Once the chicken is cooked all you have to do is top it with tomatoes, fresh basil and mozzarella cheese.

All of these classic Italian flavors gives this chicken such a unique and fresh flavor you will want to have seconds, which I did. Make sure to add this to your dinner rotation as soon as possible. This is definitely going to be on our dinner table often!

What is Bruschetta?

Bruschetta is usually a toasted bread that is topped with diced tomatoes, garlic and fresh basil. The bruschetta actually refers to the bread portion of the classic appetizer but in this recipe we swapped the bread for chicken breast to make it a meal! You can actually top bruschetta with anything just like you could with the chicken but this tomato version is always my favorite combo. But feel free to add anything else you love like olives or bacon! I took the liberty to add mozzarella cheese too since everything is better with cheese.

Is Slow Cooker Bruschetta Chicken Keto and Gluten Free?

Slow Cooker Bruschetta Chicken is Keto, Low Carb and Gluten Free! The only piece that you have to be careful with is the balsamic vinegar, however you only use a small amount of this to add a little flavor. If you want you could swap it for red wine vinegar if you want. Be sure not to make a balsamic reduction though to stay Keto. Bruschetta Chicken is naturally gluten free so you don’t need to worry about anything with this recipe!

What to Serve with Slow Cooker Bruschetta Chicken

There are tons of ways to eat this bruschetta chicken. My favorite way is to eat it over Barilla Gluten-free penne pasta. The tomato mixture from the crockpot makes a delicious pasta sauce. If you are extra fancy you can make a balsamic reduction to go over your chicken. All you have to do is heat you balsamic vinegar over medium heat until it thickens into a syrup. It took about 5 minutes for mine to reduce but it depends on the type of vinegar you have.

If you are trying to be low carb or Keto you can eat this over cauliflower rice, salad or just on its own.

How to Make Slow Cooker Bruschetta Chicken

  • Boneless Skinless Chicken
  • Mozzarella cheese
  • Diced tomatoes with garlic, basil and oregano
  • Fresh Basil
  • Tomatoes
  • Red onion
  • Kalamata Olives (optional)
  • Minced garlic (not pictured)

Step 1. Place chicken in crockpot. Drizzle with olive oil and balsamic vinegar and add minced garlic.

Step 2. Pour can of diced tomatoes over chicken and top with onions.

Step 3. Cook on low for 4-6 hours or high for 2-3 hours.

Step 4. Chop tomatoes and basil (olives optional) and drizzle with 1 teaspoon of olive oil and balsamic vinegar. Add salt and pepper if desired. Put mixture in refrigerator until serving. This can be done right before dinner also, I just like the flavors to combine.

Step 5. Top chicken with tomato mixture and onions from crockpot. Place shredded mozzarella cheese and tomato mixture from refrigerator on top of chicken. Drizzle with balsamic vinegar.

Crockpot Pumpkin Bread…No oven, no problem! Fall is almost here so it’s finally time to start baking all of my recipes with pumpkin. (Ok it’s September 1st but close enough) This slow cooker pumpkin is moist, delicious and best of all easy! It has all of the flavors of the classic pumpkin bread with cinnamon and nutmeg. You just mix all your ingredients together then throw it into the slow cooker until it’s ready.

Bonus is that my house still smells like yummy pumpkin bread, which is one of the best parts! Everyone loves pumpkin bread in my house but there is fight between chocolate chips or no chocolate chips so I always end up doing half with chocolate chips and the other half without!

Many people ask me why I do this in the crockpot and I found that my pumpkin bread and my banana bread is actually more moist when I cook it in the crockpot than the oven. I always had a hard time not burning all the corners of the bread pan when I make it in the oven. But if you prefer an oven I included those directions below as well. Also, I like that I don’t have to stay home while the bread is cooking. I can go run a few errands and when I come home the bread is done. Either way you go this pumpkin bread recipe is delicious!

Add in chocolate chips or nuts, like walnuts, to add even more flavor to this pumpkin bread!

WHAT YOU NEED TO MAKE PUMPKIN BREAD

Pumpkin Bread
  • Butter
  • Granulated Sugar
  • Brown Sugar
  • Pumpkin Puree
  • 2 Eggs
  • Gluten Free Flour
  • Salt
  • Baking Soda
  • Cinnamon
  • Nutmeg

HOW TO MAKE PUMPKIN BREAD

Pumpkin Bread

Combine the butter and sugars in a large bowl and mix well.

Pumpkin Bread

Add pumpkin puree and mix together.

Combine the flour, salt, baking soda, and spices in separate bowl. Mix together.

Add the dry ingredients slowly to the pumpkin mixture. Mix until well combined.

Fold in chocolate chips and nuts if desired.

Line crockpot with parchment paper. If you don’t use parchment paper grease insert generously and then coat in gluten free flour.

Pour pumpkin mixture into crockpot.

Take towel and place over crockpot and then put lid on top. This will catch the condensation while cooking.

Cook on high for 3 hours.

Tips for Making Slow Cooker Pumpkin Bread

*Line your entire Crock Pot with parchment paper. This makes sure the corners don’t get burnt. If you don’t have parchment paper make sure to spray the liner with non stick spray and then spray again!

*Place a towel on top of the slow cooker and place lid on top to help catch condensation.

Oven Option

Preheat the oven to 325°F and set an oven rack in the middle position. Generously grease two 8 x 4-inch loaf pans with butter and dust with gluten free flour.

Bake for 65-75 minutes or until tester comes out clean.

Food Allergies-

  • 1/2 cup melted butter
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 15.5 oz canned pumpkin puree
  • 2 cups all purpose gluten free flour my fav is cup for cup
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup mini chocolate chips optional
US Customary – Metric

Instructions 

  • Line crockpot insert with parchment paper to cover bottom and sides of the slow cooker and spray generously with cooking spray. If you don’t have parchment paper grease the insert with butter or spray then dust bottom and sides with gluten free flour.
  • In a large bowl, whisk together butter, brown sugar, sugar, and eggs. Add pumpkin and whisk together.
  • In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg and salt.
  • Slowly pour dry ingredients into wet ingredients. Whisk until combined. Add chocolate chips if desired.
  • Transfer batter into slow cooker and smooth into even layer. Cook on high for 3 hours. Place a towel on top of the slow cooker and place lid on top to help catch condensation.
  • Remove from slow cooker and cool for 10 minutes.

Layer chicken breasts in the bottom of the crockpot. Pour salsa, ranch, black beans and corn on top of chicken and mix everything together.

  • 15.5 oz salsa
  • 1 packet ranch seasoning or 1 oz homemade ranch seasoning
  • 14.5 oz canned black beans drained and rinsed
  • 12 oz frozen corn or 14.5 oz can of sweet corn
  • 8 oz cream cheese cut into blocks
  • Avocado, shredded cheese, sour cream optional

Instructions 

  • Layer chicken breasts in the bottom of the crockpot. Pour salsa, ranch, black beans and corn on top of chicken and mix everything together.
  • Cut cream cheese into chunks and place on top of mixture. This will slowly melt into the mixture as it heats up.
  • Cook on low for 4- 6 hours or high for 2-3.
  • Mix everything together making sure cream cheese if fully mixed in. Shred chicken with forks or cut into chunks.
  • Serve over rice, cauliflower rice or in tortillas.

This one pot wonder has everything you need to make a complete dinner filled with meat, veggies and potatoes! Kielbasa casserole is filled with kielbasa, green beans, onions and potatoes making it a quick fix it and forget it dinner. Dump all the ingredients in and let your crockpot do the work.

I love kielbasa so I have been trying to find ways to cook it in the crockpot! This recipe gets extra points for making my life easy because dinner is all ready with no other side dishes needed. This hearty dish is great for a quick weeknight dinner or you can even serve it for a party.

Easy Thanksgiving Side Dish

Green beans are always a staple at our Thanksgiving table. I love to make these as side dish even though it has meat in it. Also, this recipe doesn’t need the oven during the holidays. So it’s a perfect way to utilize your slow cooker when your oven is on overload. Try this Kielbasa casserole as a fun change of pace to the typical green bean casserole.

WHAT YOU NEED FOR KIELBASA CASSEROLE

What type of potatoes for kielbasa casserole?

You can use any potatoes you want like. I used red potatoes and typically use yukon gold in recipes. But feel free to use whatever you have on hand. The key to potatoes is to cut them in uniform shapes so they cook evenly. If you have big and little pieces they might cook too fast or slow leaving you with mushy potatoes or rock hard ones. Kielbasa Casserole works great whenever you have leftover potatoes. That’s actually how I came up with this recipe… We had leftover potatoes that I needed to use AND green beans were on sale that week at the store!

What type of green beans for kielbasa casserole?

As far as the green beans go, fresh is best! Frozen greens beans work too but be prepared for them to release a little moisture to the dish. Canned beans can be used as well.

  • Sausage Kielbasa
  • Red potatoes
  • Green beans
  • Onions
  • Minced Garlic
  • Beef stock
  • Pepper
  • Red pepper flakes (optional)

HOW TO MAKE KIELBASA CASSEROLE?

Layer potatoes on bottom of crockpot. Add onions on top of the potatoes.

Green beans go on the top since they cook the fastest! Layer these last.

Pour salt and minced garlic over layers. Try to distribute evenly.

Pour beef broth on top of everything and gently stir. Try to keep layers as in tact as possible.

Cook on low for 4 hours or high for 2 hours.

Crockpot Kung Pao Chicken

Crockpot Kung Pao Chicken is an easy weeknight dinner that is going to become a favorite! Crockpot Kung Pao Chicken has all the classic flavor of your favorite takeout restaurant even down to the peanuts on top. Skip the takeout and make this healthy version of an Asian favorite.

I love finding a new easy Asian chicken recipe to add into my rotation with honey teriyaki chicken, mongolian beef and hoisin chicken. This recipe has many of the same flavors with soy sauce and hoisin included in Crockpot Kung Pao Chicken. I am a fan of spicy so when I got the Kung Pao Chicken from Pei Wei (a takeout restaurant near me) the other week I realized I need to try and make it in the Crockpot. And it was so easy and tasty when I did!!

One of my favorite things about this recipe it that it includes the veggies so I have one less thing to prepare when I get home. Also, whenever I make meals that include rice I always use my rice maker. This really makes dinner a breeze because I don’t have to make it when I get home. We literally walk in the door and make our plates. I use the Zojirushi Rice Maker which is amazing. It has a timer and setting for brown or white rice which is helpful.

What You Need to Make Crockpot Kung Pao Chicken?

Here are the ingredients you need to make Crockpot Kung Pao Chicken. Most of the ingredients are already in your pantry and fridge!

– Boneless Skinless Chicken Breasts

– Zucchini

– Red Bell Pepper

– Soy Sauce

– Honey

– Hoisin Sauce

– Sriracha

– Garlic

– Ginger

– Dried Red Chili Flakes

– Peanuts (optional)

– Salt and Pepper

– Olive Oil

How to Make Crockpot Kung Pao Chicken?

Cut chicken into 3 inch pieces and season with salt and pepper. Brown chicken on stovetop and place in bottom of slow cooker. (You can skip the browning if you don’t have time. This just adds flavor.)

Ina separate bowl mix soy sauce, honey, water, hoisin sauce, sriracha, garlic, ginger and red pepper flakes together. Mix sauce together and pour over chicken. Cook on low for 3-5 hours or high for 2-3 hours.

One hour before cooking is complete add bell peppers and zucchini.

If you prefer a thicker sauce, 30 minutes prior to serving make a cornstarch slurry and add to crockpot and turn on high.

Ingredients

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1.5 pounds boneless skinless chicken breasts cut into 3 inch pieces
  • 3 tablespoons olive oil
  • 1 red bell pepper chopped
  • 1 medium zucchini cut lengthwise then cut into 1/2 slices

Sauce

  • 1/2 cup soy sauce
  • 1/4 cup water or chicken stock
  • 3 tablespoons honey
  • 3 tablespoons hoisin sauce
  • 1 tablespoon sriracha optional
  • 3 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1/4- 1/2 teaspoon dried chili flakes

Cornstarch Slurry

  • 2 tablespoons cornstarch
  • 2 tablespoons water
US Customary – Metric

Instructions 

  • Cut chicken into 3 inch pieces and mix with salt and pepper.
  • Add olive oil to pan and brown chicken. Add browned chicken to crockpot. (This can be skipped if short on time)
  • In a separate bowl mix soy sauce, water, honey, hoisin, sriracha, garlic, ginger and chili flakes together and stir. Pour over chicken.
  • Cook on low for 3-5 hours or cook on high for 2-3 hours.
  • One hour before finished add bell pepper and zucchini to crockpot.
  • For a thicker sauce, prepare cornstarch slurry 30 minutes before serving. Mix 2 tablespoons cornstarch with 2 tablespoons water until cornstarch is dissolved. Add to crockpot and turn on high.
  • Serve with chopped peanuts, sesame seeds and green onions.
