This Crock Pot Creamy Chicken Pasta is filled with creamed spinach, onions, chicken and cream cheese to make a quick and decadent dinner! A perfect dinner for a busy weeknight with only a few ingredients and almost no prep needed.

Nothing is better than sneaking spinach into a dish to get my kids (and husband) to eat this super veggie. Of course like it’s cousin, Spinach Artichoke Dip, this dish cannot be labeled healthy with its creamed spinach and cream cheese. But hey I’m still going to count it! The chicken is tender, juicy and filled with flavor thanks to cooking on a bed of onions and garlic parmesan sauce creamed spinach. Another easy dinner recipe that the can be pulled together quickly is this Garlic Parmesan Chicken Pasta.

That sounded like the beginning of a delicious meal to me. I made it into a quick version of tuscan chicken pasta that I didn’t need to make from scratch. Sometimes I love to make Alfredo sauce from scratch but other days I need an easy dinner the whole family will gobble up that takes minutes to prep like this. This creamy, rich pasta is incredibly easy but feels fancy.

HOW TO MAKE CROCK POT CREAMY CHICKEN PASTA

STEP 1. Add chopped onions to bottom of slow cooker.

STEP 2. Layer chicken breasts on top of onions. Add 6 Tablespoons butter on top.

STEP 3. Place frozen creamed spinach bake on top.

STEP 4. Cook for 3-4 hours.

STEP 5. Shred chicken and stir to combine.

STEP 6. Pour cooked pasta into chicken mixture and combine.

HOW DO YOU STORE LEFTOVER CROCK POT CREAMY CHICKEN PASTA?

Let the chicken pasta cool all the way down. Place leftovers in refrigerator in an airtight container for 3-4 days. I will say this pasta even tastes good cold!

FOOD ALLERGIES- GLUTEN FREE

Make sure to use gluten free pasta when making this dish to keep it gluten free. I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. Our favorite pasta is the Gluten Free Barillla Pasta line. I find that it is the best one at staying together while cooking and the taste is just like real pasta. I used the Barilla Gluten Free Penne for this recipe.

Ingredients

  • 1 onion chopped
  • 2 pounds chicken breasts
  • 6 tbsp butter cubed
  • 1 tbsp olive oil
  • 1 creamy spinach bake

Instructions

Easy Crockpot Chicken and Rice Casserole is filled with savory flavors that will become a quick family favorite. This creamy, cheesy, gluten-free chicken and rice recipe has a secret ingredient…ground sausage! The flavors of this dish come together to make an instant classic that you will serve on repeat.

Just like any amazing recipe, this one came to me as a cherished family recipe that has been passed down for generations. I took one bite and immediately needed the recipe. Of course, like any good family recipe, there is no recipe!!!

However, I wrote down all the steps and it came out just as delicious. The original recipe calls for chicken livers (see how old it is) but the one I tried and this one just use chicken breasts. I’m happy to report it’s now one of my family’s favorite dinners.

Another reason I love this easy Crockpot Chicken and Rice Casserole recipe is that it can be made with simple ingredients and not very much prep. This is my go-to dinner when I want a meal with little effort but big taste! The layers of flavors are what make this meal so great. The five minutes you spend browning the ground sausage and onions is what makes this chicken and rice casserole different from all the others. This step adds depth to the seasoning of the meal along with the mushrooms you have a savory dish that melts in your mouth.

This casserole is hearty all in one dinner with chicken, sausage, mushrooms, and rice, so you can really eat it on its own. I always love a recipe that doesn’t even need a side dish. Another easy casserole is my Beefy Potato Taco Casserole!

Easy Crockpot Chicken and Rice Casserole

INGREDIENTS FOR EASY CROCKPOT CHICKEN AND RICE CASSEROLE

  • 2 pounds chicken– Boneless and skinless chicken breasts or thighs work for this recipe.
  • 16 oz ground sausage- I used Jimmy Dean Premium Pork Sausage, Regular. They have a different option like hot if you want to spice it up.
  • 1 can (7 oz) sliced mushrooms and stems– You can swap for fresh mushrooms if you want! The original recipe used canned so I just wanted to recreate that flavor.
  • 2 cloves garlic, minced
  • 3 cups white rice- Brown rice would work too!
  • 2 cups shredded cheddar cheese– I usually shred my own cheese because the pre-shredded kind has an anti-caking agent which I think makes it harder to melt.
  • 1 tablespoon pepper- This is one of the key flavors so make sure to pepper it up!

STORAGE TIPS

This Crock Pot Chicken and Rice Casserole is delicious leftover! Store the leftover chicken and rice in an airtight container for 2-3 days in the refrigerator. Freeze the leftover for up to 3 months.

Reheat in the microwave for about 2 minutes to warm through and enjoy! Alternatively, you can reheat in the oven covered for 15-20 minutes at 350 degrees (F).

TIPS FOR THE EASY CROCKPOT CHICKEN AND RICE CASSEROLE

  • Cook rice with chicken stock or broth instead of water. This gives the rice even more flavor.
  • Every slow cooker cooks at different temperatures. Mine usually cooks chicken breasts on high in 2-3 hours or 4 hours on low. Check your chicken starting at 2 hours until you are familiar to what temperature it cooks at.

All of my recipes are Gluten Free! I make everything gluten free in our house because my husband has celiac disease, which is when you are allergic to gluten. This recipe is naturally gluten free so you don’t need to substitute any ingredients!

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 16 oz ground sausage browned
  • 7 oz sliced mushrooms 1 can

  • Brown sausage and onion in pan with 1/4 teaspoon pepper. Set aside.
  • Cut chicken into cubes. Add 1/4 teaspoon pepper.
  • Add chicken and cooked sausage to the slow cooker.
  • Pour mushrooms on top of chicken. Sprinkle garlic and butter on top.
  • Cover; Cook for 3-4 hours on low or 2-3 hours on high.
  • Cook rice on stovetop or rice cooker, swap water for chicken broth.
  • After chicken is cooked add shredded cheese and rice to slow cooker. Stir to combine all ingredients. Add remaining 1/2 teaspoon pepper and salt to taste.
  • Cook for additional 15-20 minutes on high.
  • Serve and enjoy!

King Ranch Casserole with Doritos

King Ranch Casserole with Doritos is a creamy chicken casserole with peppers and crunchy Doritos! This is fuss free dinner is a delicious gluten free dinner the whole family will love!

This classic casserole has been around for generations. It is popular in the South but it has made it has way into every potluck and is always a winner. My mom originally got this recipe from Betty Crocker so you know it’s a good one. I had a friend make it with Doritos and thought that I had to make this myself. My family loves Doritos so I thought this would be a fun family dinner.

KIDS IN THE KITCHEN

The second time I made this my kids, who are 4 and 6 years old, actually helped me make this dinner. I just chopped everything up prior to having them help. They loved breaking the Doritos and layering all the food. Of course, they loved eating the dinner they made and were so proud of themselves. It was a fun way to get the kids in the kitchen and helping with dinner.

KING RANCH CASSEROLE WITH DORITOS- GLUTEN FREE

Casserole are one of my favorite dinners to make because they are easy to make on busy weeknight. We have baseball and swimming right now so I always need to have dinner prepped and ready to go for when we get home from all of our sports. This recipe was perfect because it took less than ten minutes to make and then I could turn it on and go about my day. Another favorite fix it and forget it casserole is my Beefy Potato Taco Casserole, I think the name speaks for itself.

I make all my recipes gluten free because my husband has celiac disease, which means you are allergic to gluten. This recipe can be made gluten free with two quick changes to the recipe. You just use Gluten Free Cream of Chicken Soup and Gluten Free Cream of Mushroom Soup. I always use Pacific Foods Soups because I know they are certified gluten free. And Doritos are naturally gluten-free(YAY!).

HOW TO MAKE KING RANCH CASSEROLE WITH DORITOS

STEP 1. Layer bottom of slow cooker with Doritos.

STEP 2. In large bowl, mix all ingredients except Doritos and 1/2 the cheese.

STEP 3. Add layer of chicken mixture on top of Doritos. Repeat steps 1 and 2. Ending with chicken layer.

Looking for the easiest Crock Pot recipe ever? Try this 4 Ingredient Slow Cooker Cranberry Chicken! This recipe has cranberry sauce, french dressing, and chicken that combine to make a sweet and tangy chicken dinner.

This is one of those truly easy dinners that Crock Pots are made for. You pour four ingredients into your Crock Pot and a few hours later you have dinner done which is always a win for me!

There is no prep before or after and the dish is fail-proof. The juicy chicken cooks in the sauce and makes a simple and flavorful dinner the whole family will enjoy. Another easy chicken recipe I love is this Garlic Parmesan Chicken Dinner where you use another salad dressing.

My six year son is actually the reason for this recipe because he loves cranberry sauce. So weird right? So he found a bag of frozen cranberries from Thanksgiving. I didn’t end up using them for Thanksgiving and asked me to cook them up. I happily obliged and made a big batch of cranberry sauce. But since it was February and not November I wasn’t sure what to make with it.

Gluten Free Chicken Dinner

Then I remembered a recipe my mom use to make with French Dressing and Lipton Onion Packet. Unfortunately, Lipton Onion Packets have gluten in them. Since all my recipes are gluten-free because my husband has celiac disease (which means you are allergic to gluten) I always use the Simply Organic French Onion Packet which is gluten free.

Thanksgiving Leftovers

If you do have extra cranberry sauce from Thanksgiving this dish is a perfect way to use up those leftovers. You can make a big batch of this and serve it over your leftover mashed potatoes! Boom…Two leftovers are used to make another delicious meal.

What to Serve with 4 Ingredient Slow Cooker Cranberry Chicken

I served this over mashed potatoes. Mashed potatoes were my go-to because I feel like cranberry sauce and mashed potatoes just go together. I think it’s a Thanksgiving thing. But you could serve this over rice or even on its own with green beans.

Also, I like to add more Cranberry Sauce on top of it once it’s finished! I really like Cranberry Sauce and I loved the extra punch of cranberry that it adds to the meal.

How to Make 4 Ingredient Slow Cooker Cranberry Chicken

Step 1. Add Chicken to Crock Pot.

Step 2. Pour 1/2 a bottle of French Dressing over the chicken.

Step 3. Pour 1/2 of cranberry sauce into Crock Pot.

Buffalo Wild Wings is very well know for their incredible sauces. When I saw this sauce I knew it was going to be a favorite of mine. The first thing I made with this Parmesan Garlic Sauce was this Chicken Pasta. It was epic and so amazing! But I knew there were going to be tons of other recipes I could make with it. This was my next delicious creation.

This sauce is awesome because it is gluten free and low carb. Most prepared sauces have gluten in them so I always have to be careful since my husband is gluten free. I always read the label because my husband has celiac disease which means you are allergic to gluten.

You can find it on Amazon or at Wal Mart or Costco. I did see that my grocery store also had a Garlic Parmesan Sauce in the salad dressing aisle. I’m sure you could easily swap that for this BDubs (Nickname for Buffalo Wild Wings) Sauce. But if you are gluten free always check the label to make sure it doesn’t have gluten. I’m always on the lookout for a simple recipe that is tasty and quick to prepare. Sometimes when you make recipes that are quick they lack in flavor and depth. This chicken is delicious, tender, and has tons flavor thanks to the Garlic Parmesean Sauce. Another delicious garlic chicken recipe is my one-pot Garlic Butter Chicken with Veggies. Like I said I love garlic!

Gluten Free Garlic Parmesan Sauce

The secret ingredient to this meal is the garlic parmesan sauce which is made by Buffalo Wild Wings and is used on their delectable wings. I just used it on chicken breasts instead. You can buy it on Amazon or Wal Mart, or Target. I did see that my grocery store also had a Garlic Parmesan Sauce in the salad dressing aisle so I’m sure you could easily swap that for this BDubs (Nickname for Buffalo Wild Wings) Sauce but I’m not certain it will be gluten free so please make sure and check the label for gluten. You could always make your own sauce and I found this recipe at The Spruce Eats.

My husband joined the Keto diet bandwagon so I got busy creating some crockpot recipes that are Keto-friendly. If you don’t know what Keto is, the best way to describe it is low carb so no rice, bread, or pasta. There is way more to it than that but I’m not a Keto blog, so I’m not going to go into too many details.

This recipe is easy to adapt to make it Keto or low carb. Just leave out the sun-dried tomatoes and everything else is low carb. You can serve it on its own or over zoodles to get that pasta fix.

HOW TO MAKE CREAMY TUSCAN GARLIC CHICKEN

  1. Heat Olive Oil in a large saucepan over medium heat. Add garlic and saute for 45 seconds to 1 minute.
  2. Add cream and chicken broth. Heat to a gentle simmer then turn the heat down to low and simmer for 10 minutes.
  3. After the sauce has simmered, add Parmesan Cheese 1/4 cup at a time and incorporate with a whisk. Add salt to taste.
  4. Once the sauce is finished, place the chicken in the bottom of the slow cooker. Season with salt, pepper, and Italian Seasoning. Top with sun-dried tomatoes and baby Bella mushrooms.
  5. Pour sauce over the chicken making sure to pour on top and coat the chicken and veggies.
  6. Cook for 3-4 hours on high or 6 hours on low.
  7. Remove chicken from the slow cooker and add spinach and turn the crockpot to high. Cover and cook for 5 minutes or until spinach is wilted.
  8. Add chicken back into the slow cooker and shred or cover chicken with sauce.
  9. Serve with rice or pasta. If following the Keto Diet, serve over cauliflower rice.

Chicken Breasts or Thighs?

We usually make this meal with chicken breasts but you have to be very careful that you don’t over cook the chicken breasts. Chicken breasts have less fat that chicken thighs so they dry out faster. If you are going to leave this cooking for longer that 3 hours I would use chicken thighs just to be safe.

Tips for Making Honey Teriyaki Chicken

  • Flip it over once while it cooking. If I am at home I always like to turn the chicken once so that the sauce gets to really soak in on both sides.
  • Check the chicken put using two forks to see if the chicken shreds easily apart. This usually means the chicken is all done.
  • Always check you chicken temperature and make sure it reaches the safe internal temperature for cooked chicken at 165° Fahrenheit (75° Celsius).
  • A meat or instant-read thermometer is your best bet for determining the temperature of your chicken. I use this one if I’m not sure.

Making the Mexican Crunchy Chicken Casserole

Making this barely takes any prep time which is why you are sure to love it on top of how delicious it is!

Step One -Start by making the filling. You mix the cream cheese and salsa verde together until combined.

Whenever a recipe calls for cream cheese I never remember to take it out and soften it. So I always throw it in the microwave for a minute to soften it so that I can stir it in.

Step 2- Stir in chicken, green chiles, onion, cilantro, garlic and cumin.

Step 3- Start building the casserole by layer 1/4 of the tortilla chips on the bottom.

Ingredients

  • 3 cups shredded chicken
  • 8 ounces cream cheese softened
  • 16 ounces salsa verde
  • 8 ounces diced green chiles drained
  • 1/2 cup finely chopped sweet onion
  • 3 cloves garlic minced
  • 1 teaspoon cumin
  • 8 cups tortilla chips broken if needed
  • 2 cups shredded cheddar cheese
US Customary – Metric

Instructions 

  • In a large bowl stir together cream cheese and salsa verde until combined. Stir in chicken, green chiles, onion, cilantro, garlic and cumin.
  • Layer 1/4 of the tortilla chips in the bottom. Top with 1/3 of the chicken mixture and 1/2 cup cheese. Repeat layers twice.
  • Cook on low for 3 hours or high for 1 1/2 hours.
  • Once cooked top with remaining chips and cheese. Let stand for 5 minutes until cheese is melted.
  • Top with avocado and sour cream. (Optional)

  • 2 pounds boneless skinless chicken breast
  • 1 red onion cut in wedges
  • 1 can reduced sodium chicken broth
  • 30 ounces canned cannellini beans drained and rinsed
  • 6 ounces marinated artichoke hearts drained and chopped
  • 14.5 ounces diced tomatoes with basil garlic and oregano (undrained)
  • 1 tablespoon salt
  • 4 sprigs rosemary
  • 2 bay leaves
  • 1/2 cup pitted Kalamata olives drained and halved
  • Crumbled feta cheese optional

Instructions 

  • Place onion and chicken in slow cooker. Top with herb springs, bay leaves, chicken broth, beans, tomatoes and artichokes.
  • Cover and cook on low for 4-5 hours or on high for 2-2 1/2 hours.
  • Remove and discard sprigs and bay leaves. Transfer chicken to a medium bowl; coarsely shred chicken.
  • Mash beans with fork in slow cooker.
  • Return chicken to slow cooker.
  • Serve over rice. Top each bowl with feta cheese and olives.

This all-in-one crockpot garlic butter chicken melts in your mouth (thanks, butter!) and is so simple to make. Not only does the make fall apart tender garlic chicken, it includes veggies making it a complete meal.

I always love a recipe where you can put everything into the slow cooker at once and not think about it again until it’s time to serve dinner; this recipe is one of those!

Garlic butter chicken takes only 10 minutes to prep and you will be all set! You will end up with juicy, tender chicken in a delicious, garlic butter sauce that will make you want to lick your plate.

Slow Cooker Chicken and Potatoes

Garlic butter chicken and potatoes is an easy dinner recipe to whip up any night of the week. All you have to do is mix melted butter with a few common spices, add chicken, layer veggies and drizzle the delectable butter sauce over everything. This is a true fix-it-and-forget-it meal that will only take minutes to prep. The crockpot does all the hard work!

1. Mix melted butter with garlic and spices.

2. Place chicken breasts on the bottom of the slow cooker. Pour 1/3 of the butter mixture over the chicken breasts.

3. Layer potatoes and veggies on top of the chicken, making sure to place the potatoes spread apart so they have room to cook. You don’t want raw potatoes at dinnertime.

4. Pour the remaining butter mixture over veggies and potatoes.

5. Add chicken broth over everything.

6. Cook for 3 – 4 hours on high or 6 hours on low.

Can I Use Chicken Thighs Instead?

Yes. If your family prefers dark meat, you can use chicken thighs instead of chicken breasts in this recipe. The thighs will need a little less time to cook, so check them at 3 hours on high or 5 hours on low. Garlic butter chicken thighs are just as delicious as the chicken breasts!

Tips for Making Crockpot Garlic Butter Chicken

  • Make sure to cut your potatoes in quarters. Since potatoes take longer to cook you want to make sure to quarter them, allowing them to cook in the same amount of time as the chicken and carrots.
  • You can swap the carrots or potatoes for any veggies that your family likes. Another couple of good vegetables that work well with the garlic butter sauce are green beans or broccoli.
  • Know your slow cooker. Every slow cooker is different and cooks differently. If this is your first time making this, you should start checking on the chicken early. No one wants to gnaw on dry chicken.

Ingredients

  • 2 pounds chicken breasts boneless, skinless
  • 1 pound baby carrots
  • 1 pound Yukon Gold potatoes cut in wedges
  • 14.5 ounces chicken broth optional
  • 1/2 cup salted butter melted
  • 3 tablespoons minced garlic
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon thyme ground
  • 1 teaspoon parsley dried

Instructions 

  • Place chicken in bottom crock pot.
  • Place butter in small microwavable bowl. Heat for 1 minute or until melted.
  • Add Garlic, salt, pepper, thyme and parsley to melted butter and mix.
  • Pour 1/4 of butter mixture over chicken.
  • Add carrots and potatoes. Pour remaining butter over veggies and mix to cover.
  • Add 1/2 a cup of chicken broth to crock pot. (optional just adds more delicious juices)
  • Cover and cook on high for 3-4 hours or low for 6 hours.
