Jamaican Jerk Chicken
This Jamaican Jerk Chicken is full of flavor and take your mouth on a tropical vacation. Jamaican Jerk Chicken is filled with fresh and fun flavors! It’s a little bit spicy with a little bit sweet which equals delicious. I always like to add veggies to my meals while it cooks that way its packed with more flavors and more nutrition.
Any recipe that has everything in one pot is my kind of dinner. Chicken, Vegetables and Beans! You don’t even need to make rice if you don’t want since this meal is complete by itself but I do love eating it over rice personally.
This recipe has all the classic flavors of Jamaican food like nutmeg, cinnamon and onions. I added the corn and black beans because I love them and they actually go great with the spices.

What Meat to Use?
My go to is boneless chicken breasts because I buy them in bulk and I love chicken breasts. But chicken thighs would work great and they are always my husbands pick so use whatever you prefer. But whichever option you go with this fix it and forget it meal will be sure to become a favorite.

How to Make Jamaican Jerk Chicken
Place chicken in bottom of slow cooker.
Mix all sauce ingredients together in separate bowl. Pour over chicken and coat.
Rinse corn and beans. Add to slow cooker.
Add chopped onion and bell pepper on top. Mix all ingredients together.
Cook on low for 4-6 hours or high 3 hours.

Jamaican Jerk Chicken
- 2 pounds boneless skinless chicken breasts or thighs
- 1 orange bell pepper cubed
- 1 red onion cubed
- 15 ounces black beans
- 15 ounces sweet corn
- 1 tablespoon olive oil
- 2 tablespoons brown sugar
- 1/2 cup chicken broth
- 1/2 cup lime juice
- 4 garlic cloves minced
- 1 tablespoon salt
- 1/2 teaspoon red bell pepper flakes
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon thyme
- 1 jalapeño deseeded and minced, optional
