I had a few leftover jalapeños from another meal we had so I was trying to think of what I could make with them and I had some cream cheese in the fridge too. Of course, one of my favorite recipes came to mind, Crack Chicken! What if I added jalapeños to the mix?? It was great! It added a little bit of heat and gave it a Mexican twist. I always love when I can add an ingredient to another recipe and make a whole new meal out of it. I didn’t have any ranch to mix in but it was still tasty without it! But I might add it next time…

How Spicy is Crockpot Jalapeño Chicken?
You can make Jalapeno Chicken as spicy or mild as you want! If you want to keep it spicy you would cut up the jalapeños and put all the seeds and membrane into the dish.
If you want it to be less spicy you would cut the jalapeños lengthwise and then cut the membranes and seeds out and discard them. You can also wash them real fast to make sure everything is removed.
Another option for less spice is to use pickled jalapeño from a jar. These always have less spice. But as the jalapeños cook they do lose a lot of the heat. Just make sure not to add any fresh jalapeños as a garnish on top after cooking, I know from personal experience!!

How to Make Crockpot Jalapeño Chicken
You only need a few ingredients to make this tasty dinner!
- Chicken Breasts
- Cream Cheese
- Jalapeños
- Cheddar Cheese
- Bacon
- Salt and Pepper
Step 1. Place chicken breasts in bottom of crockpot.
Step 2. Mix jalapeños, cream cheese and cheddar cheese together.
Step 3. Take jalapeño mixture and spread over chicken breasts.
Step 4. Cook on low for 3-4 hours or high for 2-3.
Step 5. Top with cheddar cheese and bacon.

Ingredients
- 2 pounds chicken breasts boneless skinless
- 8 oz cream cheese
- 3-4 jalapeños sliced
- 1 cup shredded cheddar cheese plus 1/3 cup for topping
- 4 slices cooked bacon crumbled
Instructions

Do you think you could you use frozen chicken? Would I just double the time?

Hi Lindsey! I haven’t used frozen chicken before but I’m sure that will be fine. Maybe add two hours and just check when it reaches 165 degrees it’s all done. Hope you enjoy it!

Does anyone think this work if I shredded the chicken after cooking and used some or all of the sauce to moisten it well and use it as a substantial dip or spread for crostini, large tortilla chips, etc.? Either mix the cheese into the sauce at the end or sprinkle on top of the serving platter along with the crumbled or chopped bacon. With the holiday season starting, I’m just trying to think ahead for party and Game Day buffet possibilities.
