Carrots are my go-to veggie because adults and kids alike love them. 5 easy ingredients are all you need to make this dish! Plus, I always have these ingredients in my pantry so you probably will too. It’s a simple side dish you can make any night of the week.

I had glazed carrots before with brown sugar and honey but the addition of dill really elevated this dish to holiday-worthy. That surprise pop of flavor really enhances the sweet tones of honey and brown sugar.

Plus, I love to serve them on weeknights to go with dinner because I know my kids will gobble them down. You can toss everything in the Crock-Pot around lunch so they are done for dinner time. I always pair these with my Chick-fil-A Sauce chicken.

CROCK POT BROWN SUGAR CARROTS INGREDIENTS

  • Carrots- Use any type of carrots you want! I just always have a bag of baby carrots in my fridge.
  • Brown sugar– I like to use brown sugar but white sugar will work.
  • Honey– You can swap this for agave nectar.
  • Butter– Unsalted butter is always my go-to so I can control the amount of salt at the end of every dish.
  • Dill Weed– I used dried dill and fresh dill in the my recipe but you can use whichever you have on hand.

HOW TO MAKE CROCK POT BROWN SUGAR CARROTS

Step 1. Add carrots, brown sugar, honey, butter, and dill to the slow cooker.

Step 2. Stir everything together and cook on high for 3-4 hours.

Step 3. Remove carrots and cover carrots in liquid from the slow cooker. Top with fresh dill and parsley if desired.

If you have ever been to Cracker Barrel then you know how incredible their hash brown casserole is. I could just eat that every time I go there and nothing else. The secret ingredient is sour cream and once I found that out I realized that I thought I could make a version at home in my Crock Pot.

I went home after breakfast one morning there and started planning it out and my husband said he thought it would be even better with meat in it. Since I love an all in one casserole I thought it would be great to add some ham to it. Another great casserole that is hearty all on its own is my Beefy Potato Casserole.

This dish is so versatile. You can serve it for dinner, breakfast or as a side dish. Hash browns are a magical veggie that transforms itself into whatever you want it to be. Hash browns are traditionally a breakfast item but the more I use them in dinner meals I realize they work anytime! Serve it alongside some eggs for a tasty breakfast or with green beans and chicken for a hearty dinner.

You don’t need very long to prep this dish. The hardest part is chopping the onion. I love to use my Cuisinart Food Processor for chopping onions. You absolutely don’t need to do this step in a food processor. I can’t ever seem to make them small enough when I chop them so I think it’s easier for me to just throw them in there. Everything else just gets poured in and mixed together!

Gluten Free

Since my husband has celiac disease, which means you are allergic to gluten, all of my recipes are made completely gluten free. I had to make a few substitutes to make sure this was gluten free. First is to always make sure to use gluten-free Cream of Chicken Soup. The only brand I have found gluten free is the Pacific Foods Cream of Chicken Soup. There is supposedly a gluten free version of the Great Value Cream of Chicken but I haven’t been able to find it at my local Walmart.

The other part that helps make this dish stay together is the flour. There is only 2 tablespoons but make sure to swap this for a gluten-free flour. I use the King Arthur Flour or the Cup for Cup in my recipes. Both of these taste just like real flour unlike a few that use beans as the main ingredient so I prefer these two options.

If you are looking for a pot luck dish to bring to any event this dish is a must make. I can promise you that this dish will be the hit of the event and everyone will ask for the recipe. Everything they make at Cracker Barrel is a tried and tested comfort food that people love so you know its good. This popular recipe goes by so many names like funeral potatoes and cheesy potatoes. But no matter what the name is people love to gobble these up because they go with everything.

I love to make this dish for the holidays too. It’s easy to make in the crockpot instead of the oven and is indulgent. I don’t really love the name funeral potatoes especially for the holidays so I started calling them Crockpot Cracker Barrel Hash Brown Casserole. I mean that is a way better name, I mean who doesn’t love Cracker Barrel!

Meat or No Meat?

This dish is delicious without the meat so if you aren’t a fan of ham you can just skip it! Or if you have leftover bacon or another leftover meat you can throw that in instead.

How to Make Crockpot Cracker Barrel Hash Brown Casserole?

Step 1. Mix melted butter and flour together. Set aside.

Step 2. Add cream of chicken, onions, cheese, sour cream, hash browns and ham. Stir to combine.

Step 3. Pour butter mixture over ingredients and stir.

Step 4. Cook on high for 2-3 hours or low from 4 hours until casserole is bubbling at edges.

Step 5. Optional- Once finished cooking, place under broiler for 5 minutes.

Step 1. Combine potatoes, chicken broth, minced garlic, butter, and salt in a slow cooker. 

Step 2. Stir together, then cover and cook on high for 3–4 hours, until potatoes are tender and fluffy-looking.

Green beans are always a staple at our Thanksgiving table. I love to make these as side dish even though it has meat in it. Also, this recipe doesn’t need the oven during the holidays. So it’s a perfect way to utilize your slow cooker when your oven is on overload. Try this Kielbasa casserole as a fun change of pace to the typical green bean casserole.

WHAT YOU NEED FOR KIELBASA CASSEROLE

What type of potatoes for kielbasa casserole?

You can use any potatoes you want like. I used red potatoes and typically use yukon gold in recipes. But feel free to use whatever you have on hand. The key to potatoes is to cut them in uniform shapes so they cook evenly. If you have big and little pieces they might cook too fast or slow leaving you with mushy potatoes or rock hard ones. Kielbasa Casserole works great whenever you have leftover potatoes. That’s actually how I came up with this recipe… We had leftover potatoes that I needed to use AND green beans were on sale that week at the store!

What type of green beans for kielbasa casserole?

As far as the green beans go, fresh is best! Frozen greens beans work too but be prepared for them to release a little moisture to the dish. Canned beans can be used as well.

HOW TO MAKE KIELBASA CASSEROLE?

Layer potatoes on bottom of crockpot. Add onions on top of the potatoes.

Green beans go on the top since they cook the fastest! Layer these last.

Pour salt and minced garlic over layers. Try to distribute evenly.

Pour beef broth on top of everything and gently stir. Try to keep layers as in tact as possible.

Cook on low for 4 hours or high for 2 hours.

My favorite is this Crock Pot 7 quart Programmable Slow Cooker. First and foremost, I love being able to set the timer in case I’m not home when the food is finished cooking and it just switches to warm. Plus you can lock the lid and just carry it to a party. Not only is it easy to carry but also you will never lose another Tupperware or serving dish again at a potluck party!

Kielbasa casserole is filled with kielbasa, green beans, onions and potatoes making it a quick fix it and forget it dinner. Dump all the ingredients in and let your crockpot do the work.

Ingredients

  • 3 pounds kielbasa cut into 1/2-inch pieces
  • 1.5 pounds baby red potatoes cut in half
  • 1/2 sweet onion diced
  • 1 pound fresh green beans or one bag frozen or two 14.5 oz cans
  • 1 cup beef broth
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • Red chili flakes for garnish add on each plate if desired

Instructions 

  • Layer potatoes on bottom of crockpot. Add onions on top of the potatoes.
  • Add sliced kielbasa on top of onions.
  • Add green beans on top of kielbasa.
  • Add salt and minced garlic. Try to distribute evenly.
  • Pour beef broth on top of everything and gently stir. Try to keep layers as in tact as possible.
  • Cook on low for 4 hours or high for 2 hours.
  • Top with red pepper flakes if desired.
